RESUMO: O objetivo deste trabalho foi determinar a melhor condição de extração de compostos bioativos do capim-limão (Cymbopogon citratus), usando o método convencional e extração assistida por ultrassom, em diferentes temperaturas, a fim de avaliar a atividade antioxidante e a atividade antimicrobiana do extrato com maior poder antioxidante em linguiças de frango frescal durante o período de armazenamento. Os extratos foram obtidos pelo método convencional (extração com solvente) e por extração assistida por ultrassom, variando a temperatura (20°C, 40°C e 60°C). Foram medidos os compostos fenólicos, flavonoides totais e atividade antioxidante pelos métodos DPPH, FRAP, ORAC. Os métodos de extração convencional e ultrassom influenciaram no teor de fenólicos e flavonoides totais em todas as temperaturas testadas. Os métodos convencional e ultrassom não influenciaram no IC50 nas temperaturas de 40oC e 60oC. A atividade antioxidante pelo método DPPH e pelo método FRAP foi superior no método convencional na temperatura de 60°C, entretanto pelo método ORAC os melhores resultados foram na extração por ultrassom. Os resultados demonstram que a extração convencional a 60ºC foi melhor para obter extratos de capim-limão com maior quantidade de compostos bioativos. A capacidade antimicrobiana avaliada em linguiça frescal mostrou que na concentração de 1,0% do extrato protegeu o produto quanto o crescimento de aeróbios mesófilos e contra o crescimento de bactérias psicrotróficas. O capim-limão pode ser considerado uma alternativa natural para obtenção de extratos ricos em compostos bioativos, com atividade antioxidante e elevada capacidade antimicrobiana.

ABSTRACT: The aim of this work was to determine the best extraction condition of bioactive compounds from lemongrass (Cymbopogon citratus), using the conventional method and ultrasonic assisted extraction, varying the temperature, in order to evaluate the antioxidant activity and the antimicrobial activity of the extract with higher antioxidant power in fresh chicken sausages during the storage period. The extracts were obtained by the conventional method (solvent extraction) and by ultrasound assisted extraction, varying the temperature (20°C, 40°C and 60°C). Phenolic compounds, total flavonoids and antioxidant activity were measured by the DPPH, FRAP, ORAC methods. Conventional extraction and ultrasound methods influenced the phenolic and total flavonoid content at all tested temperatures. Conventional and ultrasonic methods did not influence the IC50 at temperatures of 40°C and 60°C. The antioxidant activity by the DPPH method and by the FRAP method was superior in the conventional method at the temperature of 60°C, however by the ORAC method the best results were in the extraction by ultrasound. The results demonstrate that the conventional extraction at 60ºC was better to obtain extracts of lemongrass with greater amount of bioactive compounds. The antimicrobial capacity evaluated in sausage of fresh chicken showed that in the concentration of 1.0% of the extract protected the product as the growth of mesophilic aerobes and against the growth of psychrotrophic bacteria. Lemongrass can be considered as a natural alternative to obtain extracts rich in bioactive compounds, with antioxidant activity and high antimicrobial capacity.

RESUMO: O objetivo deste trabalho foi avaliar o efeito das condições de extração sobre os compostos bioativos, bem como sobre a atividade antioxidante e atividade antimicrobiana do extrato com maior característica antioxidante. Os extratos foram obtidos pelo método convencional e extração assistida por ultrassom, variando a temperatura (20oC, 40oC e 60oC). Foram quantificados os fenólicos totais, flavonóides totais, a atividade antimicrobiana, e atividade antioxidante pelos métodos DPPH, FRAP, e ORAC. Os métodos de extração convencional e ultrassom influenciaram no teor de fenólicos em todas as temperaturas testadas. Os flavonóides não sofreram influência dos métodos de extração. A atividade antioxidante (DPPH) foi superior no método ultrassom nas temperaturas de 40°C e 60°C, entretanto pelo método FRAP os melhores resultados foram na extração convencional. Os métodos convencional e ultrassom não influenciaram no IC50 nas temperaturas de 20oC e 40oC, mas a atividade antioxidante pelo método ORAC sofreu influencia dos métodos em todas as temperaturas. O extrato obtido a 60°C pelo método ultrassom possui elevada ação antimicrobiana frente a cepas de Salmonella sp., Escherichia coli, e Staphylococcus aureus. A extração assistida por ultrassom pode ser considerada adequada para obtenção de extratos de marcela, que são ricos em compostos bioativos com alta atividade antioxidante.

