Resumen Existe una preocupación por la caracterización química de los alimentos con potencial económico y nutricional, en especial los de bajo valor calórico, en su constitución de proteínas, lípidos, carbohidratos, minerales y vitaminas, para una alimentación sana. Entre esos alimentos, las flores comestibles se destacan por su belleza y condimentación en los platos; además, poseen propiedades nutricionales y medicinales. En este contexto, el objetivo del trabajo fue caracterizar químicamente los pétalos de las especies de rosa (Rosa x grandiflora Hort.), girasol (Helianthus annuus L.) y caléndula (Calendula officinalis L.), para el uso en la alimentación humana. Las plantas fueron cultivadas en ambiente protegido y cielo abierto, y después de la cosecha se realizaron los análisis físico-químicos (carbohidratos, cenizas, extracto etéreo, humedad, fibra y proteína). En el presente estudio se observó un alto contenido de agua (> 80 %); el girasol tuvo mayor contenido de cenizas (1,2 %); la caléndula tuvo mayor contenido de extracto etéreo (1,2 %), y la rosa tuvo mayor contenido de fibra (3,2 %). Los pétalos de las flores de caléndula, girasol y rosa presentaron una composición química con nutrientes esenciales, pudiendo ser incluidos en los menus diarios por contener nutrientes esenciales para una dieta sana.

Abstract There is a concern for the chemical characterization of foods with economic and nutritional potential, especially those of low caloric value, in their constitution of proteins, lipids, carbohydrates, minerals, and vitamins, important for a healthy diet. Among these foods, edible flowers are distinguished for their beauty and for flavoring dishes; furthermore, they also have nutritional and medicinal properties. In this context, the aim of the study was to characterize chemically the petals of three species, rose (Rosa x grandiflora Hort.), sunflower (Helianthus annuus L.), and calendula (Calendula officinalis L.) for use in human nutrition. The plants were cultivated in a protected environment and in an open field, and after harvest, physicochemical analyses were carried out (ash, carbohydrates, ethereal extract, fiber, moisture, and protein). In the current study, high water content was observed (higher than 80 %); sunflower showed a higher ash content (1.2 %), calendula presented a higher ethereal extract content (1.2 %) and rose had a higher fiber content (3.2 %). Rose, sunflower and calendula flower petals had a chemical composition with essential nutrients, being able to be included in the daily human diet because they contain essential nutrients for a healthy diet.

RESUMO: O uso de óleos vegetais como substitutos da gordura animal em embutidos fermentados tem surgido como uma alternativa de produzir produtos cárneos com um melhor perfil lipídico. Assim, o objetivo deste trabalho foi avaliar a composição química, propriedades microbiológicas e o perfil de ácidos graxos de salame tipo Italiano elaborado com a substituição parcial da gordura suína (15 e 30%) por emulsão com óleo de canola. A incorporação do óleo de canola reduziu o teor de gordura e aumentou o teor de umidade dos embutidos fermentados. Em relação às características microbiológicas, a adição de óleo de canola emulsionado não alterou o crescimento das bactérias láticas durante o processamento. Ainda, não foram detectadas contagens de coliformes fecais, staphylococci coagulase positiva e Salmonella. Em relação ao perfil de ácidos graxos, foi possível observar a redução nos teores totais de ácidos graxos saturados (SAFAs) e uma elevação nos valores de ácidos graxos monoinsaturados (MUFAs) e poliinsaturados (PUFAs) nos tratamentos adicionados de óleo de canola. Dessa forma, a substituição da gordura suína por óleo de canola emulsionado em salame tipo Italiano torna-se uma alternativa interessante na produção de produtos cárneos com melhores características nutricionais.

