O objetivo deste trabalho foi realizar a caracterização físico-química e microbiológica do surimi obtido de resíduos da filetagem de piramutaba. Os resultados da caracterização físico-química dos resíduos e surimi foram: umidade (76,37 e 79,11%), lipídios totais (5,35 e 0,74%), proteínas (14,92 e 10,79%), cinzas (3,03 e 2,35%), pH (6,9 e 7,4), valor calórico (109,15 e 77,86 kcal.g-1) e atividade de água (ambos 0,98), respectivamente. Os resultados dos valores de bases voláteis totais foi de 7,29 mgN/100-1 g (resíduos) e carboidratos de 7,01% (surimi). Os valores de lipídios totais e proteínas foram reduzidos durante o preparo do surimi, provavelmente, devido a sucessivas lavagens durante o processamento. Os resíduos e o surimi foram analisados microbiologicamente estando em conformidade com os parâmetros exigidos. Os resultados mostraram que houve uma perda da cor vermelha (parâmetro a*) e amarela (parâmetro b*). Por outro lado, o parâmetro L* (luminosidade) aumentou após o processamento do surimi. Conclui-se que os resíduos de piramutaba podem ser empregados como matéria-prima de qualidade na elaboração de surimi e como fonte de nutrientes para a alimentação humana, constituindo-se também como uma alternativa para destino dos resíduos, antes lançados no ambiente.

The aim of this work was to perform the microbiological and physicochemical characterization of surimi made from waste of piramutaba filleting. The results of physicochemical characterization of the waste and surimi were: moisture (76.37 and 79.11%), total lipids (5.35 and 0.74%), proteins (14.92 and 10.79%), ash (3.03 and 2.35%), pH (6.9 and 7.4), caloric value (109.15 and 77.86 kcal.g-1), and water activity (both 0.98), respectively. The results of the levels of total volatile bases were 7.29 mgN/100-1 g (waste) and 7.01% carbohydrate (surimi). The values of total lipids and proteins were reduced during the preparation of surimi, probably due to successive washes during the processing. Waste and surimi were examined microbiologically and are in compliance with required parameters. The results show a loss of red (a* parameter) and yellow (b* parameter) color. On the other hand, the L* parameter (lightness) increased after the processing of surimi. It can be concluded that piramutaba waste can be used for surimi preparation and as a source of nutrients for human consumption, providing an alternative use of these wastes avoiding their disposal polluting the environment.

O objetivo deste trabalho foi avaliar sensorialmente o mapará in natura e com pré-tratamento osmótico antes da secagem. Para o teste de aceitabilidade do bolinho de músculo de mapará, foram utilizados peixes in natura e desidratados osmoticamente, nas melhores condições de processo, em soluções de NaCl, NaCl + sacarose e em solução de NaCl + xarope de milho e secos. Foram utilizados 25 provadores não treinados, de ambos os sexos, com idade variando de 20 a 60 anos. Os atributos sensoriais avaliados foram aparência, aroma, sabor, textura e impressão global. O aroma e a textura das amostras com e sem pré-tratamento osmótico foram os atributos que obtiveram maior aceitação por parte dos consumidores. Pôde-se concluir que as amostras tratadas com soluções osmóticas, com exceção das tratadas com solução de NaCl + xarope de milho, proporcionaram produtos com textura, sabor e aroma mais agradáveis.

The objective of this work was the sensorial evaluation of mapará meat, in natura and without osmotic pre-treatment before drying. For the acceptability test of the mapará fish muscle bisquit, the in natura fish samples were used and dried under optimum osmotic dehydration conditions, in solutions of NaCl, NaCl + sucrose and in solution of NaCl + corn syrup solution before drying. 25 not trained testers were used, of both sex, ages ranging from 20 to 60 years. The evaluated sensorial attributes of the samples were appearance, aroma, flavor, texture and overall impression. The aroma and texture of the samples with and without osmotic pre-treatment were the ones most widely accepted by the consumers. It is concluded that the samples treated with osmotic solutions, with the exception of those processed with NaCl + corn syrup solution, provided products with better texture, flavor and a more pleasant aroma.

A desidratação osmótica de filés de mapará tem sido utilizada como pré-tratamento antes da secagem e refrigeração de alimentos como um meio de reduzir a umidade dos produtos. O objetivo do trabalho foi otimizar a transferência de massa ocorrida durante a desidratação osmótica de mapará através da metodologia de superfície de resposta. A desidratação osmótica foi realizada de acordo com um planejamento fatorial completo 2³, com oito pontos fatoriais, três centrais e seis axiais, totalizando 17 ensaios, em que o valor das variáveis dependentes, a perda de peso (PP), a perda de água (PA), o ganho de sólidos (GS), GS/PA e ácido tiobarbitúrico (TBA), são funções das variáveis independentes, temperatura, concentração de NaCl e tempo de imersão. A análise estatística aplicada aos dados experimentais foi realizada através do erro puro e pelo SS residual. Aplicando a metodologia de superfície de resposta, a condição ótima de convergência de menor perda de peso, maior perda de água e menor ganho de sal correspondeu a uma concentração de cloreto de sódio de 22%, temperatura de 46 °C e tempo de 7 horas.

Osmotic dehydration of mapará fillets has been used as a pre-treatment before dehydration and refrigeration of food as a means of reducing product moisture content. The aim of this study was to optimize mass transfer occurring during osmotic dehydration of mapará using the response surface methodology. Osmotic dehydration was carried out following a 2³ complete factorial design, with eight factorial, three central and six axial points, totalizing 17 assays, where the values of the dependent variables, weight loss (PP), water loss (PA), solid gain (GS), GS/PA and tiobarbituric acid (TBA), are a function of the independent variables, temperature, concentration of NaCl and immersion time. The statistic analysis, applied to the experimental data was carried out using the pure error and the residual SS. Applying the response surface methodology, the best condition of convergence of lower weight loss, greater water loss and lower salt gain corresponded to a sodium chloride concentration of 22%, temperature of 46 °C and time of 7 hours.

Foram determinados o rendimento do filé e a composição físico-química da tilápia quanto ao teor de umidade, proteína, cinza, lipídeos e atividade de água. Para as análises, foram utilizados 19 exemplares de tilápia com peso médio e comprimento de 989,6 g e 38,9 cm, respectivamente. Os peixes foram pesados, medidos (comprimento, largura e espessura) e após a filetagem calculou-se o rendimento. Foi realizada a determinação da composição físico-química, que apresentou teores de: 77,13% de umidade; 2,60% lipídios; 19,30% proteína; 1,09% cinza; e atividade de água de 0,983. As relações de peso filé/peixe e peixe/resíduo apresentaram boas correlações lineares. Foi realizada também a análise microbiológica do peixe in natura; a matéria-prima estava dentro dos limites exigidos pela legislação brasileira, portanto apta para o processamento e/ou consumo.

The fillet yield of Thai-style tilapia and its physicochemical composition, including moisture content, protein, ash lipids and water activity, were determined. The analysis involved 19 specimens of tilapia with average weight and length of 989.6 g and 38.9 cm, respectively. The fish were weighed, measured (length, width and thickness), filleted, and the yield was calculated. The chemical composition presented the following contents: 77.13% moisture, 2.60% lipids, 19.30% protein, 1.09% ash, and 0.983 water activity. The fillet/fish to fish/residue weight ratios presented good linear correlations. The raw fish was also subjected to a microbiological analysis, which indicated that it met the safety limits established by Brazilian legislation and was therefore safe for processing and consumption.
