RESUMO: O metil jasmonato (MeJA) é reconhecido como um hormônio vegetal que induz várias alterações bioquímicas relacionadas à qualidade dos frutos, mas é evidente que o efeito do MeJA durante a pós-colheita é muito variável quanto à concentração, espécies de plantas e até mesmo cultivares. O objetivo deste trabalho foi relacionar a aplicação deste regulador em baixa concentração (10 µmol L-1 por 24 h) às mudanças na fisiologia pós-colheita, na incidência de antracnose e na qualidade do mamão ‘Golden’ durante o armazenamento a 24 ± 1 ° C. A partir do sétimo dia de armazenamento, a incidência de antracnose foi reduzida em mais de 50% com o tratamento com MeJA. Incidência da doença também foi reduzida. Embora o MeJA tenha reduzido a acidez dos frutos, os teores de ácido ascórbico e sólidos solúveis não foram alterados durante o armazenamento com o tratamento hormonal. A cor da casca e a firmeza da polpa apresentaram ligeira retenção. A redução na produção de etileno foi acompanhada pela redução da respiração nos frutos tratados. MeJa aumentou a atividade da CAT apenas na casca, enquanto a atividade da SOD não foi induzida por MeJA na casca e na polpa. Embora o aumento da CAT a partir do terceiro dia de armazenamento possa ter contribuído para a redução da peroxidação lipídica na casca, a redução do MDA na polpa não pode ser explicada apenas pela atividade da CAT. Em resumo, a aplicação de MeJA em mamão ‘Golden’ reduziu a incidência e severidade da antracnose, diminuiu a respiração, a produção de etileno e a peroxidação lipídica. Conclui-se que a aplicação de MeJA em baixa concentração (10 µmol L-1) pode contribuir para o controle da antracnose em mamão ´Golden` e retardar o amadurecimento dos frutos.

ABSTRACT: Methyl jasmonate (MeJA) is recognized as a plant hormone that induces several biochemical changes related to improving fruit quality, but it is evident that the effect of MeJA during postharvest is very variable upon concentration, plant species, and even cultivars. The objective of this research was to relate the application of this regulator at low concentration (10 µmol L-1 for 24 h) to changes in postharvest physiology, on the incidence of anthracnose and quality of ‘Golden’ papaya fruit during storage at 24 ± 1°C. From the seventh day of storage, anthracnose incidence was reduced by more than 50% with MeJA treatment. The lesion area after infection was also reduced. Although, MeJA reduced fruit acidity, the ascorbic acid and soluble solids content were not altered during storage with the hormonal treatment. The skin color and pulp firmness showed slight retention. The reduction in ethylene production was accompanied by a reduction of respiration in treated fruits. MeJa increased CAT activity only in the skin whereas SOD activity was not induced by MeJA in both skin and pulp. Although, the increase of CAT from the third day of storage may have contributed to the reduction of lipid peroxidation in the skin, the MDA reduction in the pulp cannot be explained only by CAT activity. In summary, the application of MeJA in ‘Golden’ papaya reduced the incidence and severity of anthracnose, decreased respiration, ethylene production and lipid peroxidation. It is concluded that the application of MeJA at a low concentration (10 µmol L-1) may contribute to anthracnose control in ´Golden`papaya and slows the ripening of fruits.

Abstract Cambuci (Campomanesia phaea) is a native fruit from the Atlantic Forest, one of the richest biomes in the world. The cambuci has soft and astringent pulp, green coloration and is characterized as an aromatic fruit. This is the first study that describes the quality evolution of cambucis during their ripening. Quality parameters were evaluated at three harvesting points: weight loss, pulp firmness, skin color, total soluble solids, titratable acidity, ascorbic acid, total soluble sugars, total phenolic compounds, soluble and total tannins, respiratory activity, ethylene production, and volatile compound profiling. Fruit harvested in stages 1 somewhat rounded equatorial region) and 2 (increasingly rounded equatorial region) of ripening had two additional days of postharvest life. A decrease in firmness was observed over the days, demonstrating desirable pulp softening. No increase in ethylene production associated to respiratory peaks were observed. Volatile profile changed according to ripeness, and early harvested fruit was able to produce partially volatile compounds found in ripe fruit.