ABSTRACT: Vegetable oils have been used to substitute pork backfat to improve the fatty acid profile of fermented sausages. The aim of this study was to assess the chemical composition, microbiological properties, and fatty acid profile of Italian-type salami with pork backfat substituted (15% and 30%) by emulsified canola oil. Fat contents decreased while moisture contents increased in Italian-type salami with emulsified canola oil. The growth of lactic acid bacteria in salami was not affected by canola oil and absence of fecal coliforms, coagulase-positive staphylococci, and Salmonella were reported during processing of fermented sausages. Lower levels of saturated fatty acids (SAFAs), higher levels of monounsaturated fatty acids (MUFAs) and polyunsaturated fatty acids (PUFAs) were observed in salami with emulsified canola oil. Together, our results indicated that substituting pork backfat with emulsified canola oil improved the nutritional values of Italian-type salami.

Os consumidores estão se tornando mais conscientes das implicações toxicológicas de aditivos artificiais em alimentos. Nesse sentido, a utilização de compostos antioxidantes naturais, além de reduzir efeitos deletérios da oxidação lipídica, são atualmente mais valorizados no mercado. Dessa forma, objetivou-se determinar o efeito da adição de cogumelo do sol (Agaricus blazei Murril) em pó sobre a estabilidade oxidativa e microbiológica de linguiça frescal de carne suína, ao longo da vida útil. Esse pó foi utilizado nas concentrações de 0%, 1,0%, 2,0% e 4,0%, na fabricação de linguiça. Foram realizadas análises de umidade, proteínas, cinzas, gordura e análises microbiológicas no dia 0. Analisaram-se as linguiças no dia 0 e a cada sete dias em relação ao pH, cor, índice de TBARS e análises microbiológicas. Os resultados obtidos na composição centesimal e nas análises microbiológicas para Estafilococos coagulase positiva, Coliformes a 35 ºC e a 45 ºC, Samonella sp e Clostrídios sulfito redutores estavam de acordo com o exigido pela legislação brasileira. Em relação à cor do produto, ocorreu diminuição na tonalidade vermelha. No período final de estocagem, ao 35º dia, o valor de TBARS para linguiça com 4,0% de pó foi de 0,509±0,12 mg MDA/kg de amostra e para o controle foi de 1,131±0,12 mg MDA/kg de amostra. O cogumelo do sol, em pó, não possui efeito sobre a estabilidade microbiológica. Conclui-se que o cogumelo do sol mostrou-se efetivo sobre a estabilidade oxidativa de linguiça de carne suína quando adicionado em pó nas concentrações de 1,0%, 2,0% e 4,0%.

Consumers are becoming more aware of the toxicological implications of artificial additives in foods. Natural antioxidants, in addition to reducing the deleterious effects of lipid oxidation, are currently extremely highly valued. This study aimed to invetigate the effect of addition of sun mushroom (Agaricus blazei Murrill) powder on the oxidative and microbiological stability of pork sausage during the shelf life. This powder was used at concentrations of 0.0%, 1.0%, 2.0% and 4.0% in the sausages. Analyses of moisture, protein, ash, fat and microbiological analyses were performed on day 0. The sausages were analyzed on day 0 and every seven days in terms of pH, color, TBARS values and microbiological analyses. The results of the proximal composition and microbiological analysis for coagulase positive Staphylococcus, coliforms at 35 ºC and 45 ºC, Salmonella sp and sulfite-reducing Clostridium were consistent with those required by Brazilian legislation. The color of the products was of a decreased redness At the end of the storage period, on the 35th day, the TBARS values for the sausage with 4.0% powder was 0.509±0.12 mg MDA/kg sample and for the control was 1.131±0.12 mg MDA/kg sample. The sun mushroom powder had no effect on microbiological stability. It is concluded that sun mushroom was effective in terms of the oxidative stability of pork sausage when added in powdered form at concentrations of 1.0%, 2.0% and 4.0%.

O consumo de probióticos está em constante crescimento, devido aos inúmeros benefícios conferidos à saúde dos consumidores. Neste contexto, a microencapsulação é uma tecnologia que favorece a viabilidade das culturas probióticas em produtos alimentícios, principalmente pelas propriedades de proteção contra as condições ambientais adversas e a liberação controlada. Atualmente, existem diversos procedimentos para a microencapsulação, com a utilização de vários tipos de polímeros de origem natural e sintética. O alginato de sódio é um dos polímeros com maior potencial para aplicação na encapsulação de probióticos, devido à sua versatilidade, biocompatibilidade e isenção de toxicidade. O objetivo desta revisão é apresentar técnicas viáveis de encapsulação de probióticos com alginato, enfatizando a gelificação iônica interna e gelificação iônica externa, com a possibilidade de aplicação, bem como as tecnologias promissoras para o melhoramento destas.

