Resumo Estudos com egressas(os) dos cursos universitários costumam oferecer informações importantes para a revisão e melhoria dos currículos. A fim de identificar o perfil e as opiniões acerca de aspectos referentes à experiência formativa e à sua inserção na área educacional, a Comissão Coordenadora do Curso de Pedagogia da Faculdade de Educação da Universidade de São Paulo (FEUSP) realizou esta pesquisa com concluintes entre 2002 e 2012. Um questionário online respondido por 255 sujeitos permitiu identificar perfil, duração da formação e atividade profissional durante e após a conclusão do curso. Em uma segunda fase, obtiveram-se respostas sobre a atuação de 190 concluintes que atuam nos sistemas de ensino. Destas(es), dezenove foram sorteadas(os) e entrevistadas(os) acerca de suas impressões sobre a contribuição das experiências formativas para a docência e/ou gestão. As(Os) participantes destacaram aspectos positivos na formação obtida, assim como apontaram a necessidade de alterações em torno dos seguintes pontos: aprofundamento conceitual e estratégias didáticas adotadas pelas(os) docentes; relação entre teoria e prática; organização das disciplinas eletivas; estrutura dos estágios; e conteúdos abordados em algumas disciplinas. Importa dizer que as mudanças implementadas no curso a partir de 2012 têm respondido a algumas dessas demandas. O estudo evidencia que a voz das(os) egressas(os) precisa ser ouvida, principalmente após a entrada no ambiente de trabalho e já com certa consciência dos desafios da profissão. A pesquisa proporcionou uma visão geral do curso de pedagogia, levando a comunidade a entender melhor sua dinâmica e a refletir acerca das condições estruturais e pedagógicas oferecidas.

Abstract Studies with University graduates usually offer invaluable information for reviewing and improving curricula. Seeking to identify the students’ profile and opinions about the formative experience and their entry into the educational field, USP’s School of Education’s Pedagogy Course Coordinating Committee carried out this research with students who graduated between 2002 and 2012. An online questionnaire answered by 255 former students allowed to identify the profile, course duration, and professional activity during and after graduation. A second questionnaire obtained 190 responses from graduates working in state and municipal schools. Of these, 19 were drawn and interviewed about the perceived contributions of the formative experience to teaching and/or management. The participants highlighted both positive aspects and need for changes on the following aspects: conceptual deepening and didactic strategies adopted by professors; theory-practice relationship; organization of elective courses; internship structure; and content covered in some courses. Importantly, the changes implemented following 2012 have met some of these demands. Graduates, especially those conscious of the professional challenges, should be heard. The study provided a broad overview of the Pedagogy course, allowing us to better understand its dynamics and to reflect on the pedagogical and framework conditions offered.

Resumo Investigamos conteúdos estigmatizantes nos discursos de médicos(as) e enfermeiros(as) sobre a saúde da população LGBTT em 32 unidades básicas de saúde do Centro-Oeste e Nordeste brasileiros. Partindo das noções de scientia sexualis em Foucault e de estigma em Goffman, analisamos a influência da patologização da sexualidade na racionalidade desses profissionais, enquanto geradores de discursos e posturas estigmatizadores que interferem na qualidade da atenção à saúde desta população. O resultado permitiu verificar que para os(as) entrevistados(as) a identidade dos membros da população LGBTT está vinculada ao conceito de grupo de risco, compreendida como uma condição causadora de doença e transtornos mentais, além de estar associada a comportamentos moralmente condenáveis. O estudo aponta para a necessidade de processos inovadores na formação profissional que busquem problematizar a racionalidade estruturante do processo estigmatizador, com vistas a qualificar a atenção.

Abstract We investigated stigmatizing content in the discourse of doctors and nurses about the health of the LGBTT population in 32 basic health units in the Midwest and Northeast of Brazil. Based on the notions of scientia sexualis in Foucault and stigma in Goffman, we analyze the influence of the pathologization of sexuality on the rationality of these professionals, as generators of stigmatizing discourses and postures that interfere in the quality of healthcare in this population. The result allowed us to verify that, for the interviewees, the identity of the members of the LGBTT population is linked to the concept of a risk group, understood as a condition that causes illness and mental disorders, in addition to being associated with morally reprehensible behavior. The study points to the need for innovative processes in professional training that seek to problematize the structuring rationality of the stigmatizing process, with a view to qualifying care.

