Abstract Large quantities of residual cooking oil are being increasingly generated in various sectors, as it is often improperly disposed of and causes serious environmental problems. A commonly used alternative is the use of lipases in enzymatic hydrolysis, since it is rather attractive to several sectors, in addition to allowing the use of products generated thereof, such as: free fatty acids, diacylglycerols, monoacylglycerols and free glycerol, moreover, it is capable of operating in mild temperature and pressure conditions. Therefore, the present study aimed to evaluate alternatives for the hydrolysis of residual frying oil by evaluating the efficiency of different types of supports and heating systems using free and immobilized forms of lipase from Burkholderia cepacia (BCL) and Porcine pancreas (PPL) as biocatalyst. Polyhydroxybutyrate (PHB), niobium oxide (Nb2O5) and chitosan (CHIT) were evaluated as support for immobilizing BCL and PPL lipases, and superior results were found regarding the hydrolytic activity of immobilization derivatives using PHB and Nb2O5. Among the heating systems under evaluation, the highest percentage of residual oil hydrolysis was found using the ultrasound system for both free and immobilized lipases, reaching 57.91% hydrolysis for lipases immobilized on Nb2O5 and 61.11% hydrolysis for the derivative immobilized on PHB. The operational stability of both biocatalysts was evaluated using similar half-life time values for both. Thus, it was observed that the ultrasound system was efficient in improving lipase performance in the hydrolysis of free fatty acids, once this unconventional heating system is quite promising for accelerating such enzymatic reactions.

ABSTRACT Purpose To describe the characteristics of the initial public health training for speech-language-hearing therapists in Northeastern Brazil. Methods The research was based on the curricular framework of public higher education institutions in the Northeast. The analysis approached each institution’s general speech-language-hearing program data (state where it is located, total course load, and most recent curricular framework reformulation) and specific data on public health courses (their individual course load, the term when it is offered, syllabus content, whether it was theoretical, practical, both, or internship, and whether it was required or elective). Results The data show that eight public higher education institutions in the Northeast offer speech-language-hearing programs, whose pedagogical frameworks date from 2009 to 2021. The total course load of those related to public health ranges from 7.5% to 20.5% of the total program among those analyzed. Most courses were elective, exclusively theoretical, and were offered in the first half of the program. Conclusion The initial public health training for speech-language-hearing therapists in public higher education institutions in the Northeast still seems to be based on traditional practices. These create a distance between students, public health, and practices that meet the principles of Health Unic System (in Portuguese - Sistema Único de Saúde) and the population’s real needs, especially in primary healthcare

RESUMO Objetivo Descrever as características da formação inicial em saúde coletiva de fonoaudiólogos do Nordeste do Brasil. Método A pesquisa foi realizada com base nas matrizes curriculares de Instituições de Ensino Superior (IES) públicas do Nordeste a partir das quais foram analisados dados gerais dos cursos de Fonoaudiologia de cada Instituição ー estado em que está localizado, carga horária total e última reformulação de matriz curricular; e dados que diziam respeito especificamente às disciplinas relacionadas à Saúde Coletiva ー carga horária de cada disciplina, semestre de oferta, conteúdo da ementa, caráter teórico, prático, teórico-prático ou estágio, se obrigatória ou optativa. Resultados Os dados revelam que existem oito IES públicas do nordeste que oferecem o curso de Fonoaudiologia, sendo que os Projetos Pedagógicos de Cursos datam de 2009 a 2021. A Carga Horária (CH) total das disciplinas vinculadas à área de Saúde Coletiva varia de 7,5% a 20,5% da CH total dos cursos analisados. A maioria destas disciplinas é eletiva, tem caráter teórico e é ofertada na primeira metade da formação. Conclusão A formação inicial em saúde coletiva de fonoaudiólogos de IES públicas do nordeste parece ainda estar embasada em práticas tradicionais, que acabam distanciando os discentes do campo da saúde coletiva e de práticas que atendam os princípios do Sistema Único de Saúde, e as reais necessidades da população, especialmente na Atenção Primária à Saúde.