The consumption of probiotics is constantly growing due to the numerous benefits conferred on the health of consumers. In this context, Microencapsulation is a technology that favors the viability of probiotic cultures in food products, mainly by the properties of protection against adverse environmental conditions and controlled release. Currently there are different procedures for microencapsulation using polymers of various types of natural and synthetic origin. The use of sodium alginate polymers is one of the largest potential application in the encapsulation of probiotics because of their versatility, biocompatibility and toxicity exemption. The aim of this review is to present viable encapsulation techniques of probiotics with alginate, emphasizing the internal ionic gelation and external ionic gelation, with the possibility of applying, as well as promising for improving these techniques.

O objetivo deste trabalho foi avaliar microcápsulas contendo Bifidobacterium animalis e Lactobacillus acidophilus, produzidas por spray drying. Ensaios de sobrevivência foram conduzidos para avaliar a resistência dos probióticos a condições gastrointestinais simuladas e a sua viabilidade durante 120 dias de armazenamento a 4ºC e 25ºC, além da análise morfológica das microcápsulas. A microencapsulação protegeu os probióticos das condições gastrointestinais simuladas, os quais permaneceram viáveis após 120 dias de armazenamento a 4ºC e 25ºC, sendo mais viáveis a 4ºC. As microcápsulas apresentaram forma esférica, com superfície contínua relativamente lisa e sem fissuras. O estudo indica que microcápsulas de B. animalis e L. acidophilus, produzidas por spray drying, sobrevivem a condições gastrointestinais simuladas e podem ser melhor armazenadas por 120 dias a 4ºC

The aim of this study was to evaluate microcapsules containing Lactobacillus acidophilus and Bifidobacterium animalis by spray drying. Survival assays were conducted to evaluate the resistance of probiotics to simulated gastrointestinal conditions and its availability during 120 days of storage at 4°C and 25°C, besides morphological analysis of the microcapsules. Microencapsulation protected the probiotics from simulated gastrointestinal conditions, which also remained viable after 120 days of storage at 4ºC and 25ºC, but more viable at 4ºC. The microcapsules showed spherical shape with relatively smooth continuous surface without cracks. The study indicates that microcapsules of B. animalis or L. acidophilus by spray drying survive in simulated gastrointestinal conditions and can be better stored for 120 days at 4°C

Mortadella-type sausage manufactured using mechanically deboned chicken meat were reformulated replacing MDCM with increasing amounts of MDCM protein hydrolysates (10%, 20%, and 30%), and their physicochemical, microbiological, and sensorial characteristics were evaluated for 60 days of storage at 4 °C. The higher substitutions resulted in sausages more susceptible to lipid oxidation with higher TBARS values during storage; however, these values were lower than the organoleptic perception threshold. The sausages were darker and less red, with lower lightness (L*) and redness (a*) values than those of the control treatment. They had soft texture, which was evidenced by both the instrumental and sensory analysis. Therefore, the formulation containing 10% of MDCM protein hydrolysates proved to be the most suitable for mortadella-type sausage elaboration.

A microencapsulação é um processo em que substâncias ativas são revestidas por cápsulas extremamente pequenas. É uma tecnologia nova, a qual tem sido empregada na indústria de cosméticos, farmacêutica, agrotóxicos e alimentícia e, nesta, é utilizada em aromas, ácidos, óleos, vitaminas, micro-organismos, entre outros. O êxito nessa tecnologia deve-se à correta escolha do material encapsulante, da forma de liberação do núcleo e do método de encapsulação. Dessa forma, nesta revisão, serão abordados, sucintamente, alguns aspectos relevantes da microencapsulação, como a cápsula, o material encapsulante, as formas de liberação do núcleo, os métodos de encapsulação, assim como sua utilização na tecnologia de alimentos.