Abstract Staphylococcus aureus is among the major pathogens involved in food poisoning, and meat contaminated with S. aureus coagulase positive is considered a public health risk because the bacterium is resistant to several conventional antimicrobials. Mycocins are substances produced by yeasts that secrete glycoproteins, which can also be called toxin killers, they have an inhibitory action on other microorganisms. The Wickerhamomyces anomalus, is one of the microorganisms capable of producing these mycocins, resulting in the action of disturbances on the cell wall of the pathogen causing deleterious effects. This work aims to evaluate the antimicrobial activity of the mycocins produced by W. anomalus WA45 against the 29 strains of S. aureus coagulase positive isolated from bovine, porcine and chicken meat and 1 standard strain. The antimicrobial action of the mycocins present on the culture supernatant of W. anomalus WA45 was tested by microdilution and the results were satisfactory, since 100% inhibition of strains of S. aureus coagulase positive. We concluded that the mycocins present in the supernatant of W. anomalus WA45 showed antimicrobial action, being candidates for the development of new products for the biocontrol and bioconservation of meat.

RESUMO A Medida Provisória nº 870/2019, que alterou a Lei Orgânica de Segurança Alimentar e Nutricional e extinguiu o Conselho Nacional de Segurança Alimentar e Nutricional, tem trazido graves consequências à população brasileira, em especial, àqueles em situação de maior vulnerabilidade. Esta nota científica traz reflexões sobre a trajetória do Conselho Nacional de Segurança Alimentar e Nutricional, as repercussões de sua extinção no último ano e o projeto de desmonte das políticas de proteção social no Brasil, com graves desdobramentos no momento em que o país atravessa uma crise de saúde pública em decorrência da pandemia da Covid-19. A ausência do Conselho Nacional de Segurança Alimentar e Nutricional e a fragilização do conjunto de políticas de Segurança Alimentar e Nutricional tem mobilizado a sociedade civil para a defesa do direito humano à alimentação, da soberania alimentar e da própria democracia. A resistência dos diferentes movimentos sociais para manutenção dos espaços de participação da sociedade civil nas políticas públicas de Segurança Alimentar e Nutricional ainda será longa e árdua, demandando a continuidade da vocalização e fortalecimento de redes de parceria nos diferentes movimentos da sociedade civil organizada. Por fim, destaca-se que a recomposição do Sistema Nacional de Segurança Alimentar e Nutricional, com todas as suas instâncias, e das demais políticas sociais, constitui uma necessidade premente para que as consequências negativas da pandemia sejam evitadas ou atenuadas e o Estado cumpra com as suas obrigações para a garantia dos direitos da população brasileira.

ABSTRACT The Provisional Measure 870/2019, which amended the Organic Law on Food and Nutrition Security and extinguished the Conselho Nacional de Segurança Alimentar e Nutricional (National Council for Food and Nutrition Security), has brought serious consequences to the Brazilian population, especially for the most vulnerable. This scientific note brings reflections on the trajectory of the Conselho Nacional de Segurança Alimentar e Nutricional, the repercussions of its extinction in the last year, and the project to dismantle social protection policies in Brazil, with serious consequences at a time when the country is going through a crisis in public health due to the Covid-19 pandemic. The absence of the Conselho Nacional de Segurança Alimentar e Nutricional and the weakening of the set of policies for Food and Nutritional Security has mobilized the civil society to defend the human rights to food, food sovereignty, and to democracy itself. The resistance of the different social movements in order to maintain the spaces of civil participation related to Food and Nutrition Security public policies are still going to be long and arduous, demanding the continued vocalization and strengthening of partnership networks within the different movements of the organized civil society. Finally, we highlight the urgent need for restoration of the National System of Food and Nutritional Security (Sistema Nacional de Segurança Alimentar e Nutricional) with all its instances, and of other social policies, so that the negative consequences of the pandemic are avoided or mitigated and the State complies with its obligations to guarantee the rights of the Brazilian population.