Resumo O cambuci (Campomanesia phaea) é uma fruta nativa da Mata Atlântica, um dos biomas mais ricos do mundo. Este fruto possui polpa macia e adstringente, coloração verde e caracteriza-se por seu aroma agradável. Este é o primeiro estudo que descreve a evolução da qualidade de cambucis durante o amadurecimento. Os seguintes parâmetros de qualidade foram avaliados em três pontos de colheita: perda de massa, firmeza da polpa, cor da casca, sólidos solúveis totais, acidez titulável, ácido ascórbico, açúcares solúveis totais, compostos fenólicos totais, taninos solúveis e totais, atividade respiratória, produção de etileno e compostos voláteis. Frutos colhidos nos estádios 1 (região equatorial ligeiramente arredondada) e 2 (região equatorial mais arredondada) de maturação tiveram dois dias adicionais de vida pós-colheita. Observou-se diminuição da firmeza ao longo dos dias, demonstrando o desejável amolecimento da polpa. Não foi observado aumento na produção de etileno associado a picos respiratórios. O perfil volátil mudou de acordo com a maturação, e frutos colhidos precocemente foram capazes de produzir compostos parcialmente voláteis encontrados em frutos maduros.

ABSTRACT. Current literature is lacking regarding the vegetative propagation of the cambuci tree (Campomanesia phaea O. Berg Landrum). This study aimed to verify the efficiency of cutting techniques via the assessment of cuttings of varying types and sizes, sampling dates, and the influence of treatments containing plant growth regulator indolebutyric acid (IBA) combined with the antioxidant ascorbic acid across different immersion times. The species was found not to develop adventitious roots easily, and hence, the herbaceous and woody stem materials were subjected to histochemical studies to elucidate their anatomical and physiological processes. To this end, plant material was polymerized in glycol methacrylate resin, cut into sections, and stained using toluidine blue (0.05%) or via histochemical staining with PAS/naphthol blue black. Anatomical analysis of plant structures revealed the presence of phenolic compounds and sclerenchyma tissue, which in turn are expected to negatively impact the development of adventitious roots.

Resumo O objetivo deste trabalho foi avaliar a alporquia, a estaquia e a enxertia, com diferentes doses de ácido indolbutírico (AIB), para a propagação vegetativa de Eugenia involucrata. A alporquia foi realizada por dois anos consecutivos, com cinco diferentes doses de AIB. A estaquia foi testada com estacas lenhosas e herbáceas, quatro doses de AIB, em três estações do ano. Os métodos de enxertia – garfagem em fenda cheia e inglês simples – foram avaliados em duas estações do ano. Para os ensaios de alporquia, estaquia e enxertia, os delineamentos experimentais foram em blocos ao acaso, inteiramente casualizado em arranjo fatorial 3x4 e inteiramente casualizado, respectivamente. As plantas foram avaliadas quanto ao enraizamento, à percentagem de sobrevivência e ao desenvolvimento da parte aérea. Na alporquia, foram observadas baixas taxas de enraizamento foram observadas na alporquia de 0 a 50%, o uso de AIB não apresentou resultados consistentes e nenhum propágulo resultante sobreviveu após o transplante. A técnica de estaquia mostrou baixas taxas de sobrevivência, enraizamento e retenção foliar, sem efeito consistente das doses de AIB. A enxertia mostrou de 35 a 50% de fixação do enxerto, sem diferença significativa entre as técnicas de enxerto de emenda e de fenda. As técnicas de alporquia e estaquia não são eficientes para a propagação de E. involucrata, pois não favorecem a sobrevivência e o enraizamento das mudas. A enxertia, por ambos os métodos, é a técnica mais eficiente para a propagação de E. involucrata.

