Spirulina é uma cianobactéria que vem sendo produzida e estudada por suas propriedades nutricionais e por seus benefícios à saúde. Neste estudo, avaliou-se a influência de dietas acrescidas de diferentes concentrações de Spirulina sobre o desenvolvimento corporal e o perfil lipídico de ratos. Foram utilizados 24 ratos Wistar, alimentados, durante 40 dias, com quatro dietas isoproteicas (10%) distintas, sendo seis animais por grupo: 1) Dieta controle (AIN93G adaptada); 2) Dieta S1 (8,8% de Spirulina); 3) Dieta S2 (17,6% de Spirulina); 4) Dieta S3 (26,4% de Spirulina). Foram avaliados parâmetros nutricionais e o perfil lipídico dos animais, cujos dados foram analisados estatisticamente por Análise de Variância, seguida do teste de Tukey, a 5% de significância (p ≤ 0,05). O tratamento com 8,8% de Spirulina mostrou-se equivalente ao controle, apresentando respostas mais adequadas de CEA, medidas de crescimento e lipídios séricos. Já o S2 não foi capaz de promover um bom desenvolvimento corporal, comparado com o do controle, além de elevar os níveis de colesterol total e LDL-c. O tratamento S3 apresentou somente valores estatisticamente diferentes de HDL-c, quando comparado com os do controle (p ≤ 0,05). Conclui-se que, no tempo e condições do estudo, o tratamento S3, único com Spirulina como fonte exclusiva de proteína, foi capaz de substituir a fonte proteica padrão (caseína) na dieta para roedores, promovendo o adequado desenvolvimento corporal e lipídico dos animais.

This study was aimed at evaluating the effects of Spirulina (Arthrospira) as a protein source in the nutritional recovery of rats subjected to protein malnutrition. In order to understand such effects, responses of the developing body, serum biochemical profile, and blood count of animals were analyzed. A total of, 23 Wistar Rattus norvegicus were given a proteic diet (AIN-93G adapted) in malnutrition phase (phase I) for 10 days. After this period, the rats were separated into four groups according to the protein source (recovery phase): Control (C), casein 12%; Spirulina level I (S1), Spirulina 8.8% + casein 5.0%; Spirulina level II (S2), Spirulina 17.6% + casein 0.15%, and Spirulina level III (S3), Spirulina 26.4%. Recovery phase (phase II) lasted 30 days. In both the phases, the consumption and body weight of the rats were monitored daily and weekly, respectively. The S1 treatment showed the highest values of Feed Efficiency Ratio (FER) and Quotient of Protein Efficiency Ratio (QPE) (p<0.05). Significant differences among the treatments were found mainly in the levels of serum lipids, and S2 diet caused an increase in such responses (p<0.05). These results demonstrated that the nutritional recovery of animals was enabled by different concentrations of Spirulina.

The objective of this work was to evaluate the solid-state fermentation with Rhizopus oryzae CCT 7560 of rice bran for the enrichment of proteins and the antioxidant compounds in the fermented biomass. Fermentation was performed in tray bioreactors at 30ºC for 120 h. Protein extraction was done at alkaline pH, followed by precipitation with acetone. Phenolic compounds were extracted with cold methanol. The maximum protein was recovered from after 120 h (26.6%). The content of total phenolic compounds increased during the fermentation and was maximum after 96 h, which inhibited the DPPH radical by 87%. The promising characteristics of the protein and phenolic extracts of the biomass suggested the application in the coating composition for vegetal tissues preservation.