Microencapsulation is a process in which active substances are coated by extremely small capsules. It is a new technology that has been used in the cosmetics industry as well as in the pharmaceutical, agrochemical and food industries, being used in flavors, acids, oils, vitamins, microorganisms, among others. The success of this technology is due to the correct choice of the wall material, the core release form and the encapsulation method. Therefore, in this review, some relevant microencapsulation aspects, such as the capsule, wall material, core release forms, encapsulation methods and their use in food technology will be briefly discussed.

The present study's objective was to analyze the procedures aimed at guaranteeing sanitary conditions when acquiring meat. The study was conducted with university restaurants of the Federal Institutions of Higher Education (IFES) located in the five regions of Brazil. Data were collected using a questionnaire and an evaluation list, which was available online to restaurant professionals. The results showed that restaurants chose one or two types of meat, the most frequent of which were beef and chicken. In restaurants managed by the IFES, the acquisition of raw material occurred by bidding. For vendor selection, the restaurants required product registration with the Inspection Service and requested regulation of the supplier by the Health Surveillance. Monitoring was carried out through a technical visit to the supplier and a review of the past records of the supplier. A higher percentage of restaurants in the Southeast region met appropriate sanitary and hygienic criteria for the receipt of meat, followed by the South, Midwest, Northeast and North. We conclude that restaurants meet most of the safety criteria set in the legislation. However, some weaknesses are evident in the physical and functional structure, the system of transportation of raw material and the records of control measures at the place of reception.

The aim of this study was to determine the colorimetric and sensory characteristics of a fermented cured sausage containing ostrich meat (Struthio camelus) and pork meat. Four treatments were performed: one with no ostrich meat (TC) and the others containing 19.08 (T1), 38.34 (T2), and 57.60% (T3) of ostrich meat and pork meat. Colorimetric analyses were measuring L*, a*, b*, C*, and hº. Sensory analysis was conducted assessing color, aroma, flavor, and texture at the end of the sausages' processing. The sausages containing ostrich meat were statistically different from the control in the instrumental colorimetric analysis. In the sensory analysis, no significant differences were observed between the treatments for aroma, flavor, and texture. However, significant differences were found in the color of the sausages due to the high myoglobin content present in the ostrich meat, which resulted in a very dark color in the treatment with the highest percentage of this type of meat.

Devido aos seus efeitos benéficos, os probióticos têm sido incorporados nos mais diversos alimentos, incluindo iogurtes, queijos, sorvetes, leites fermentados e sobremesas congeladas. No entanto, existem ainda diversos problemas com relação à viabilidade e resistência das culturas probióticas nesses alimentos. Neste artigo de revisão, são abordados os aspectos tecnológicos utilizados na microencapsulação de probióticos que permitem aumentar a sua viabilidade durante a fermentação, processamento e utilização nos produtos comerciais. A microencapsulação de bactérias probióticas pode ser utilizada para aumentar a viabilidade durante o processamento, como também para liberá-las de maneira controlada no trato gastrointestinal.

Because of their health benefits, probiotics have been incorporated into a range of dairy products, including yogurts, soft-, semi-hard and hard cheeses, ice cream, milk powders and frozen dairy desserts. However, there are still several problems with respect to the low viability of probiotic bacteria in dairy foods. This review focuses mainly on current knowledge and techniques used in the microencapsulation of probiotic microorganisms to enhance their viability during fermentation, processing and utilization in commercial products. Microencapsulation of probiotic bacteria can be used to enhance the viability during processing, and also for the targeted delivery in gastrointestinal tract.