Abstract The objective of this work was to evaluate air layering, cutting, and grafting, with different indolebutyric acid (IBA) rates, for the vegetative propagation of Eugenia involucrata. Air layering was carried out for two consecutive years with five different IBA rates. Cutting was tested for woody and herbaceous cuttings, using four IBA rates, in three seasons. The grafting methods – cleft graft and splice graft – were tested in two seasons. For the air layering, cutting, and grafting trials the experimental designs were randomized complete blocks, completely randomized in a 3x4 factorial arrangement, and completely randomized, respectively. Plants were evaluated for rooting, survival percentage, and shoot development. In air layering, low rooting rates of 0 to 50% were observed, the use of IBA showed no consistent results, and no resulting propagules survived after being transplanted. The cutting technique showed low survival, rooting, and leaf retention rates, with no consistent effect of IBA rates. Grafting showed 35 to 50% graft fixation, with no significant difference between the splice and cleft grafting techniques. The air layering and cutting techniques are not efficient for the propagation of E. involucrata, as they do not favor the survival and rooting of seedlings. Grafting, by both techniques, is the most efficient method for E. involucrata propagation.

Resumo: O objetivo deste trabalho foi avaliar as técnicas de alporquia e enxertia na produção de plantas de cambucizeiro (Campomanesia phaea). Foram conduzidos dois experimentos em blocos ao acaso para alporquia, com plantas adultas de cambuci, e dois inteiramente casualizados para a enxertia, utilizando mudas. A alporquia foi avaliada com diferentes doses de ácido indolbutírico, e as técnicas do tipo inglês simples e fenda lateral foram utilizadas para a enxertia. O enraizamento dos alporques não foi favorecido pela aplicação de doses de ácido indolbutírico, enquanto a enxertia do tipo fenda lateral garantiu a fixação de 6% dos enxertos. Análises histológicas dos alporques revelaram atividade das células parenquimáticas do xilema na formação de estruturas similares a calos. Nas plantas enxertadas, essas células garantiram a união e a regeneração dos tecidos. A técnica da alporquia foi inviável, mas a enxertia é recomendada para fixação de genótipos de cambucizeiro.

Abstract: The objective of this work was to evaluate the air-layering and grafting techniques in the production of cambuci (Campomanesia phaea) plants. Two experiments were conducted in randomized complete blocks for air-layering, using adult cambuci plants, and two completely randomized for the grafting, using seedlings. Air layering was evaluated with different rates of indolebutyric acid; the splice, side-veneer, and chip-budding techniques were used for grafting. Air-layering rooting was not favored by the application of indolebutyric acid rates, whereas side-veneer grafts ensured the fixation of 6% of the grafts. Histological analyses of the air layers revealed the action of parenchyma cells from the xylem in the formation of structures similar to calluses. In the grafted plants, these cells ensured tissue union and regeneration. The air-layering technique was unfeasible, but grafting is recommended to establish cambuci tree genotypes.

RESUMO: Campomanesia phaea possui interesse comercial devido aos seus frutos serem utilizados na fabricação de vários produtos, além do seu alto potencial nutricional. No entanto, possui baixo potencial germinativo e há pouca informação na literatura. O objetivo desse trabalho foi caracterizar biometricamente e estabelecer o teste de tetrazólio para sementes de cambuci. Sementes provenientes de duas épocas de coleta foram submetidas a avaliações biométricas (comprimento, espessura, largura e massa de sementes), teor de água, obtenção da curva de embebição e teste de tetrazólio. A curva de embebição foi realizada com sementes não escarificadas e sementes submetidas a dois métodos de escarificação, mecânica e química. O teste de tetrazólio foi realizado com embebição das sementes em solução de sal cloreto de 2, 3, 5 trifenil tetrazólio a 0,75; 1,00 e 1,50% durante 4, 8 e 12 horas, classificando-as como viáveis e inviáveis. Conclui-se que as sementes de cambuci apresentaram diferenças biométricas entre as duas épocas de coleta, devido aos diferentes teores de água. Nenhuma diferença ocorreu em relação à curva de embebição para os três tratamentos avaliados e a solução de 0,75% durante quatro horas em banho-maria, à 38 °C, foi considerada a melhor para realização do teste de tetrazólio.