O objetivo desta revisão é abordar as aplicações de nanotecnologia em alimentos, enfatizando o uso de nanopartículas lipídicas sólidas, nanoemulsões, nanocápsulas e de nanocompósitos para embalagens de alimentos, bem como os métodos de obtenção, a funcionalidade e as suas características. A aplicação da nanotecnologia em alimentos é nova em comparação com a área biomédica e as indústrias de tecnologia de informação, nas quais a nanotecnologia já é utilizada na fabricação de materiais. No entanto, já existem inúmeras oportunidades que podem ser exploradas, como a elaboração de produtos com características funcionais e nutracêuticas, o desenvolvimento de processos e as embalagens inteligentes. Esta revisão aborda os seguintes itens: nanopartículas lipídicas sólidas, nanoemulsões, nanocápsulas, nanocompósitos em embalagem e os riscos e a legislação para a nanotecnologia. Nanopartículas lipídicas sólidas são sistemas de transporte coloidal empregados para encapsular, proteger e entregar componentes funcionais. Nanoemulsão consiste em uma dispersão muito fina composta por uma fase de óleo e uma fase aquosa, com tamanho de gota, em escala nanométrica; em função do seu tamanho característico, as nanoemulsões são transparentes ou translúcidas, e possuem estabilidade contra a sedimentação. Nanocápsulas são compostas por um invólucro polimérico disposto ao redor de um núcleo, no qual se encontra o composto ativo, conferindo proteção contra o oxigênio, a água e/ou a luz; permitem, dessa forma, uma liberação controlada da substância e/ou previnem o contato com outros componentes em uma mistura. Em nanotecnologia de embalagens, aborda-se a utilização de nanopartículas, tais como nanofibras de celulose e nanoargila, bem como a aplicação de nanomateriais com propriedades nutricionais e/ou antimicrobianas, e nanosensores. Serão abordados também aspectos relacionados aos riscos e à legislação em nanotecnologia de alimentos.

The objective of this review was to study the applications of nanotechnology in foods, emphasizing the use of solid lipid nanoparticles, nanoemulsions, nanocapsules and nanocomposites for food packaging and also review the production methods, functionality and characteristics. Nanotechnology in foods is new as compared to the biomedical area and information technology industries, where nanotechnology has been used in the manufacture of materials. However, there are many opportunities that can be explored, such as the development of products with functional and nutraceutical characteristics, process development and intelligent packaging. In this review, solid lipid nanoparticles, nanoemulsions, nanocapsules and nanocomposites for use in packaging, will be examined, as also the risks and legislation regarding nanotechnology. Solid lipid nanoparticles are colloidal transport systems developed to encapsulate, protect and deliver functional components. Nanoemulsions are a very fine dispersion consisting of an oil phase and an aqueous phase with a droplet size on a nanometric scale. Due to their characteristic size, these emulsions are transparent or translucent and present stability against sedimentation. Nanocapsules are composed of an active central core surrounded by a thin polymeric wall, providing protection of the active compound against oxygen, water and/or light, allowing for a controlled release of the substance and/or preventing contact with other components in a mixture. The use of nanoparticles such as cellulose nanofibres and nanoclays in packaging nanotechnology will be discussed; and also the application of nanomaterials with nutritional and/or antimicrobial properties; and the application of nanosensors. Issues related to the legislation and risks of food nanotechnology will also be discussed.

Os ovos são a fonte mais confiável de muitos compostos, tais como: vitaminas, minerais e proteínas, por isso seu consumo está aumentando significativamente, principalmente os de codornas. A análise sensorial descritiva pode ser considerada como o primeiro passo na caracterização de um produto alimentício, provida de uma terminologia pré-definida para descrição das percepções sensoriais. Em decorrência da falta de registros da caracterização sensorial em ovos de codornas, objetivou-se avaliar o sabor e odor destes ovos, cujas aves receberam dietas contendo óleo de pescado semipurificado e a fração sólida da silagem química de resíduos de pescado. Foram realizados a seleção e o treinamento da equipe sensorial, o levantamento da terminologia para ovos de codornas e a avaliação das diferentes amostras. Foram selecionados 10 julgadores para avaliação do atributo sabor e 10 para o atributo odor. Com base na terminologia levantada, quatro grupos de termos foram propostos: adocicado, farináceo, oleoso e penetrante. Verificou-se que a dieta das aves pode influenciar nas características sensoriais dos ovos de codornas; existe sobreposição de alguns sabores e odores de maior intensidade; a fração sólida da silagem química de pescado proporciona menores modificações sensoriais do que o óleo comercial semipurificado de pescado; quando a silagem contém antioxidante, ela não produz efeitos sobre odor e sabor dos ovos