Os objetivos deste trabalho foram avaliar o perfil de ácidos graxos e o teor de colesterol em mortadelas elaboradas com diferentes óleos vegetais. Nove tratamentos de mortadela foram elaborados com quatro diferentes óleos vegetais (canola, linhaça, oliva e soja), em dois níveis de substituição (50% e 100%). Os ácidos graxos e o teor de colesterol foram separados e identificados por cromatografia gasosa. Houve predominância dos ácidos graxos oleico, linoleico e palmítico. O teor de ácidos graxos saturados foi menor nos produtos que continham óleos vegetais. A relação PUFA/SFA foi menor no tratamento controle, enquanto que o maior valor foi observado no tratamento com 100% de óleo de linhaça. Os teores de colesterol encontrados foram semelhantes entre todos os tratamentos, sendo superior apenas no tratamento contendo 100% de óleo de soja. Logo, exceto o tratamento com 100% de óleo de soja, todos os outros tratamentos com óleos vegetais apresentaram uma melhor qualidade nutricional quando comparados com o controle.

The aim of this study was to evaluate the fatty acid profile and the cholesterol content of mortadella prepared with different vegetable oils. Nine treatments were made with four different vegetable oils (canola, linseed, olive and soy) using two substitution levels (50% and 100%). The fatty acids and the cholesterol content were separated and identified by gas chromatography. There was a prevalence of the oleic, linoleic and palmitic fatty acids. The saturated fatty acids were lower in the products with vegetable oils. The PUFA/SFA relation was lower in the control treatment while the higher value was observed in the 100% linseed oil treatment. The cholesterol levels found were similar between all the treatments, but a reduction of these levels were observed in the treatments, being superior only in treatment containing 100% of soybean oil. Thus, except the treatment with 100% of soybean oil, all the other treatments with vegetable oils showed a better nutritional quality in relation to the control treatment.

Atualmente, as atividades antioxidante e antimicrobiana de vários compostos fenólicos e de extratos de plantas têm sido avaliadas em muitos experimentos. O objetivo deste estudo foi elaborar o extrato hidroetanólico bruto de caqui (Diospyros kaki L.) cultivar Rama Forte e fracioná-lo empregando solventes com diferentes polaridades, para posteriormente determinar os compostos fenólicos totais e verificar as atividades antioxidante e antimicrobiana in vitro tanto do extrato hidroetanólico bruto de caqui como das frações hexânica, clorofórmica, de acetato de etila e da fração residual, obtidas a partir do mesmo. Os compostos fenólicos totais foram determinados pelo método de Folin-Ciocalteu; a atividade antioxidante, por meio do método da captura do radical livre 2,2-difenil-1-picrilidrazila (DPPH), e a atividade antimicrobiana pelo método de difusão em disco. O teor de compostos fenólicos do extrato hidroetanólico bruto de caqui, da fração residual, da fração acetato de etila, da fração hexânica e da fração clorofórmica foram de 1.277,94, 1.231,23, 37,24, 17,60 e 11,48 mg GAE.100 mL-1, respectivamente. O extrato hidroetanólico bruto de caqui e a fração residual apresentaram maior teor de compostos fenólicos e maior atividade antirradical frente ao DPPH do que as demais frações testadas, com valores de IC50 de 0,2467 e 0,2567 mg.mL-1, respectivamente. O extrato de caqui e as frações não apresentaram atividade antimicrobiana in vitro sobre os microrganismos testados. Os resultados demonstraram que o extrato hidroetanólico bruto de caqui cv. Rama Forte e a fração residual contêm quantidade suficiente de compostos fenólicos capaz de contribuir positivamente na atividade antioxidante.