ABSTRACT: Campomanesia phaea has commercial interest because its fruits are used in the manufacture of several products, besides its high nutritional potential. Nevertheless, it has low germination potential and there is not much information in the literature. The aim of this study was to perform a biometric characterization and to establish the tetrazolium test for cambuci seeds. Seeds obtained from two collection periods were subjected to biometric evaluations (seed length, thickness, width and mass), water content, determination of the soaking curve and tetrazolium test. The soaking curve was performed with non-scarified seeds and seeds subjected to two scarification methods, mechanical and chemical. The tetrazolium test was performed soaking the seeds in a solution of 2, 3, 5 triphenyl tetrazolium chloride salt at 0.75, 1.00 and 1.50% for 4, 8 and 12 hours. After this period, the seeds were categorized as viable and non-viable. It was concluded that the cambuci seeds presented biometric differences between the two collection periods, because of the different water contents. There was no difference in the soaking curve among the three treatments tested and the solution of 0.75% for four hours in a water bath at 38 oC was considered the best for performing the tetrazolium test.

ABSTRACT Consumers around the world appreciate strawberries for their taste. They have low calories and high concentrations of soluble fibers, vitamin C and flavonoids. This paper verified the combined effect of O2, CO2, and N2O levels on ‘Oso Grande’ strawberries stored at 10° C, under controlled atmosphere (CA). Five different gas mixtures were used: 0.03 kPa CO2 + 20 kPa O2, 80 kPa N2O + 20 kPa O2, 90 kPa O2 + 10 kPa N2, 60 kPa O2 +40 kPa CO2, and 20 kPa O2 + 20 kPa CO2 + 60 kPa N2O. The lowest incidence of postharvest decay was observed with treatment20 kPa O2 + 20 kPa CO2 + 60 kPa N2O, followed by 80 kPa N2O +20 kPa O2 and 90 kPa O2 + 10 kPa N2. The treatment 60 kPa O2 + 40 kPa CO2 induced an increase in the production of acetaldehyde and ethanol, and these levels were considered inadequate for human consumption. The first factor, named senescence, displayed a positive correlation with soluble solids, luminosity, hue angle, firmness and incidence of decay. hpsThe second factor, named CA-induced injury, showedhps that total acidity correlated negatively with ethanol and acetaldehyde levels. Hiehpsrarchical cluster analysis indicated that strawberries stored underhps80 kPa N2O + 20 kPa O2hps for 14hps hpsdays more closely resembled the quality of fresh fruit at the moment of harvesthps. ‘Oso Grande’ strawberries stored at 10 ºC under 80 kPa N2O + 20 kPa O2 and 90 kPa O2 +10 kPa N2 were in better conditions, with no metabolic alterations, showing that these are the ideal storage conditions.

Resumo A uvaia (Eugenia pyriformis Cambess) é um fruto nativo da Mata Atlântica que apresenta características de aroma e sabor bastante peculiares. Embora seja apreciado por populações locais, o cultivo comercial é praticamente inexistente, assim como os trabalhos de pesquisa. Em vista disso, este trabalho teve como objetivo caracterizar frutos de duas populações de uvaia cultivadas em Salesópolis, SP, com relação aos aspectos físicos, químicos e funcionais, com vistas a determinar o potencial para consumo in natura e/ou para processamento. Os frutos de duas populações de uvaia (frutos grandes e frutos pequenos) foram colhidos manualmente, quando atingiram o completo amadurecimento. Foram avaliados quanto à coloração da casca, peso do fruto inteiro, diâmetros longitudinal e transversal, porcentagem de sementes, rendimento em polpa, firmeza da polpa, pH, teor de sólidos solúveis totais (SST), acidez titulável total (ATT), relação SST/ATT, açúcares solúveis totais, pectinas solúvel e total, carotenoides totais, flavonoides amarelos, compostos fenólicos totais, ácido ascórbico e capacidade antioxidante (DPPH e ORAC). Os teores de minerais totais (Fe, Mn, Cu, Zn, P, K, Ca e Mg) também foram determinados. Quando comparadas as duas populações, pode-se observar que as uvaias apresentaram diferenças expressivas na firmeza, sendo que os frutos do tipo grande apresentaram características vantajosas para a comercialização in natura. No entanto, os frutos do tipo pequeno mostraram-se mais doces e mais ricos em compostos antioxidantes, o que valoriza seu consumo nas formas in natura e processada. Portanto, esta fruta nativa constitui uma importante fonte de nutrientes e de compostos bioativos, com destaque para o Fe.