ABSTRACT: The aim of this study was to evaluate the effect of extraction conditions on bioactive compounds, as well as on antioxidant activity, and the antimicrobial activity of the extracts with the highest antioxidant characteristics. The extracts were obtained by conventional method and ultrasound-assisted extraction at various temperatures (20°C, 40°C and 60°C). Total phenolics, total flavonoids, antimicrobial activity and antioxidant activity were quantified by the methods of DPPH, FRAP, and ORAC, respectively. The conventional extraction method and ultrasound method influenced the phenolic content at all the tested temperatures. Flavonoids were not influenced by extraction methods. The antioxidant activity (DPPH) was highest in the ultrasonic method at temperatures of 40°C and 60°C; however, in the case of the FRAP method the best results were for the conventional extraction method. The conventional and ultrasonic methods did not influence the IC50 at temperatures of 20°C and 40°C, but using ORAC the antioxidant activity was influenced by the methods at all temperatures. The extract obtained at 60°C by the ultrasound method had high antimicrobial action in relation to the strains of Salmonella sp., Escherichia coli, and Staphylococcus aureus. Extraction ultrasonic-assisted can be considered adequate to obtain extracts of marcela, which are rich in bioactive compounds with high antioxidant activity.

RESUMO: O uso de óleos vegetais como substitutos da gordura animal em embutidos fermentados tem surgido como uma alternativa de produzir produtos cárneos com um melhor perfil lipídico. Assim, o objetivo deste trabalho foi avaliar a composição química, propriedades microbiológicas e o perfil de ácidos graxos de salame tipo Italiano elaborado com a substituição parcial da gordura suína (15 e 30%) por emulsão com óleo de canola. A incorporação do óleo de canola reduziu o teor de gordura e aumentou o teor de umidade dos embutidos fermentados. Em relação às características microbiológicas, a adição de óleo de canola emulsionado não alterou o crescimento das bactérias láticas durante o processamento. Ainda, não foram detectadas contagens de coliformes fecais, staphylococci coagulase positiva e Salmonella. Em relação ao perfil de ácidos graxos, foi possível observar a redução nos teores totais de ácidos graxos saturados (SAFAs) e uma elevação nos valores de ácidos graxos monoinsaturados (MUFAs) e poliinsaturados (PUFAs) nos tratamentos adicionados de óleo de canola. Dessa forma, a substituição da gordura suína por óleo de canola emulsionado em salame tipo Italiano torna-se uma alternativa interessante na produção de produtos cárneos com melhores características nutricionais.

ABSTRACT: Vegetable oils have been used to substitute pork backfat to improve the fatty acid profile of fermented sausages. The aim of this study was to assess the chemical composition, microbiological properties, and fatty acid profile of Italian-type salami with pork backfat substituted (15% and 30%) by emulsified canola oil. Fat contents decreased while moisture contents increased in Italian-type salami with emulsified canola oil. The growth of lactic acid bacteria in salami was not affected by canola oil and absence of fecal coliforms, coagulase-positive staphylococci, and Salmonella were reported during processing of fermented sausages. Lower levels of saturated fatty acids (SAFAs), higher levels of monounsaturated fatty acids (MUFAs) and polyunsaturated fatty acids (PUFAs) were observed in salami with emulsified canola oil. Together, our results indicated that substituting pork backfat with emulsified canola oil improved the nutritional values of Italian-type salami.