The antioxidant and antimicrobial properties of various phenolic compounds and plant extracts have been evaluated in many experiments. The aim of this study was to obtain a crude hydroethanolic extract of persimmon (Diospyros kaki L.) cv. Rama Forte and fraction it using solvents with different polarities. Subsequently the total phenolic compounds and in vitro antioxidant and antimicrobial activities were determined in the crude hydroethanolic extract of persimmon, as well as in the hexane, chloroform, ethyl acetate and residual fractions obtained from it. The total phenolic compounds were determined by the Folin-Ciocalteau method, the antioxidant activity by the free radical scavenging 2,2-diphenyl-1-picrylhydrazyl (DPPH) method, and the antimicrobial activity by the disc diffusion method. The phenolic compound contents of the crude hydroethanolic extract of persimmon cv. Rama Forte, the residual aqueous fraction, ethyl acetate fraction, hexane fraction and chloroform fraction were, respectively, 1277.94, 1231.23, 37.24, 17.60 and 11.48 mg GAE.100 mL-1. The crude hydroethanolic extract of persimmon cv. Rama Forte and the residual fraction showed the highest contents of phenolic compounds and highest anti-radical activities against DPPH, as compared to the other fractions tested, with IC50 values of 0.2467 and 0.2567 mg.mL-1, respectively. The persimmon extract and fractions showed no in vitro antimicrobial activity against the microorganisms tested. The results showed that the crude hydroethanolic extract of persimmon cv. Rama Forte and the residual fraction contained sufficient amounts of phenolic compounds to contribute positively to the antioxidant activity.

A discutida questão da substituição do uso de antibacterianos em rações (promotores de crescimento) requer urgentes alternativas. Face às necessidades de inibidores microbianos nesses alimentos, os óleos essenciais (OES) se constituem em alternativa, sob avaliação. Neste estudo, avaliou-se a atividade antimicrobiana dos OES de Origanum vulgare (orégano), Thymus vulgaris (tomilho), Cinnamomum zeylanicum (canela), Lippia graveolens (orégano mexicano), Zingiber officinale (gengibre), Salvia officinalis (sálvia), Rosmarinus officinalis (alecrim) e Ocimum basilicum (manjericão) frente a amostras de Escherichia coli isoladas de fezes de aves (n=43) e de bovinos (n=36). A concentração inibitória mínima (CIM) e a concentração bactericida mínima (CBM) foram determinadas para cada isolado através da técnica de microdiluição em caldo, a partir da máxima concentração de 6400µg mL-1 de cada OE testado. Observou-se atividade antimicrobiana para os OES de orégano, orégano mexicano, tomilho, canela. Para todas as amostras testadas, independente de sua origem, os OES mais e menos efetivos quanto à atividade antimicrobiana foram o orégano e a canela, respectivamente. Esses resultados confirmaram o potencial antibacteriano de alguns OES, os quais merecem novas investigações abordando sua adição na alimentação de aves e bovinos.

The discussed issue about replacing the use of antibiotics in animal feed (growth promoters) requires emerging alternatives. To meet the needs of microbial inhibitors in these foods, the essentials oils (EOS) constitute potential alternatives under evaluation. In this study it was evaluated the antimicrobial activities of EOs from Oreganum vulgare (oregano), Thymus vulgaris (thyme), Lippia graveolens (Mexican oregano), Cinnamomum zeylanicum (cinnamon), Zingiber officinale (ginger), Salvia officinalis (sage), Rosmarinus officinalis (rosemary) and Ocimum basilicum (basil) against Escherichia coli strains isolated from poultry (n=43) and cattle faeces (n=36). The minimum inhibitory concentration (MIC) and minimum bactericidal concentration (MBC) were determined for each isolate by using the broth microdilution technique, from the maximum concentration of 6400µg mL-1 of each OE tested. Antimicrobial activity was observed on the essential oils of oregano, mexican oregano, thymus and cinnamon. For all strains tested, regardless of their origin, the OES more and less effective as antimicrobial activity were oregano and cinnamon, respectively. These results confirm the antimicrobial potential of some EOs, which deserve further research, addressing the addition of essential oils in poultry and cattle feeding.

O efeito de dois níveis (0,5% e 1%) de extrato hidroalcoólico de marcela (Achyrocline satureioides) na segurança (valores de TBARS) e qualidade (pH, atividade de água, cor, perda de peso e atributos sensoriais) de salames foi avaliado. A adição de extrato de marcela diminuiu significativamente os valores de TBARS durante o armazenamento dos salames, comparado ao controle, elaborado sem extrato de marcela. O tratamento com 1% de extrato de marcela mostrou uma maior estabilidade lipídica que o lote com 0,5%, porém apresentou uma diminuição (p < 0,05) na aceitação sensorial. Os dois níveis de extrato de marcela não influenciaram significativamente os parâmetros de pH, atividade de água, cor e perda de peso. Este estudo indicou que o extrato hidroalcoólico de marcela foi efetivo na diminuição da oxidação lipídica e que a concentração de 0,5% não alterou as características sensoriais, podendo, portanto, ser utilizada em salames para proporcionar produtos mais seguros aos consumidores.