Abstract Uvaia (Eugenia pyriformis Cambess) is a fruit tree native to the Atlantic Forest and that features peculiar aroma and flavor. Although this fruit is highly popular locally, its commercial farming is virtually nonexistent. In addition, limited studies on this fruit have been conducted. Therefore, the present study aimed to investigate the physical, chemical, and functional characteristics of two uvaia fruit populations grown in Salesópolis, SP, Brazil, in order to determine their potential for being consumed both in natura and processed. Uvaia fruits were evaluated as for skin color, whole fruit weight, longitudinal and transversal diameters, seed percentage, pulp yield, pulp firmness, pH, total soluble solids (TSS), total titratable acidity (TTA), TSS/TTA ratio, total soluble sugars, soluble and total pectins, total carotenoids, yellow flavonoids, total phenolic compounds, ascorbic acid, and in vitro antioxidant capacity (DPPH and ORAC assays). The total mineral content was also determined. Comparison among the two populations revealed that uvaia fruits showed significantly different firmness values, large fruits showing suitable characteristics for the fresh fruit market. However, small fruits were sweeter and richer in antioxidants, allowing the consumption of both natural and processed fruits. Thus, this native fruit denotes an important source of nutrients and bioactive compounds, especially iron.

Resumo Pereskia aculeata Miller é uma cactaceae nativa encontrada do Nordeste ao Sul Brasileiro. A planta é reconhecida pelo alto valor nutritivo das folhas, parte mais utilizada na culinária e na medicina popular. Entretanto, trabalhos sobre as características químicas e a capacidade antioxidante dos frutos de ora-pro-nóbis são escassos. Diante disso, o objetivo deste estudo foi determinar o melhor ponto de colheita em frutos de ora-pro-nóbis, visando a otimizar a presença de compostos bioativos e a capacidade antioxidante. Os frutos foram colhidos manualmente, e os três estádios de maturação foram definidos pela coloração da casca, sendo: estádio verde (coloração verde), intermediário (coloração verde - amarelada) e maduro (coloração amarela). Os atributos avaliados foram os sólidos solúveis (SS), acidez titulável (AT), relação SS/AT, pH, e os compostos bioativos, como as clorofilas totais,carotenoides totais, flavonoides amarelos, compostos fenólicos totais e capacidade antioxidante. Houve diminuição da clorofila e aumento no teor de carotenoides totais e flavonoides amarelos, em função do avanço no estádio de maturação. Para os compostos fenólicos totais, não houve diferença significativa entre os estádios avaliados. A capacidade antioxidante foi quantificada pelo método ORAC, em polpa liofilizada no estádio verde, (1,95 mmol 100 g-1 trolox) e maduro (3,85 mmol 100 g-1 trolox). Os menores teores foram observados no estádio intermediário (0,80 mmol 100 g-1 trolox em polpa liofilizada). O estádio de maturação influenciou de forma significativa sobre os compostos bioativos de ora-pro-nóbis, que apresentaram valores mais elevados de carotenoides totais, flavonoides amarelos e capacidade antioxidante em frutos maduros.