Resumo O emprego de hidrolisados proteicos, oriundos de fontes animais e vegetais, em formulações específicas, é uma área de crescente interesse. O objetivo deste trabalho foi desenvolver diferentes hidrolisados liofilizados com alto valor proteico, obtidos a partir da hidrólise enzimática de carcaças de frango manualmente desossadas (CMD), um subproduto da indústria avícola, que normalmente é utilizado para a fabricação de carne mecanicamente separada (CMS). A matéria-prima utilizada foram carcaças de frango desossadas manualmente e congeladas (CMD), provenientes de animais abatidos com aproximadamente 42 dias de vida e com peso médio de 2,5 kg, adquiridas em um abatedouro da região sul do Brasil. Antes de serem processadas, foram descongeladas sob temperatura de refrigeração e cortadas em pedaços menores com faca de aço inox para facilitar sua homogeneização durante o tempo de hidrólise. Foram utilizadas três enzimas comerciais, Papaína®, Flavourzyme® e Protamex®. A hidrólise ocorreu em banho termostatizado com temperatura, tempo e pH controlados. Foi realizada a composição proximal da matéria-prima e dos hidrolisados liofilizados, atividade de água dos hidrolisados liofilizados e foram feitas as seguintes análises de controle da hidrólise: grau de hidrólise, teores de proteínas, sólidos totais, cinzas, caracterização de aminoácidos dos hidrolisados, rendimento, percentual de hidrólise e cor dos hidrolisados. Os resultados foram submetidos à análise de variância e teste de Tukey para comparação de médias. O grau de hidrólise maior foi com a Protamex, seguido da Papaína e da Flavourzyme. O teor de proteínas após os 120 minutos de hidrólise não variou estatisticamente (p>0,05) entre a Papaína e a Flavourzyme. A composição de aminoácido demonstra que o hidrolisado obtido da Papaína possui uma composição mais próxima da recomendada pelos órgãos de controle. Concluiu-se que os hidrolisados proteicos obtidos da carcaça manualmente desossada (CMD) de frango apresentaram alto conteúdo proteico, caracterizando-se como matéria-prima promissora na formulação de dietas especiais.

Summary The use of protein hydrolysates, derived from animal and vegetable sources, in specific formulations, is an area of growing interest. The goal of this study was to develop different freeze-dried powder hydrolysates with high protein value, obtained from the enzymatic hydrolysis of manually deboned chicken carcasses (MDC), a by-product of the poultry industry which is normally used in the production of mechanically deboned meat (MDM). The raw material used was frozen manually deboned chicken carcasses (MDC), obtained from animals slaughtered at approximately 42 days of age with an average weight of 2.5 kg, acquired from an abattoir in southern Brazil. Before use, they were thawed under refrigeration, and cut into smaller pieces with a stainless steel knife for easier mixing during the hydrolysis time. Three commercial enzymes, Papain®, Flavourzyme® and Protamex® were used. Hydrolysis occurred in a thermostatic bath with controlled temperature, time and pH. The proximal compositions of the raw material and freeze-dried hydrolysates and the water activity of the freeze-dried hydrolysates were determined, and the following analyses carried out to control the hydrolysis: degree of hydrolysis, protein, total solids and ash contents, characterization of the amino acids in the hydrolysates, yield, percent hydrolysis and colour of the hydrolysates. The results were evaluated by the analysis of variance and Tukey’s means comparison test. The degree of hydrolysis was highest with Papain, followed by Protamex and Flavourzyme and after 120 minutes of hydrolysis the protein content did not vary significantly (p>0.05) between Papain and Flavourzyme. The amino acid composition showed that the hydrolysate obtained with papain had a composition closer to that recommended by the control authorities. It was concluded that the protein hydrolysates obtained from manually deboned chicken carcasses (MDC) had a high protein content, characterizing them as a promising raw material for the formulation of special diets.