RESUMO O carcinoma hepatocelular (CHC) é uma das principais causas de mortalidade relacionada a câncer no Brasil e no mundo. A Sociedade Brasileira de Hepatologia (SBH) publicou em 2015 suas primeiras recomendações sobre a abordagem do CHC. Desde então, novas evidências sobre o diagnóstico e tratamento do CHC foram relatadas na literatura médica, levando a diretoria da SBH a promover uma reunião monotemática sobre câncer primário de fígado em agosto de 2018 com o intuito de atualizar as recomendações sobre o manejo da neoplasia. Um grupo de experts foi convidado para realizar uma revisão sistemática da literatura e apresentar uma atualização baseada em evidências científicas visando que pudesse nortear a prática clínica multidisciplinar do CHC. O texto resultante foi submetido a avaliação e aprovação de todos membros da SBH através de sua homepage. O documento atual é a versão final que contêm as recomendações atualizadas e revisadas da SBH.

ABSTRACT Hepatocellular carcinoma (HCC) is one of the leading causes of cancer-related mortality worldwide. The Brazilian Society of Hepatology (SBH) published in 2015 its first recommendations about the management of HCC. Since then, new data have emerged in the literature, prompting the governing board of SBH to sponsor a single-topic meeting in August 2018 in São Paulo. All the invited experts were asked to make a systematic review of the literature reviewing the management of HCC in subjects with cirrhosis. After the meeting, all panelists gathered together for the discussion of the topics and the elaboration of updated recommendations. The text was subsequently submitted for suggestions and approval of all members of the Brazilian Society of Hepatology through its homepage. The present manuscript is the final version of the reviewed manuscript containing the recommendations of SBH.

RESUMO: O objetivo deste estudo foi aplicar um protocolo baseado nos protocolos Animal Welfare Indicators (AWIN) de pequenos ruminantes em fazendas do nordeste brasileiro para avaliar o bem-estar de cabras de corte, comparando animais mantidos em fazendas semi-intensivas (S) e extensivas (E). Quinze fazendas localizadas na Região Metropolitana de Quixadá e Quixeramobim, no Ceará, Nordeste do Brasil, foram recrutadas. As avaliações foram realizadas no nível de grupo e individual. A diferença significativa entre as fazendas S e E foi estabelecida em P<0,05 para todos os testes. No nível de grupo, houve diferença significativa, com mais cabras do grupo E afetadas por estresse térmico e do grupo S apresentando apatia. Indicadores baseados em recursos, tipo de bebedores e acesso a abrigos diferiram significativamente entre os sistemas S e E, com cabras em fazendas S alocadas em locais com acesso à água durante o período noturno mais frequentemente e protegidas do vento. O tipo de instalação era mais complexo para os animais nas fazendas S (n=2) do que nas fazendas E, devido as divisões internas, com a presença de comedouros, bebedouros, saleiros, piso ripado ou cimentado em fazendas S. A nível individual, abscesso e secreção ocular foram observados mais frequentemente nas fazendas S, e lesões nas orelhas, nas fazendas E, provavelmente devido ao manejo distinto das cabras. Semelhanças entre os resultados mostraram que os fazendeiros de ambos os sistemas de produção enfrentam problemas relacionados ao estresse térmico, falta de forragem e problemas de saúde.

ABSTRACT: The aim of this study was to apply a protocol based on the Animal Welfare Indicators (AWIN) protocols for small ruminants in Brazilian Northeast farms to evaluate the welfare of meat goat, comparing animals kept on semi-intensive (S) and extensive (E) farms. Fifteen farms located in the Metropolitan Region of Quixadá and Quixeramobim, Ceará, Brazilian Northeast, were recruited. Assessments were performed at group and individual level. Significant differences between S and E farms was set at P<0.05 to all tests. At group level, there was a significant difference between groups, with more goats from E farms affected by heat stress and more animals from S farms presenting oblivion. Resource-based indicators, type of drinkers and access to shelter, differed significantly between S and E systems, with goats on S farms allocated in places with access to water more frequently during night period and protected from wind. Type of facility was more complex for animals on S farms (n=2) than on all E farms due to internal divisions, with S farms presenting feeders, drinking fountains, salt shakers, and slatted or cemented floor. At individual level, abscess and ocular discharge were more frequently observed on S farms and ears lesions were more frequent on E farms, probably due to distinct management of goats. Similarities between results showed that farmers in both production systems faced problems related to heat stress, lack of forage and health issues.