Abstract The objectives of this work were to investigate the occurrence of parasites in feces of cats, compare different coproparasitological techniques for their diagnosis and determine associations with parasitism. The samples were processed using three different coproparasitological techniques: centrifugal flotation in sucrose, centrifugal flotation in ZnSO4 and simple sedimentation. The parasitic association between parasitism and variables such as age, sex and fecal consistency was performed using the chi-square test or the G test with a significance level of 5%. A total of 237 samples were analyzed, of which 93 (39.2%) were positive, being Ancylostoma spp. (17.3%), Giardia intestinalis (12.2%), Platynosomum illiciens (8.0%), Cystoisospora spp. (6.3%), Toxoplasma gondii/ Hammondia hammondi (3.4%), Diphyllobothriidae (2.1%), Toxocara spp. (1.7%), Dipylidium caninum (1.3%) and Mesocestoides spp. (0.8%). In the parasitism association analysis, it was possible to verify a statistical difference in the age category for Cystoisospora spp. (p=0.001) observing a strong relationship between parasitism and young animals, the association with sex proved to be important for P. illiciens (p<0.001) with a higher frequency of parasitized females and fecal consistency revealed to be related to the parasites G. intestinalis (p=0.007) and P. illiciens (p=0.033) showing a higher number of positive animals for these parasites with normal fecal consistency. In conclusion, we observed a higher occurrence of Ancylostoma spp. and G. intestinalis in fecal samples from domestic cats received in routine diagnoses and the presence of other parasites with zoonotic potential, as well as the relationship of these diagnosed parasites with the categories sex, age and fecal consistency.

Resumo Os objetivos deste trabalho foram investigar a ocorrência de parasitos em fezes de gatos, comparar diferentes técnicas coproparasitológicas para o seu diagnóstico e determinar as associações com o parasitismo. As amostras foram processadas usando três diferentes técnicas coproparasitológicas: centrífugo-flutuação em sacarose, centrífugo-flutuação em ZnSO4 e sedimentação simples. A associação parasitária entre o parasitismo e variáveis, como idade, sexo e consistência fecal, foi realizada pelo teste de qui-quadrado ou teste de G com nível de significância de 5%. No total, foram analisadas 237 amostras, das quais 93 (39,2%) foram positivas, sendo diagnosticados os parasitos Ancylostoma spp. (17,3%), Giardia intestinalis (12,2%), Platynosomum illiciens (8,0%), Cystoisospora spp. (6,3%), Toxoplasma gondii/ Hammondia hammondi (3,4%), Diphyllobothriidae (2,1%), Toxocara spp. (1,7%), Dipylidium caninum (1,3%) e Mesocestoides spp. (0,8%). Na análise de associação entre o parasitismo e as outras variáveis, foi possível verificar diferença estatística na categoria idade para Cystoisospora spp. (p=0,001), observando forte relação entre o parasitismo e animais jovens. A associação com o sexo demonstrou ser importante para P. illiciens (p<0,001), com maior frequência de fêmeas parasitadas. E a consistência fecal revelou ter relação com os parasitos G. intestinalis (p=0,007) e P. illiciens (p=0,033), com maior frequência de fezes com consistência normal nos animais positivos para esses parasitos. Em conclusão, foi observada uma maior ocorrência de Ancylostoma spp. e G. intestinalis em amostras fecais de gatos domésticos, recebidas em diagnósticos de rotina e a presença de outros parasitos com potencial zoonótico, como também, a relação desses parasitos diagnosticados com as categorias sexo, idade e consistência fecal.

Resumo Objetivo: descrever características epidemiológicas e clínicas da monkeypox (MPX) no Brasil desde a identificação do primeiro caso, em 7 de junho de 2022, até a semana epidemiológica (SE) 39, encerrada em 1º de outubro de 2022. Métodos: estudo descritivo dos casos notificados ao Ministério da Saúde; as tendências foram analisadas sobre o número de casos confirmados e prováveis, por SE; os casos foram descritos segundo variáveis demográficas e variáveis clínicas. Resultados: das 33.513 notificações, 23,8% foram confirmadas, 91,8% eram do sexo masculino e 70,6% de homens cis com idade mediana de 32 anos; febre (58,0%), adenomegalia (42,4%), cefaleia (39,9%) e erupções (37,0%) foram os sintomas mais frequentes; 27,5% declararam ser imunossuprimidos, 34,6% viviam com HIV e 10,5% possuíam infecção sexualmente transmissível; três óbitos foram registrados. Conclusão: o perfil de casos de MPX foi semelhante ao de outros países; ações de vigilância devem ser reforçadas para o controle do surto.

Conclusion: the MPX case profile was similar to that of other countries; surveillance actions must be strengthened to control the outbreak.