The most promising microorganisms for use as starter cultures are those isolated from the native microbiota of traditional fermented products. The aim of this study was to evaluate the use of lactic acid bacteria selected from the native microbiota of sausages produced by spontaneous fermentation as starter cultures for the production of sausage. Strains of Lactobacillus plantarum 503 and 341 have the potential for use as starter cultures in the manufacture of Italian sausage type. The population of lactic acid bacteria in sausages was >8 log CFU.g-1 during fermentation, which caused the pH to decrease to <4.5. This decrease in pH and the water activity of < 0.90 of sausages ensures the safety and preservation of this product. Sausages produced with these lactic cultures fulfill the requirements for microbiological quality and composition of Italian sausage type. Our results suggest the possibility of using these starter cultures for the production of sausages with peculiar characteristics that contribute to the identity of the product.

Mortadella-type sausage manufactured using mechanically deboned chicken meat were reformulated replacing MDCM with increasing amounts of MDCM protein hydrolysates (10%, 20%, and 30%), and their physicochemical, microbiological, and sensorial characteristics were evaluated for 60 days of storage at 4 °C. The higher substitutions resulted in sausages more susceptible to lipid oxidation with higher TBARS values during storage; however, these values were lower than the organoleptic perception threshold. The sausages were darker and less red, with lower lightness (L*) and redness (a*) values than those of the control treatment. They had soft texture, which was evidenced by both the instrumental and sensory analysis. Therefore, the formulation containing 10% of MDCM protein hydrolysates proved to be the most suitable for mortadella-type sausage elaboration.

O objetivo deste trabalho foi avaliar a influência de tempos de maturação pré-desossa (tempo de desossa) e tempos de maturação pós-desossa (tempos de espera) na qualidade sensorial (atributos sensoriais e textura) e nas perdas de peso por cozimento do peito de frango marinado, cozido e congelado em processo contínuo, utilizando planejamento experimental 3² (3 tempos de desossa: zero, 6 e 12 horas; e 3 tempos de espera: zero, 12 e 24 horas). Foram realizadas análises de absorção de salmoura, pH do peito de frango, perda de cozimento, análise sensorial e força de cisalhamento. Os tempos de desossa e tempos de espera não influenciaram significativamente a absorção de salmoura e pH. Os tempos de desossa e tempos de espera influenciaram significativamente as perdas de peso por cozimento, em que a menor perda obtida foi média de 19,72% com tempo de desossa de 6 ou 12 horas e tempo de espera de 24 horas. O tempo de desossa de 6 horas foi suficiente para melhorar a maciez, medida por análise sensorial e força de cisalhamento.

The objective of this study was to evaluate the influence of different ageing times before deboning (deboning time) and ageing times after deboning (holding time) on the quality (sensory attributes and texture) and cooking loss of chicken breast marinated, cooked and frozen using a continuous process.The following3² experimental design was used (3 deboning times: zero, 6 and 12 hours; and 3 holding times: zero, 12 and 24 hours). Brine absorption, chicken breast pH and cooking loss were evaluated, a sensory analysis was carried out and the shear force was determined. The deboning and holding times did not significantly influence brine absorption and pH, but did significantly influence cooking loss, where the lowest value obtained was a mean of 19.72% for deboning times of 6 or 12 hours and a holding time of 24 hours. A deboning time of 6 hours was sufficient to improve tenderness as measured by a sensory analysis and shear force determination.

The aim of this study was to determine the colorimetric and sensory characteristics of a fermented cured sausage containing ostrich meat (Struthio camelus) and pork meat. Four treatments were performed: one with no ostrich meat (TC) and the others containing 19.08 (T1), 38.34 (T2), and 57.60% (T3) of ostrich meat and pork meat. Colorimetric analyses were measuring L*, a*, b*, C*, and hº. Sensory analysis was conducted assessing color, aroma, flavor, and texture at the end of the sausages' processing. The sausages containing ostrich meat were statistically different from the control in the instrumental colorimetric analysis. In the sensory analysis, no significant differences were observed between the treatments for aroma, flavor, and texture. However, significant differences were found in the color of the sausages due to the high myoglobin content present in the ostrich meat, which resulted in a very dark color in the treatment with the highest percentage of this type of meat.