Abstract The second-generation bioethanol employs lignocellulosic materials degraded by microbial cellulases in their production. The fungus Trichoderma reesei is one of the main microorganisms producing cellulases, and its genetic modification can lead to the optimization in obtaining hydrolytic enzymes. This work carried out the deletion of the sequence that encodes the zinc finger motif of the transcription factor ACE1 (cellulase expression repressor I) of the fungus T. reesei RUT-C30. The transformation of the RUT-C30 lineage was confirmed by amplification of the 989 bp fragment relative to the selection marker, and by the absence of the zinc finger region amplification in mutants, named T. reesei RUT-C30Δzface1. The production of cellulases by mutants was compared to RUT-C30 and measured with substrates carboxymethylcellulose (CMC), microcrystalline cellulose (Avicel®) and Whatman filter paper (PF). The results demonstrated that RUT-C30Δzface1 has cellulolytic activity increased 3.2-fold in Avicel and 2.1-fold in CMC and PF. The mutants presented 1.4-fold higher sugar released in the hydrolysis of the biomass assays. These results suggest that the partial deletion of ace1 gene is an important strategy in achieving bioethanol production on an industrial scale at a competitive price in the fuel market.

RESUMO Produtos lácteos são os principais veículos para incorporação de probióticos, e têm grande popularidade entre o público que procura alimentos funcionais. A aplicação probióticos em novas matrizes alimentares necessita de estudos a fim de verificar a estabilidade e viabilidade dos probióticos no produto. O objetivo deste trabalho foi desenvolver uma bebida probiótica smoothie e avaliar a qualidade microbiológica, pH, acidez, sinérese, viabilidade dos probióticos e aceitação e preferência sensorial. Para tal foram elaboradas 36 formulações, empregando-se iogurte e diferentes polpas de frutas. Seis formulações foram selecionadas sensorialmente contendo iogurte probiótico e as polpas de manga, uva, frutas vermelhas (com 8 e 10% açúcar), manga/maracujá, frutas vermelhas/açaí, na proporção 60/40 (m/m), as quais foram avaliadas. As bebidas apresentaram adequada qualidade higiênico-sanitária e a viabilidade inicial dos probióticos foi em torno de 7 log UFC mL-1. Durante 30 dias de estocagem verificou-se o aumento da acidez e a diminuição no pH, o aumento na sinérese e uma pequena diminuição na viabilidade dos probióticos, em todas as formulações. A bebida smoothie contendo iogurte probiótico e polpa de frutas vermelhas (10% açúcar), foi selecionada devido à aceitação e preferência sensorial e a manutenção dos níveis de probióticos para conferir benefícios à saúde do consumidor.

ABSTRACT Dairy products are the primary delivery for probiotics, with great popularity among the public looking for functional foods. The addition of probiotics to new food matrices requires studies about the stability and viability of these microorganisms in the final product. This study aimed to develop a probiotic smoothie beverage and to evaluate the microbiological quality, pH, acidity, syneresis, probiotics viability, sensory acceptance, and consumers’ preference. For that, thirty-six beverage formulations were prepared using yogurt and different fruit pulps. Six formulations were selected for the study, as follows: probiotic yogurt with the addition of mango pulp, grape, red fruits (containing 8 and 10% sucrose), mango/passion fruit, and red fruits/açaí, using a yogurt/pulp ratio of 60/40 (w/w). The beverages presented adequate hygienic-sanitary quality, with an initial probiotics viability around 7 log CFU mL-1. An increase in acidity and a decrease in pH, as well as a higher rate of syneresis and a small decline in probiotic viability were observed for all formulations throughout 30 days of storage. The probiotic smoothie made with red fruit pulp (10% sugar) was selected due to its better sensory acceptance, and maintenance of probiotic counts to confer health benefits.

RESUMO A pesquisa objetivou descrever como ocorreu a participação dos Agentes Comunitários de Saúde (ACS) no Programa Nacional de Melhoria do Acesso e da Qualidade da Atenção Básica (PMAQ-AB) e avaliar sua perspectiva em relação às melhorias no acesso e na qualidade da Atenção Básica (AB). Trata-se de estudo descritivo, transversal com abordagem quantitativa, realizado com 133 ACS vinculados às equipes de saúde da família que aderiram ao programa. Observou-se a necessidade de maiores esforços dos municípios para incentivar a inclusão dos ACS nos processos avaliativos e melhorar a sua capacitação, visando adequar seu nível de apreensão e conhecimento sobre o acesso e qualidade do cuidado na AB.