RESUMO Objetivo: discutir a formação do fonoaudiólogo para atuação educacional, a partir do que referem os estudantes de Fonoaudiologia. Métodos: participaram da pesquisa 29 discentes do 7º período do curso de Fonoaudiologia de duas Instituições de Ensino Superior. Utilizou-se um questionário elaborado especificamente para o estudo composto por questões abertas e fechadas a respeito do perfil dos estudantes e de sua formação para atuação em contexto educacional. Além disso, foram coletadas informações das ementas das disciplinas relacionadas a Fonoaudiologia Educacional nessas duas instituições. Os dados foram analisados de forma quanti-qualitativa. Resultados: os resultados indicaram que a soma das cargas horárias das disciplinas voltadas à educação pode ser considerada baixa e que as ementas de tais disciplinas não contemplam pontos importantes para a formação do fonoaudiólogo com vistas a atuação educacional. Além disto, os participantes referiram que a maioria das atividades práticas acontecem na educação infantil ou no ensino fundamental, com objetivos relacionados a uma visão médico-centrada. Os estudantes apontaram, ainda, a necessidade de melhorias na formação do fonoaudiólogo para atuação educacional. Conclusão: os estudantes referiram que sua formação necessita de ampliação de carga horária, conteúdos e vivências que permitam sua inserção em contexto educacional de forma consciente, crítica e responsável.

ABSTRACT Purpose: to discuss the speech-language-hearing pathologist’s training to work in education, based on the report from speech-language-hearing students. Methods: a total of 29 students in the seventh semester of the Speech-Language-Hearing program at two higher education institutions participated in this study. The questionnaire used was developed specifically for this study. It comprised open- and closed-ended questions on the profile of the students and their training to work in educational settings. Data were also collected on the syllabi of the courses related to Educational Speech-Language-Hearing Pathology at both institutions. The data were quantitatively and qualitatively analyzed. Results: the results indicated that the summed course load of the education-related courses is low, and their syllabi do not cover important aspects for the speech-language-hearing training aimed at the work in education. Also, the students reported that most of the practical activities took place in kindergarten or elementary school, with objectives related to a medical-centered view. The students also pointed out the need for improvements in the speech-language-hearing training to work in education. Conclusion: the students reported that their training should involve a broader course load, as well as contents and experiences to help them to consciously, critically, and responsibly join the educational setting.

Resumo No Brasil, dados da Pesquisa Nacional de Saúde (PNS) estimaram 27,0 milhões de pessoas (18,5%) que referiram Problema Crônico de Coluna (PCC), afetando mais mulheres que homens. Este trabalho tem o objetivo de identificar, entre as mulheres em idade fértil, os fatores associados ao PCC. Trata-se de um estudo transversal realizado com dados da PNS, em que a variável dependente foi a prevalência de PCC, enquanto que os fatores associados incluíram itens sociodemográficos, hábitos de vida, histórico reprodutivo, estado nutricional, diagnóstico de depressão e percepção de saúde. Foram avaliadas 22.621 mulheres com idade entre 18 e 49 anos e, destas, 14,8% referiram ter PCC. Os fatores de risco estudados foram: aumento da faixa etária; viver com cônjuge/companheiro; multiparidade; ser tabagista; sobrepeso ou obesidade, ter Circunferência da Cintura (CC) acima de 80cm e índice Circunferência/Estatura (C/E) acima de 0,5; autopercepção de saúde negativa; e diagnóstico de depressão. O único fator de proteção encontrado foi escolaridade. As associações observadas concluem que idade, viver com cônjuge/companheiro, tabagismo, multiparidade, sobrepeso e obesidade, risco aumentado para doenças cardiovasculares, diagnóstico de depressão e autopercepção de saúde negativa estão associados ao desenvolvimento de PCC em mulheres de idade fértil.

Abstract Chronic Back Problem (CBP) is a public health concern. In Brazil, data from the National Health Survey (PNS) estimated 27.0 million people (18.5%) who reported CBP, affecting more women than men. This study aims to identify the factors associated with CBP among women of childbearing age. It is a cross-sectional study carried out with data from the PNS, where the dependent variable was the prevalence of CBP, and associated factors included socio-demographic items, life habits, reproductive history, nutritional status, diagnosis of depression and health perception. A total of 22,621 women aged 18 to 49 years were interviewed. Of these, 14.8% reported having CBP. The risk factors studied were: increased age; living with spouse; multiparity; smoking; overweight or obese, having Waist Circumference (WC) above 80cm and Circumference/Height (C/E) index above 0.5; negative self-perception of health; and depression. The only protective factor associated with CBP risk reduction was education level. We conclude that age, living with a spouse/partner, smoking, multiparity, being overweight or obese, increased risk for cardiovascular diseases, depression and negative self-perceived health are associated with the development of CBP in women of childbearing age.