Devido aos seus efeitos benéficos, os probióticos têm sido incorporados nos mais diversos alimentos, incluindo iogurtes, queijos, sorvetes, leites fermentados e sobremesas congeladas. No entanto, existem ainda diversos problemas com relação à viabilidade e resistência das culturas probióticas nesses alimentos. Neste artigo de revisão, são abordados os aspectos tecnológicos utilizados na microencapsulação de probióticos que permitem aumentar a sua viabilidade durante a fermentação, processamento e utilização nos produtos comerciais. A microencapsulação de bactérias probióticas pode ser utilizada para aumentar a viabilidade durante o processamento, como também para liberá-las de maneira controlada no trato gastrointestinal.

Because of their health benefits, probiotics have been incorporated into a range of dairy products, including yogurts, soft-, semi-hard and hard cheeses, ice cream, milk powders and frozen dairy desserts. However, there are still several problems with respect to the low viability of probiotic bacteria in dairy foods. This review focuses mainly on current knowledge and techniques used in the microencapsulation of probiotic microorganisms to enhance their viability during fermentation, processing and utilization in commercial products. Microencapsulation of probiotic bacteria can be used to enhance the viability during processing, and also for the targeted delivery in gastrointestinal tract.

Os objetivos deste trabalho foram avaliar o perfil de ácidos graxos e o teor de colesterol em mortadelas elaboradas com diferentes óleos vegetais. Nove tratamentos de mortadela foram elaborados com quatro diferentes óleos vegetais (canola, linhaça, oliva e soja), em dois níveis de substituição (50% e 100%). Os ácidos graxos e o teor de colesterol foram separados e identificados por cromatografia gasosa. Houve predominância dos ácidos graxos oleico, linoleico e palmítico. O teor de ácidos graxos saturados foi menor nos produtos que continham óleos vegetais. A relação PUFA/SFA foi menor no tratamento controle, enquanto que o maior valor foi observado no tratamento com 100% de óleo de linhaça. Os teores de colesterol encontrados foram semelhantes entre todos os tratamentos, sendo superior apenas no tratamento contendo 100% de óleo de soja. Logo, exceto o tratamento com 100% de óleo de soja, todos os outros tratamentos com óleos vegetais apresentaram uma melhor qualidade nutricional quando comparados com o controle.

The aim of this study was to evaluate the fatty acid profile and the cholesterol content of mortadella prepared with different vegetable oils. Nine treatments were made with four different vegetable oils (canola, linseed, olive and soy) using two substitution levels (50% and 100%). The fatty acids and the cholesterol content were separated and identified by gas chromatography. There was a prevalence of the oleic, linoleic and palmitic fatty acids. The saturated fatty acids were lower in the products with vegetable oils. The PUFA/SFA relation was lower in the control treatment while the higher value was observed in the 100% linseed oil treatment. The cholesterol levels found were similar between all the treatments, but a reduction of these levels were observed in the treatments, being superior only in treatment containing 100% of soybean oil. Thus, except the treatment with 100% of soybean oil, all the other treatments with vegetable oils showed a better nutritional quality in relation to the control treatment.

O estudo da ecologia de salames fermentados faz-se necessário para entender as mudanças físicas e químicas que ocorrem durante a fermentação e maturação. O objetivo deste trabalho foi determinar as características microbiológicas de salames produzidos por fermentação espontânea. Foram analisadas cinquenta amostras de salames de diferentes pequenas indústrias em relação à seguinte microbiota: bactérias aeróbias mesófilas; Micrococcaceae; bolores e leveduras; bactérias lácticas; coliformes totais e fecais; Staphylococcus coagulase positiva; e Salmonella. Na grande maioria das amostras (72%), a presença de bactérias lácticas foi superior a 10(6) ufc.g-1, sendo que as amostras com as maiores contagens tiveram quantidades acima de 10(8) ufc.g-1. A concentração de Micrococcaceae, na maioria das amostras, ficou entre 10(5) e 10(7) ufc.g-1. Em relação à concentração de bolores e leveduras, houve uma grande variação entre as amostras, com quantidades próximas a 10² ufc.g-1 até 10(6) ufc.g-1. Pelos dados obtidos, concluiu-se que, das amostras analisadas, 24% estão em desacordo com as normas vigentes no Brasil, pois apresentam quantidades superiores do máximo permitido para coliformes a 45 ºC ou Staphylococcus coagulase positiva.