Abstract Pereskia aculeata Miller is a native cactaceae found from the Northeast to the South of Brazil. This plant is recognized by the high nutritional value of their leaves, which are the most used in cooking and folk medicine. However, studies on the chemical characteristics and antioxidant capacity of the ora-pro-nobis fruits are scarce. Therefore, the aim of this study was to determine the best harvest point of the ora-pro-nobis fruits to optimize the content of bioactive compounds and their antioxidant capacity. The fruits were manually harvested, defined by their peel colors in three maturity stages: unripe (green), intermediate (yellowish green), and ripe (yellow) stages. The following attributes were evaluated: soluble solids (SS), titratable acidity (TA), SS/TA ratio, pH, and content of bioactive compounds, such as total chlorophylls, carotenoids, yellow flavonoids, total phenolic compounds, and antioxidant capacity. There was a decrease in the content of chlorophyll followed by an increase in the of total carotenoids and yellow flavonoids, due to the maturity stage. For the total phenolic compounds, it was not observed significant difference between the stages. The antioxidant capacity was quantified by the ORAC method in lyophilized pulp in the unripe (1.95 mmol 100 g-1 trolox) and ripe (3.85 mmol 100 g-1 trolox) stages. The lowest contents were observed in the intermediate (0.80 mmol 100 g-1 trolox in lyophilized pulp) stage. The maturity stage significantly influenced the bioactive compounds of ora-pro-nobis, which presented higher values of total carotenoids, yellow flavonoids, and antioxidant capacity in ripe fruits.

Resumo A Mata Atlântica é reconhecida como um bioma rico em biodiversidade. Plantas de cambuci (Campomanesia phaea) produzem frutas que podem ser consumidas nas formas frescas e processadas, mas ainda são subutilizadas. O objetivo deste estudo foi descrever as características físico-químicas e os compostos bioativos em frutos de cambuci oriundos da Mata Atlântica brasileira, localizado na cidade de Natividade da Serra-SP, Brasil. Frutos de cambuci de cinquenta e nove acessos foram caracterizados de acordo com o peso fresco, o rendimento da polpa, a porcentagem de casca, os diâmetros longitudinal e transversal (DL e DT, respectivamente), o pH, o teor de sólidos solúveis (TSS), a acidez titulável (AT), a relação TSS/AT, o ácido ascórbico,os teores de compostos fenólicos totais e a atividade antioxidante, pelo método de DPPH. Os teores de sólidos solúveis variaram de 5,10 °Brix a 11,00 °Brix. A acidez titulável variou de 1,29 a 2,90 g de ácido citrico 100 g-1. O teor de ácido ascórbico foi de 31,12 a 139,38 mg 100 g-1. Os compostos fenólicos totais variaram de 330,5 mg GAE 100 g-1 a 3.526,04 mg GAE 100 g-1. A atividade antioxidante foi de 65,03 µmol Trolox g-1 de polpa de fruta (peso fresco) para 199,78 µmol Trolox g-1 de polpa de fruta (peso fresco), fator de 6.7 de diferença entre os extremos. Estes resultados demonstram que os frutos de cambuci se apresentam como uma fonte rica de ácido ascórbico, de compostos fenólicos totais e com alta capacidade antioxidante.

Abstract The Atlantic Forest is recognized as a biome rich in biodiversity. Cambuci trees (Campomanesia phaea) produce fruits that may be consumed as both fresh and processed forms but are still underutilized. The aim of this study was to describe the physicochemical characteristics and bioactive compounds in cambuci fruits from Brazilian Atlantic Forest, located at Natividade da Serra-SP, Brazil. Cambuci fruits of the fifty-nine accessions were characterized according to fresh weight, pulp yield, peel percentage, longitudinal and transversal diameters (LD and TD, respectively), pH, soluble solids content (SSC), titratable acidity (TA), SSC/TA ratio, ascorbic acid, total phenolic compounds content, and antioxidant activity using the DPPH assay. The soluble solids contents varied from 5.10 °Brix to 11.00 °Brix. The titratable acidity varied from 1.29 to 2.90 g citric acid 100 g-1. Ascorbic acid content was of 31.12 to 139.38 mg 100 g-1. Total phenolic compounds varied from 330.5 mg GAE 100 g-1 to 3,526.04 mg GAE 100 g-1. The antioxidant activity was of 65.03 µmol Trolox g-1 fruit pulp (fresh weight) to 199.78 µmol Trolox g-1 fruit pulp (fresh weight), a factor of 6.7 difference between the extremes. These results showed cambuci fruits presented as rich source of ascorbic acid, total phenolic compounds, and with high antioxidant capacity.