Resumo O presente trabalho trata de uma nova forma de disponibilizar o camarão, visando sua aplicação na indústria alimentícia ou na culinária, em que se deseje agregar o sabor de camarão, como molhos, temperos, patês, sopas desidratadas, salgadinhos, entre outros. Este trabalho teve como objetivo avaliar os efeitos do uso da goma arábica como adjuvante de secagem nas características físicas e químicas do pó de camarão obtido pelo processo de secagem por atomização. O camarão fresco foi submetido às etapas: lavagem, pré-aquecimento, eliminação do cefalotórax e trituração do abdômen em liquidificador. À pasta de camarão resultante foi adicionada goma arábica nas concentrações de 2, 4 e 8% e desidratada em spray de aquecimento utilizando as temperaturas de entrada de 120 e 150 º C. O pó obtido foi avaliado quanto às suas características químicas, físicas e físico-químicas. A adição de goma arábica não alterou significativamente as características químicas, físicas e físico-químicas em relação à amostra controle. O aumento da temperatura de 120 para 150ºC, amostras controle, não teve efeito significativo (p ≤ 0.05) sobre a umidade do produto. O uso da temperatura de entrada de 120 º C no spray-dryer foi mais indicado para a secagem do camarão, apresentando um produto final de alto valor proteico.

Abstract The aim of this study was to find a new method to improve shrimp availability in the culinary and food industry, especially for products in which the flavour of shrimp must be preserved, such as sauces, seasonings, dehydrated soups, and snacks. The approach involved the use of arabic gum as a drying adjuvant on powdered shrimp obtained by spray drying. The effects of the arabic gum on the physicochemical characteristics of the powdered shrimp were then evaluated. The fresh shrimp was processed using the following steps: washing, pre-baking, cephalothorax elimination, and grinding of the abdomen in a blender. Arabic gum was added to the shrimp paste at concentrations of 2%, 4%, and 8% and dehydrated in a spray dryer with input temperatures of 120 ºC and 150 ºC. The chemical, physical, and physicochemical characteristics of to cite in the article page. the control treatment, the addition of arabic gum did not cause any significant alterations to the chemical, physical, and physicochemical characteristics. The temperature increase from 120 ºC to 150 ºC in the control samples had no significant effect (p ≤ 0.05) on the moisture of the product. The input temperature of 120 ºC was found to be the most efficient for drying the shrimp, given that the final product had a high protein content.

Abstract Candida infection is an important cause of morbidity and mortality in immunocompromised patients. The increase in its incidence has been associated with resistance to antimicrobial therapy and biofilm formation. The aim of this study was to evaluate the efficacy of tea tree oil (TTO) and its main component – terpinen-4-ol – against resistant Candida albicans strains (genotypes A and B) identified by molecular typing and against C. albicans ATCC 90028 and SC 5314 reference strains in planktonic and biofilm cultures. The minimum inhibitory concentration, minimum fungicidal concentration, and rate of biofilm development were used to evaluate antifungal activity. Results were obtained from analysis of the biofilm using the cell proliferation assay 2,3-Bis-(2-methoxy-4-nitro-5-sulfophenyl)-2H-tetrazolium-5-carboxanilide (XTT) and confocal laser scanning microscopy (CLSM). Terpinen-4-ol and TTO inhibited C. albicans growth. CLSM confirmed that 17.92 mg/mL of TTO and 8.86 mg/mL of terpinen-4-ol applied for 60 s (rinse simulation) interfered with biofilm formation. Hence, this in vitro study revealed that natural substances such as TTO and terpinen-4-ol present promising results for the treatment of oral candidiasis.