The study of the ecology of fermented sausage is fundamental to understand the physical and chemical changes that happen during fermentation and maturation. The aim of the present study was to determine the microbiological characteristics of sausages produced by spontaneous fermentation. Fifty samples of sausages produced in the South of Brazil by different small manufacturers were analyzed for the following microbiota: aerobic mesophilic bacteria; Micrococcaceae; mold and yeast; lactic acid bacteria; total and fecal coliforms; coagulase-positive Staphylococcus, and Salmonella. In most samples (72%), the count of lactic bacteria was higher than 6 log10 cfu.g-1, and the samples with the highest counts were above 8 log10 cfu.g-1. The counts of Micrococcaceae in most samples were between 5 log10 and 7 log10 cfu.g-1. With respect to the presence of molds and yeasts, there was a significant variation among the samples with counts ranging from 2 log10 cfu.g-1 and 6 log10 cfu.g-1. From the data obtained, it was possible to conclude that 24% of the analyzed samples did not comply with the current law in Brazil since the levels of fecal coliforms or coagulase-positive Staphylococcus exceeded the maximum limit allowed.

Atualmente, as atividades antioxidante e antimicrobiana de vários compostos fenólicos e de extratos de plantas têm sido avaliadas em muitos experimentos. O objetivo deste estudo foi elaborar o extrato hidroetanólico bruto de caqui (Diospyros kaki L.) cultivar Rama Forte e fracioná-lo empregando solventes com diferentes polaridades, para posteriormente determinar os compostos fenólicos totais e verificar as atividades antioxidante e antimicrobiana in vitro tanto do extrato hidroetanólico bruto de caqui como das frações hexânica, clorofórmica, de acetato de etila e da fração residual, obtidas a partir do mesmo. Os compostos fenólicos totais foram determinados pelo método de Folin-Ciocalteu; a atividade antioxidante, por meio do método da captura do radical livre 2,2-difenil-1-picrilidrazila (DPPH), e a atividade antimicrobiana pelo método de difusão em disco. O teor de compostos fenólicos do extrato hidroetanólico bruto de caqui, da fração residual, da fração acetato de etila, da fração hexânica e da fração clorofórmica foram de 1.277,94, 1.231,23, 37,24, 17,60 e 11,48 mg GAE.100 mL-1, respectivamente. O extrato hidroetanólico bruto de caqui e a fração residual apresentaram maior teor de compostos fenólicos e maior atividade antirradical frente ao DPPH do que as demais frações testadas, com valores de IC50 de 0,2467 e 0,2567 mg.mL-1, respectivamente. O extrato de caqui e as frações não apresentaram atividade antimicrobiana in vitro sobre os microrganismos testados. Os resultados demonstraram que o extrato hidroetanólico bruto de caqui cv. Rama Forte e a fração residual contêm quantidade suficiente de compostos fenólicos capaz de contribuir positivamente na atividade antioxidante.

The antioxidant and antimicrobial properties of various phenolic compounds and plant extracts have been evaluated in many experiments. The aim of this study was to obtain a crude hydroethanolic extract of persimmon (Diospyros kaki L.) cv. Rama Forte and fraction it using solvents with different polarities. Subsequently the total phenolic compounds and in vitro antioxidant and antimicrobial activities were determined in the crude hydroethanolic extract of persimmon, as well as in the hexane, chloroform, ethyl acetate and residual fractions obtained from it. The total phenolic compounds were determined by the Folin-Ciocalteau method, the antioxidant activity by the free radical scavenging 2,2-diphenyl-1-picrylhydrazyl (DPPH) method, and the antimicrobial activity by the disc diffusion method. The phenolic compound contents of the crude hydroethanolic extract of persimmon cv. Rama Forte, the residual aqueous fraction, ethyl acetate fraction, hexane fraction and chloroform fraction were, respectively, 1277.94, 1231.23, 37.24, 17.60 and 11.48 mg GAE.100 mL-1. The crude hydroethanolic extract of persimmon cv. Rama Forte and the residual fraction showed the highest contents of phenolic compounds and highest anti-radical activities against DPPH, as compared to the other fractions tested, with IC50 values of 0.2467 and 0.2567 mg.mL-1, respectively. The persimmon extract and fractions showed no in vitro antimicrobial activity against the microorganisms tested. The results showed that the crude hydroethanolic extract of persimmon cv. Rama Forte and the residual fraction contained sufficient amounts of phenolic compounds to contribute positively to the antioxidant activity.