The eggs are a reliable source of many compounds, such as vitamins, mineral, and proteins. That is the reason why their consumption has been increasing significantly, mainly quail eggs. Descriptive sensorial analysis, which has a pre-defined terminology for the description of the sensorial perceptions, can be considered the first step in the characterization of a nutritious product. Due to the lack of information on the sensorial characterization for quail eggs, the objective of this work was to evaluate the flavor and aroma of these eggs, whose birds were fed diets containing semi-purified oil of fish and the solid fraction of the chemical silage of fish residues. Firstly, the sensorial team was selected and trained, the terminology for quail eggs was surveyed, and the evaluation of different samples was carried out. 10 judges were selected for flavor evaluation and 10 for aroma analyses. Based on the survey of terms, four different groups were described: sweet, farinaceous, oleaginous, and penetrating. It was verified that the diet of the birds can influence in the sensorial characteristics of the quail eggs. Interference of some flavors and aroma of higher intensity was observed. The solid fraction of the chemical silage of fish provides less sensorial modifications than the commercial semi-purified fish oil; when the silage has antioxidants, it does not affect the aroma and flavor of the eggs

O objetivo deste trabalho foi avaliar a disponibilização de nutrientes no farelo de arroz através de um processo de fermentação utilizando Saccharomyces cerevisiae como inóculo, bem como caracterizar os farelos não fermentado e fermentado química e nutricionalmente. Os parâmetros definidos para a fermentação foram 3% de levedura, 30% de umidade e um intervalo de 6 horas a 30 °C. A caracterização físico-química foi realizada segundo AOAC (2000), a digestibilidade in vitro e metionina disponível por método enzimático, cálcio por complexometria, açúcares redutores por espectrofotometria e micotoxinas pelo multimétodo de TANAKA (2001). Observou-se, que os açúcares redutores variaram de 3,4 a 4,8% durante 6 horas de fermentação. Comparando-se o farelo não fermentado com o fermentado, o pH diminuiu de 6,5 para 5,8, a acidez, os minerais e as fibras variaram de 2,1 a 4,7%, de 10,5 a 11,9% e de 9,4 a 9,9%, respectivamente. A digestibilidade in vitro e os teores de lipídios, proteínas e cálcio não variaram significativamente com a fermentação.

The objective of this work was to evaluate the availability of nutrients in rice bran through a solid-state fermentation process, using Saccharomyces cerevisiae as the inoculum, and to characterize the fermented and non-fermented bran physicochemically and nutritionally. The parameters defined for the fermentation were 3% yeast, 30% humidity and an interval of 6 hours at 30 °C. The physicochemical characterization was conducted according to an official methodology (AOAC, 2000), the pH and acidity were determined by the Adolfo Lutz Institute (1985) method, in vitro digestibility and available methionine by the enzymatic method, calcium by complexometry, reducing sugars by spectrophotometry and mycotoxins by TANAKA's multimethod (2001). The reducing sugars were found to vary from 3.4 to 4.8% during a 6 hours fermentation period. A comparison of the non-fermented and fermented bran indicated that the pH, available methionine and carbohydrates decreased, respectively, from 6.5 to 5.8, from 4.4 to 4.2 mg.g-1 and from 46.3 to 44.1%, while acidity, ashes and fibers varied from 2.1 to 4.7%, 10.5 to 11.9% and 9.4 to 9.9%, respectively. The in vitro digestibility and lipids, protein and calcium contents did not vary significantly with the fermentation process.

The objective of this paper was to determine nitrate and nitrite anions in toasted fish skin tea, which the population of southern Rio Grande do Sul believes to have pharmacological properties for trating asthma. Two methods were compared, an official and one described by Guozhen et al., that has the advantage of not needing reduction of nitrate to nitrite on a Cd column. The samples were the skin of the fish species Balistes capriscus (peixe porco) and Menticirrhus littoralis (papa-terra), both crude and toasted, as traditionally used. The method of Guozhen et al. was used due to its performance (detection limit 0.005 µmol/L NO3- and 0.02 µmol/L - NO2- and mean recuperation of 100 and 97% respectively for each anion) and results similar to those of the official methods under conditions used by the population, the estimated daily intake, of the teas is equivalent to 0.03 to 0.05 mg of nitrate and 0.007 to 0.014 mg of nitrite. These values are in accord with safety recommendations and don't represent a health risk.