RESUMO Objetivo: analisar e caracterizar as publicações fonoaudiológicas que têm como campo instituições de ensino brasileiras. Métodos: houve o acesso nas páginas de todas as revistas ativas e inativas da Fonoaudiologia nacional para análise dos títulos e resumos de todos os artigos que remetiam à pesquisa em instituições de ensino. Foram selecionados artigos publicados nos periódicos analisados, que tratam de questões fonoaudiológicas e foram desenvolvidos em instituições de ensino. Foi realizada a categorização e análise dos artigos encontrados, na categoria periódico publicado, ano de publicação, área do conhecimento da Fonoaudiologia da qual se aproximavam, cenário da pesquisa/tipo de instituição educacional, público alvo e procedimentos realizados nas instituições. Em seguida, realizou-se análise estatística descritiva. Resultados: a maior quantidade de pesquisas realizadas em instituições de ensino brasileiras foi publicada na revista CEFAC, e no ano de 2015. Tais pesquisas estavam relacionadas, principalmente, à área da linguagem, sendo a maioria realizada com estudantes do ensino fundamental e com o objetivo de coletar dados a respeito da avaliação e/ou diagnóstico desses estudantes. Conclusão: as pesquisas fonoaudiológicas nacionais realizadas em instituições de ensino tem privilegiado práticas nas áreas de Linguagem e Voz, no Ensino Fundamental, e com estudantes e professores.

ABSTRACT Purpose: to analyze and characterize the speech-language-hearing publications that have Brazilian educational institutions as their field. Methods: all the national active and inactive speech-language-hearing journals were accessed to analyze the titles and abstracts of all articles that referred to research in educational institutions. Articles addressing speech-language-hearing issues, developed in educational institutions, and published in the journals analyzed were selected. The articles found were categorized and analyzed. The categories considered the journal of publication, year of publication, the speech-language-hearing field of knowledge they approached, research context/type of educational institution, target audience, and procedures conducted in the educational institutions. Then, a descriptive statistical analysis was carried out. Results: the largest amount of research made in Brazilian educational institutions was published in CEFAC, in 2015. Such studies were mainly related to the field of language, most of them conducted with elementary school students, to collect data on their assessment and/or diagnosis. Conclusion: national speech-language-hearing research conducted in educational institutions has privileged practices in the fields of language and voice, in elementary school, with students and teachers.

RESUMO O objetivo desse estudo foi avaliar a aceitabilidade de snacks de milho, contendo diferentes concentrações de camarão em pó. Foram elaboradas cinco formulações de snacks sendo: controle (sem camarão em pó), F1, F2, F3 e F4, adicionadas de camarão em pó a 2%, 4%, 8% e 16%, respectivamente. As matérias-primas foram submetidas ao processo de extrusão termoplástica em uma extrusora de rosca simples e matriz radial de 3 mm. Os snacks obtidos foram avaliados quanto a sua composição centesimal, quantificação e qualificação de minerais e submetidos à análise sensorial. Os parâmetros sensoriais avaliados foram: sabor, aroma, cor, textura e aceitação global, sabor ideal de camarão e atitude de compra realizada com um painel de 107 julgadores não treinados da Universidade Estadual de Maringá. De acordo com os resultados obtidos, a adição do camarão em pó proporcionou incremento maior no valor proteico e mineral dos snacks, com destaque para o teor de fósforo. A partir da aceitabilidade dos snacks, observou-se que, dentre os atributos sensoriais analisados, assim como a intenção de compra do produto, a elaboração de extrusados adicionados de camarão em pó é viável, para obtenção de produtos sensorialmente aceitos. A aplicação de 9,65% de camarão em pó à formulação confere o sabor ideal de camarão ao produto, de acordo com os resultados das análises sensoriais realizadas.

ABSTRACT The aim of this study was to evaluate the acceptability of corn snacks containing different concentrations of powdered shrimp. Five snack formulations were prepared: the control (with no powdered shrimp), F1, F2, F3 and F4, with the addition of 2%, 4%, 8% and 16% powdered shrimp respectively. The raw materials were subjected to a process of thermoplastic extrusion in a single-screw extruder with 3 mm radial die. The snacks produced were evaluated for their centesimal composition, the mineral content was quantified and qualified, and the snacks then submitted to sensory analysis. The sensory parameters under evaluation were: flavour, aroma, colour, texture, overall acceptance, ideal shrimp taste and purchase intention, carried out by a panel of 107 untrained judges from the State University of Maringá. According to the results, the addition of powdered shrimp resulted in a greater increase in the protein and mineral value, especially the phosphorus content. From the acceptability of the snacks, it was found that for the sensory attributes under analysis, as well as purchase intention, the preparation of extrudates with added powdered shrimp to obtain products of sensory acceptance is viable. According to the results of the sensory analysis, the addition of 9.65% powdered shrimp to the formulation gives the product an ideal shrimp taste.