O efeito de dois níveis (0,5% e 1%) de extrato hidroalcoólico de marcela (Achyrocline satureioides) na segurança (valores de TBARS) e qualidade (pH, atividade de água, cor, perda de peso e atributos sensoriais) de salames foi avaliado. A adição de extrato de marcela diminuiu significativamente os valores de TBARS durante o armazenamento dos salames, comparado ao controle, elaborado sem extrato de marcela. O tratamento com 1% de extrato de marcela mostrou uma maior estabilidade lipídica que o lote com 0,5%, porém apresentou uma diminuição (p < 0,05) na aceitação sensorial. Os dois níveis de extrato de marcela não influenciaram significativamente os parâmetros de pH, atividade de água, cor e perda de peso. Este estudo indicou que o extrato hidroalcoólico de marcela foi efetivo na diminuição da oxidação lipídica e que a concentração de 0,5% não alterou as características sensoriais, podendo, portanto, ser utilizada em salames para proporcionar produtos mais seguros aos consumidores.

The effect of two levels (0.5 and 1%) of hydroalcoholic extract of Achyrocline satureioides on the safety (TBARS values) and quality (pH, water activity, colour, weight loss, and sensorial attributes) of salami was evaluated. The addition of Achyrocline satureioides extract decreased TBARS values significantly during the storage of salami when compared to the control, which was elaborated without Achyrocline satureioides extract. The treatment with 1% of "Marcela" extract showed larger lipid stability than that of the lot with 0.5%, However, it presented a decrease (p < 0.05) in the sensorial acceptance. The two levels of "Marcela" extract did not influence pH, water activity, colour, and weight loss significantly. This study indicates that the hydroalcoholic extract of "Marcela" was effective in decreasing the lipid oxidation and at 0.5% it did not alter the sensorial features; therefore, it may be used in salami to provide safer products for the consumers.

O objetivo deste trabalho foi avaliar a influência do genótipo e de teores de aminoácidos na dieta sobre o desempenho de suínos, o retorno econômico e a qualidade da carcaça e da carne. Os genótipos avaliados foram: MS115 x F1; Duroc x F1 (DCxF1); MS115 x Moura (MS115xMO); Duroc x 25% Duroc, 50% Large White, 25% Moura (DCxMO3). Os teores de aminoácidos nas dietas foram os recomendados para o desempenho alto ou médio de machos castrados com alto potencial genético. O escore de marmoreio foi mais elevado nos animais alimentados com teores médios de aminoácidos. Os genótipos DCxF1 e DCxMO3 tiveram maior ganho de peso diário do que MS115xF1 e MS115xMO. O menor ganho de peso, ajustado pelo consumo de ração, ocorreu no genótipo MS115xMO. As maiores espessuras de toucinho foram observadas nos animais MS115xMO e nos machos DCxMO3. O maior escore de marmoreio ocorreu nos animais MS115xMO, e o menor nos MS115xF1. Em comparação aos genótipos selecionados quanto à produção de carne, a raça Moura influenciou negativamente o desempenho e a qualidade da carcaça e positivamente a qualidade da carne, de acordo com sua proporção nos genótipos. A raça Duroc influenciou positivamente a qualidade da carne nos cruzamentos. A redução dos teores de aminoácidos nas dietas proporciona aumento do marmoreio, independentemente do genótipo.