O objetivo do trabalho foi avaliar e selecionar os filmes mais adequados capazes de aumentar a vida pós-colheita dos morangos (Fragaria x ananassa) mantendo a qualidade, sem alteração económica na cadeia produtiva atual. No primeiro ensaio (EXP1) testaram-se 9 diferentes métodos de embalagem: caixa de tereftalato de polietileno (PET) com tampa perfurada (Controlo) e as outras modalidades eram constituídas pela caixa (PET) revestida com 8 tipos distintos de filmes. No segundo ensaio (EXP2), as melhores modalidades selecionadas no EXP1, correspondentes aos filmes eleitos foram os utilizados para a conservação de morangos da cultivar Oso Grande. No EXP1, os frutos acondicionados com os filmes de: polipropileno (PP) com 0,006 mm e o D955 com 0,019 mm de espessura apresentaram as pontuações mais bem cotadas referentes ao aspeto global, contudo os morangos embalados com PP de 0,006 mm apresentaram elevados teores de acetaldeído e de etanol provocando odor alcoólico. No EXP2, os morangos acondicionados no filme D955 de 0,019 mm e com o filme de policloreto de vinilo (PVC) de 0,020 mm de espessura apresentaram boa aparência até ao 8° dia, mantiveram a qualidade e apresentaram baixa ocorrência de doenças, quando comparados com outros filmes. O filme de PVC com 0,020 mm de espessura demonstra ser uma boa alternativa aos produtores que já utilizam esse tipo de filme, mas com uma espessura inferior.

The objective of this work was to evaluate and select the most suitable films capable of increasing the post-harvest life of the strawberries (Fragaria x ananassa) maintaining quality, without economic alteration in the current productive chain. In the first test (EXP1) 9 different methods of packaging were tested: polyethylene terephthalate (PET) tray with perforated lid (Control) and the other were the PET tray coated with 8 different types of films. In the second experiment (EXP2), the best modalities selected in the EXP1, corresponding to the films chosen were those used for the conservation of strawberries of the Oso Grande cultivar. In EXP1, fruits packed in polypropylene (PP) films with 0.006 mm and D955 with 0.019 mm thickness presented the highest scores regarding the overall aspect, however strawberries packed with PP of 0.006 mm presented a high acetaldehyde and ethanol contents resulting in the presence of alcoholic odor. At EXP2, strawberries packed in D955 film 0.019 mm thickness and polyvinyl chloride (PVC) 0.020 mm presented good appearance until day 8, maintained quality and presented low occurrence of diseases when compared with the other films. The PVC 0.020 mm thickness proves to be an alternative for producers that already use this type of film with a lower thickness.

Resumo O tangor ‘Murcott’ é uma das variedades de tangerina mais produzidas no Estado de São Paulo. Apresenta excelente qualidade sensorial e sabor intenso e mais doce do que a tangerina ‘Ponkan’, sendo, dessa forma, um produto com potencial para o mercado de frutos minimamente processados. Diante disso, o objetivo deste trabalho foi determinar os efeitos dos tipos de corte e dos métodos de sanificação e de eliminação do excesso de líquidos na qualidade de tangor ‘Murcott’ minimamente processado. Num primeiro experimento, os frutos foram cortados em metades, tiras e cubos. No segundo experimento, foram estudados os efeitos dos métodos de sanificação com cloro e de eliminação do excesso de líquidos. Os cortes em metades e em tiras apresentaram maiores teores de ácido ascórbico no final do armazenamento. O teor de sólidos solúveis não diferiu entre os cortes. O corte em tiras apresentou teores baixos de acidez titulável e elevada relação sólidos solúveis/acidez titulável. A eliminação do excesso de líquidos não afetou a aparência do produto minimamente processado e a sanificação com cloro não afetou o sabor. Todos os tratamentos apresentaram baixos níveis de contaminação microbiana nas condições do presente estudo. O melhor tipo de corte foi o de tiras. A sanificação após o corte, bem como a eliminação do excesso de líquidos, mostraram-se dispensáveis no processamento mínimo de tangor ‘Murcott’ em tiras, nas condições do presente estudo.