ABSTRACT The study aimed to describe how the participation of Community Health Workers (CHW) took place in the National Program for Access and Quality Improvement in Primary Care (PAQI-PC), and to evaluate their perspective regarding improvements in both the access and the quality of Primary Care (PC). This is a descriptive, cross-sectional study with quantitative approach, carried out with 133 CHWs linked to family health teams that joined the program. Results pointed out the need of greater efforts by municipalities to encourage the involvement of CHWs in evaluation processes and to improve their training, aiming at adjusting their level of apprehension and awareness of both the access and the quality in primary care.

ABSTRACT Filamentous fungi can easily degrade agro-industrial wastes in solid-state fermentation processes, synthesizing many important commercial biocompounds, such as lipolytic enzymes. The aim of this study was to evaluate the effect of the composition of the solid culture medium on the production of lipolytic enzymes by the fungus Aspergillus niger. Rice, wheat and soybean bran were mixed to prepare the culture medium, which was supplemented with glucose, glycerol or soybean oil. Four mixture experimental designs were used to find the best medium for enzyme production. According to our results, the highest lipolytic activity values were achieved with a mixture of rice bran and glycerol (19.844 U·g-1) or with rice bran only (13.267 U·g-1). Thus, the lipolytic enzyme could be produced without any additional carbon source apart from rice bran, although glycerol addition induced a higher production.

Abstract This study was conducted to provide information on the genetic diversity of human parvovirus B19 (B19V) circulating in the municipality of Niterói, Rio de Janeiro, Southeast Brazil during 1996–2006, a period with two distinct outbreaks of B19V infection: 1999–2000 and 2004–2005. A total of 27 sera from patients with erythema infectiosum and five sera from HIV-infected patients that tested positive for B19V DNA during the study period were analyzed. To genotype B19V strains, a semi-nested PCR for partial amplification of the capsid gene was performed and sequence analysis revealed that 31 sequences belonged to subgenotype 1a (G1a) of the main genotype 1 and one sequence was characterized as subgenotype 3b (G3b). The phylogenetic tree supported the division of the G1a into two well-defined clades with 1.3% of divergence. The low diversity of the G1a strains may be explained by the fact that all patients had acute B19V infection and 30/32 sera were collected during two distinct outbreaks. The G3b strain was from an HIV-infected patient who seroconverted to anti-B19 IgG antibodies in September/2005. This is the first report of G3b in the state of Rio de Janeiro.

RESUMO: Em 2015, o Protocolo AWIN para cabras foi publicado na Europa, com indicadores que identificam o nível de bem-estar das cabras leiteiras em lactação, no entanto não existem protocolos de bem-estar para cabras de corte. Portanto, o objetivo deste estudo foi selecionar indicadores baseados nos animais e recursos para avaliar o bem-estar em cabras de corte em diferentes tipos de sistemas de pastejo no semiárido do Nordeste brasileiro. Dezoito indicadores foram selecionados para avaliar o bem-estar de cabras. O conhecimento do grau de bem-estar destes animais é o melhor caminho de realizar melhorias e promover uma melhor qualidade de vida para cabras de corte.

ABSTRACT: In 2015, AWIN Goat Protocol was published in Europe, with indicators that identify welfare level of lactating dairy goats; however, there are no welfare protocols for meat goat. Therefore, the objective of this study was to select animal and resource-based indicators to assess welfare in meat goat in different types of grazing systems in Brazilian semiarid Northeast. Eighteen indicators were selected to evaluate the welfare of meat goat. The knowledge of the welfare degree of these animals is the best way to make improvements and promote a better quality of life to meat goat.

Abstract A study correlating the physical and sensory texture measurements of hearts of palm in conserve was carried out with a view to establishing an instrumental texture standard for this product. One hundred hearts of palm sticks in conserve from different brands, 50 of Açaí and 50 of Pupunha, were cut in half cross wise. One of the halves was used for the sensory evaluation and the other for the instrumental evaluation. Fifty consumers were instructed to bite each half-stick received in the crosswise direction and evaluate the hardness on a linear 10 cm scale and the acceptability of the hardness on a nine-point hedonic scale. The instrumental hardness was analyzed using the TA-XT2 texturometer. The Pearson correlation between the force required to cut the hearts of palm sticks and the acceptability of the hardness was negative and significant at p < 0.05, that is, the greater the force required to cut the stick, the less the consumer liked it. Considering that the maximum acceptable sensory hardness is 5.0 on the 10 cm scale, the maximum acceptable values for the physical measurements are: maximum force/area: 20.4 N/cm2 and mean force/area: 5.6 N/cm2.
