The objective of this paper is to establish a methodology for the Food List for the southeastern region of Brazil, according to the Total Diet Study (TDS) harmonized methodology at international level. The Food List can provide data for a further TDS with evaluation of essential and toxic element dietary intakes by food analysis in laboratories. The food consumption data source used was from 2008-2009 Household Budget Survey, by the Brazilian Institute of Geography and Statistics. The Food List was composed of 82 food items grouped into 19 food groups. It reflects 100% of the daily individual food consumption inside and outside Brazilian southeastern population households. According to the recommendation that each country should carry out their own TDS and the TDS methodology used, the Food List construction can contribute to the Food List of other Brazilian regions and other countries, besides allowing the TDS development. Additionally, the Food List showed the typical diet for the southeastern region of Brazil.

O objetivo do estudo foi elaborar a Cesta de Mercado para a realização de Estudos de Dieta Total (EDT) para avaliação de ingestão dietética de elementos tóxicos e essenciais no Estado de São Paulo. A fonte de dados foi a pesquisa de consumo nacional domiciliar atualizada, Pesquisa de Orçamentos Familiares (POF) 2002-2003, do Instituto Brasileiro de Geografia e Estatística (IBGE). Para estimar o consumo de alimentos pela população estudada, os dados de aquisição alimentar utilizados foram pertinentes ao Estado de São Paulo. A Cesta de Mercado inicialmente foi formulada com os dados disponíveis das publicações do IBGE, e para detalhamento dos alimentos foram pesquisados os seus Micro dados, resultando numa Cesta de Mercado com 71 alimentos, que corresponde a 72% do peso dos alimentos da população do Estado de São Paulo, segundo a POF. Como abordagem sugerida pelos EDT já realizados em outros países, os alimentos foram agrupados em 30 compostos, que serão posteriormente analisados para determinar o seu conteúdo dos elementos essenciais e tóxicos.

The objective of this paper was to establish the Market Basket for the Total Diet Study (TDS) in the state of São Paulo - Brasil in order to assess toxic and essential element dietary intakes. The food consumption data source used was from a recent household food budget survey, the "Pesquisa de Orçamento Familiar (POF) 2002-2003", conducted by the Brazilian Institute for Geography and Statistics (Instituto Brasileiro de Geografia e Estatística). The Market Basket formulation was based on information from publications of the Brazilian Institute for Geography and Statistics. Food details were researched in the POF Microdata, which resulted in a Market Basket containing 71 items. This corresponds to 72% of the food intake weight for the São Paulo State population. Foods were grouped in 30 compounds, which will be analyzed to determine essential and toxic element contents, according to suggested TDS approaches already carried out in other countries.

Neste estudo, analisou-se a influência do tamanho das plantas de produção de refeições, as Unidades de Alimentação e Nutrição da Divisão de Alimentação COSEAS/USP, nos custos das refeições produzidas em 1997, a preços de abril de 1998. O número de refeições produzidas em cada Unidade de Alimentação e Nutrição foi utilizado como proxy do tamanho de cada planta de produção. Foram calculados os custos unitários de refeições, abrangendo a totalidade do universo em 1997. A comparação com os preços, por categoria de usuários, permitiu o cálculo da margem de contribuição. Os principais resultados foram: não há relação entre os custos unitários de gêneros alimentícios e a planta de produção, mas quanto maior a planta menores são os custos diretos unitários. O cálculo da margem de contribuição permitiu confirmar a existência da política da Universidade de subsídio às refeições oferecidas a sua comunidade.

This study analysed the influence of the size of each Nutrition and Food Service Department of COSEAS/USP (University of São Paulo) on the costs of meals produced in 1997, with prices from April 1998. The number of meals produced in each department was used as proxy of the size of each production plant. The unit costs were calculated, including all the ones in 1997. The comparison of the prices for each customer category allowed the calculation of the contribution margin. The main results were: there is no relation between unit costs of food items and the production plant, but the bigger the plant is the smaller the direct unit costs are. The calculation of the contribution margin confirmed the existence of the University policy of grants to the meals offered in its community.
