A Pitaya (Hylocereus undatus) é uma fruta que vem sendo observada e estudada nos últimos anos, ela apresenta indicações de resultados positivos à saúde, mas não há estudo sobre seu impacto glicêmico, e essa fruta pode ser ou não ser benéfica a pessoas com diabetes. Determinar o índice glicêmico e a carga glicêmica da Pitaya (Hylocereus undatus). A pesquisa foi do tipo experimental, realizada por meio de determinação de curvas glicêmicas. O estudo foi realizado em um Laboratório do curso de Nutrição no Centro Universitário Estácio do Ceará. Como critérios de inclusão foram considerados indivíduos adultos, de 20-59 anos, de ambos os sexos, que não possuíam doenças conhecidas que interferissem na glicemia. Os voluntários eram eutróficos. A determinação do IG foi feita 4 vezes em semanas consecutivas, iniciando sempre com os voluntários em jejum de 12 horas. Foi calculada a área média das três curvas obtidas nos testes com a glicose e a área obtida com a curva da Pitaya, chegando-se ao IG da Pitaya, o qual foi categorizado como baixo, moderado ou alto (IG < 55, IG 56 - 69 e IG ≥ 70). A CG foi calculada pela multiplicação do IG do alimento pela quantidade do carboidrato glicêmico ou disponível na porção dividido por 100. No caso do teste, a porção conteve 50 gramas de carboidrato glicêmico, pelo protocolo estabelecido. Após o cálculo, a CG foi classificada em baixa, média ou alta (≤10, 11 a 19 e ≥20), respectivamente. O Índice Glicêmico (IG) da Pitaya foi baixo (46) e a Carga Glicêmica (CG) alta (23). Ressalta-se que a porção-teste que continha 417g. Podemos concluir que a Pitaya tem um IG baixo e uma CG alta, devido a porção oferecida, porém, em porções menores, é um alimento indicado para o controle da glicemia, infelizmente não existe muitos estudos sobre o tema em humanos.

To determine the glycemic index and glycemic load of Pitaya (Hylocereus undatus). The research was experimental, performed by means of determination of glycemic curves. The study was carried out in a Laboratory of Nutrition course at Estácio do Ceará University Center. As inclusion criteria, adult individuals aged 20-59 years, of both sexes, who had no known diseases that interfered with glycemia were included. For the determination of the GI, four tests with each volunteer were necessary, performed in subsequent weeks with the volunteers fasting for 12 hours. The mean area of the three curves obtained in the tests with glucose and the area obtained with the Pitaya curve, to assess the Pitaya GI, which was categorized as low, moderate or high (GI <55, GI 56-69 and GI ≥ 70). CG was calculated by multiplying the IG of the food by the amount of the glycemic carbohydrate or available in the divided portion by 100. In the case of the test, the portion contained 50 grams of glycemic carbohydrate by the protocol established. After the calculation, CG was classified as low, medium or high (≤10, 11 to 19 and ≥20), respectively. Pitaya's Glycemic Index (GI) was low (46) and the Glycemic Load (CG) was high (23). It is noted that the test portion which contained 417g. We can conclude that Pitaya has a low GI and a high CG, due to the portion offered, but in smaller portions, it is a food that is indicated for glycemic control, unfortunately there are not many studies on the subject in humans.