The effect of two levels (0.5 and 1%) of hydroalcoholic extract of Achyrocline satureioides on the safety (TBARS values) and quality (pH, water activity, colour, weight loss, and sensorial attributes) of salami was evaluated. The addition of Achyrocline satureioides extract decreased TBARS values significantly during the storage of salami when compared to the control, which was elaborated without Achyrocline satureioides extract. The treatment with 1% of "Marcela" extract showed larger lipid stability than that of the lot with 0.5%, However, it presented a decrease (p < 0.05) in the sensorial acceptance. The two levels of "Marcela" extract did not influence pH, water activity, colour, and weight loss significantly. This study indicates that the hydroalcoholic extract of "Marcela" was effective in decreasing the lipid oxidation and at 0.5% it did not alter the sensorial features; therefore, it may be used in salami to provide safer products for the consumers.

A pesquisa teve como objetivo acrescentar culturas starters nativas em salame tipo Italiano e avaliar o desempenho frente a culturas comerciais quanto às características microbiológicas, físico-químicas e sensoriais. As culturas utilizadas foram Staphylococcus xylosus, isolado de salames coloniais, e Lactococcus lactis ssp. lactis, isolado de um produto lácteo e fermentado em meio de cultura de plasma suíno. Elaboraram-se os seguintes tratamentos: T1 - adição de starters comerciais (Staphylococcus xylosus e Lactococcus lactis ssp. lactis); T2 - mistura de Staphylococcus xylosus isolado mais Lactococcus lactis ssp. lactis comercial; T3 - mistura de Lactococcus lactis ssp. lactis isolado mais Staphylococcus xylosus comercial; e T4 - Staphylococcus xylosus e Lactococcus lactis ssp. lactis, ambos isolados. Os tratamentos apresentaram uma queda de pH significativa e também uma redução na Aw, garantindo uma segurança microbiológica aos produtos. Em relação à oxidação lipídica, os tratamentos que continham Staphylococcus xylosus isolados de salames artesanais apresentaram valores menores que os outros tratamentos. Os salames elaborados com Staphylococcus xylosus e Lactococcus lactis ssp. lactis, ambos isolados, apresentaram melhores resultados sensoriais quando comparados com salames elaborados com culturas starters comerciais. Portanto, a adição de culturas starters nativas pode ser utilizada na elaboração de salames, proporcionando produtos seguros e com flavor diferenciado.

The objective of this paper was to add native starter cultures in fermented Italian sausages and evaluate the performance compared to commercial cultures in terms of microbiological and physicochemical parameters and sensorial characteristics. The cultures used were Staphylococcus xylosus, isolated from colonial sausages, and Lactococcus lactis ssp. lactis isolated from a dairy product and fermented in pork plasma medium. The following treatments were performed: T1 - addition of commercial starters (Staphylococcus xylosus and Lactococcus lactis ssp. lactis); T2 - mixture of isolated Staphylococcus xylosus plus commercial Lactococcus lactis ssp. lactis; T3 - mixture of isolated Lactococcus lactis ssp lactis plus commercial Staphylococcus xylosus; and T4 - Staphylococcus xylosus and Lactococcus lactis ssp lactis both isolated. The treatments showed a significant decrease of pH and reduction in the Aw ensuring microbiological safety to the products. With regard to lipid oxidation, the treatments that contained isolated strains of Staphylococcus xylosus presented significantly lower values than the other treatments. The sausages elaborated with Staphylococcus xylosus and Lactococcus lactis ssp lactis, both strains isolated, presented better sensorial results than the sausages elaborated with commercial starter cultures. Therefore, the addition of native starter cultures can be used in the elaboration of fermented Italian sausages providing safe products with differentiated flavor.