The objective of this work was to evaluate the effect of genotype and amino acid levels on swine performance, economic returns, and carcass and meat quality. The evaluated genotypes were: MS115 x F1; Duroc x F1 (DCxF1); MS115 x Moura (MS115xMO); Duroc x 25% Duroc, 50% Large White, 25% Moura (DCxMO3). Diet amino acids contents were those recommended for high or medium performance of barrows with high genetic potential. Marbling score was higher in animals fed the lowest level of amino acids. The genotypes DCxF1 and DCxMO3 had higher daily weight gains than MS115xF1 and MS115xMO. The lowest weight gain, adjusted by feed intake, occurred in the genotype MS115xMO. The highest backfat thickness were observed in MS115xMO animals and DCxMO3 males. The highest marbling score occurred in MS115xMO animals and the lowest in MS115xF1 ones. In comparison to the genotypes selected for meat production, Moura breed affected the performance and carcass quality negatively, and affected the meat quality positively, depending on this breed proportion in the genotypes. Duroc breed affected meat quality positively in the genotypes. Diet-reduced amino acid contents increased marbling, regardless of the genotype.

A pesquisa teve como objetivo acrescentar culturas starters nativas em salame tipo Italiano e avaliar o desempenho frente a culturas comerciais quanto às características microbiológicas, físico-químicas e sensoriais. As culturas utilizadas foram Staphylococcus xylosus, isolado de salames coloniais, e Lactococcus lactis ssp. lactis, isolado de um produto lácteo e fermentado em meio de cultura de plasma suíno. Elaboraram-se os seguintes tratamentos: T1 - adição de starters comerciais (Staphylococcus xylosus e Lactococcus lactis ssp. lactis); T2 - mistura de Staphylococcus xylosus isolado mais Lactococcus lactis ssp. lactis comercial; T3 - mistura de Lactococcus lactis ssp. lactis isolado mais Staphylococcus xylosus comercial; e T4 - Staphylococcus xylosus e Lactococcus lactis ssp. lactis, ambos isolados. Os tratamentos apresentaram uma queda de pH significativa e também uma redução na Aw, garantindo uma segurança microbiológica aos produtos. Em relação à oxidação lipídica, os tratamentos que continham Staphylococcus xylosus isolados de salames artesanais apresentaram valores menores que os outros tratamentos. Os salames elaborados com Staphylococcus xylosus e Lactococcus lactis ssp. lactis, ambos isolados, apresentaram melhores resultados sensoriais quando comparados com salames elaborados com culturas starters comerciais. Portanto, a adição de culturas starters nativas pode ser utilizada na elaboração de salames, proporcionando produtos seguros e com flavor diferenciado.

The objective of this paper was to add native starter cultures in fermented Italian sausages and evaluate the performance compared to commercial cultures in terms of microbiological and physicochemical parameters and sensorial characteristics. The cultures used were Staphylococcus xylosus, isolated from colonial sausages, and Lactococcus lactis ssp. lactis isolated from a dairy product and fermented in pork plasma medium. The following treatments were performed: T1 - addition of commercial starters (Staphylococcus xylosus and Lactococcus lactis ssp. lactis); T2 - mixture of isolated Staphylococcus xylosus plus commercial Lactococcus lactis ssp. lactis; T3 - mixture of isolated Lactococcus lactis ssp lactis plus commercial Staphylococcus xylosus; and T4 - Staphylococcus xylosus and Lactococcus lactis ssp lactis both isolated. The treatments showed a significant decrease of pH and reduction in the Aw ensuring microbiological safety to the products. With regard to lipid oxidation, the treatments that contained isolated strains of Staphylococcus xylosus presented significantly lower values than the other treatments. The sausages elaborated with Staphylococcus xylosus and Lactococcus lactis ssp lactis, both strains isolated, presented better sensorial results than the sausages elaborated with commercial starter cultures. Therefore, the addition of native starter cultures can be used in the elaboration of fermented Italian sausages providing safe products with differentiated flavor.