Abstract ‘Murcott’ is one of the tangerine varieties most produced in São Paulo, Brazil. It presents excellent sensory quality, intense flavour and is sweeter than the ‘Ponkan’ tangerine, and is therefore a product with potential for the minimally processed fruits market. The aim of this study was to determine the effects of types of cutting, sanitation methods and the elimination of excess fluids on the quality of minimally processed ‘Murcott’ tangor. In the first experiment, the fruits were cut into halves, strips and cubes. In the second experiment the effects of chlorine sanitization and the elimination of excess fluids were examined. The halves and strips showed higher ascorbic acid contents at the end of the storage period than did the cubes, but the soluble solids contents did not differ significantly between the cuts. The strips showed low titratable acidity levels and high soluble solids/titratable acidity ratios. The elimination of excess fluid did not affect the appearance of the minimally processed products, and sanitization with chlorine did not affect the taste. All the treatments showed low levels of microbial contamination under the conditions of the present study. The strips were the best type of cut. Under the conditions of this study, sanitation after cutting and the elimination of excess fluid were proven to be expendable in the minimum processing of ‘Murcott’ as strips.

RESUMO A coloração é uma variável muito utilizada na pós-colheita para avaliar o estádio de maturação de diversos frutos. Geralmente, a coloração média é quantificada por meio de métodos subjetivos baseados na visão humana, levando a erros graves na classificação dos frutos. Outra forma de quantificar a cor média de um fruto é a partir da amostragem de pontos na superfície de sua casca, processo este geralmente realizado com o auxílio de um colorímetro. Para a análise da coloração do mamão, é usual o pesquisador amostrar quatro pontos na região equatorial da sua casca, porém tal prática pode levar a resultados viesados, pois esses pontos podem representar apenas a região equatorial em vez da região total. Uma alternativa a esses métodos é a utilização de imagens digitais que, no entanto, necessita de calibração para a correção dos valores de luminosidade, tonalidade e intensidade da cor obtidos por meio do scanner. Essa calibração pode ser realizada a partir de padrões de cores de tal forma que cada padrão é avaliado por meio do scanner e do colorímetro. Assim, foi conduzido o primeiro experimento utilizando 297 padrões de cor baseados na carta de Munssel para tecidos vegetais, o qual mostrou que o scanner pode ser utilizado como dispositivo para a quantificação da cor. Em seguida, foi conduzido um segundo experimento com o objetivo de comparar as metodologias do scanner e do colorímetro. Para isso, utilizou-se de um fruto de mamão cv. Sunrise Solo, o qual foi avaliado por meio dos dois equipamentos, por um período de 19 dias. A análise de imagens digitais levou a medidas diferentes de tonalidade média quando comparadas às tonalidades médias obtidas por meio do colorímetro. Sendo assim, é recomendada a utilização de análise de imagens digitais para a avaliação da tonalidade média da coloração da epiderme do mamão ‘Sunrise Solo’, principalmente nos estádios iniciais e finais de maturação.

ABSTRACT Color hue is a variable frequently used postharvest to assess the physiological maturity of various fruits. In general, mean color hue is quantified by visual techniques, but this method, based on human grading, is tedious and may be erroneous. The color of fruit peel is frequently determined at four points randomly distributed on the equatorial region of a fruit, but this practice can lead to biased results because these points represent the equatorial region only and not the total area of the fruit peel. Consequently, this bias is not due to equipment measurement errors, but to the bias in the sampling process of the points on the fruit epidermis. An alternative to such methods is the digital image which provides information about all regions of the fruit peel, and results in a more accurate mean hue. However, this technique requires calibration to correct the values of luminance, hue and intensity obtained through the scanner. This calibration can be performed from color patterns such that each pattern is assessed by means of a scanner and a colorimeter. Thus, an experiment was conducted using 297 color patterns based on the Munssel color chart for plant tissue. The results showed that the scanner could be used as a device for color assessment where the determination coefficients were above 0.9 for all color components. Next, a second experiment was conducted in order to compare the scanner and colorimeter methodologies. For this, we used a papaya fruit, cv. Sunrise Solo, which was assessed by these two devices for a period of 19 days. The results showed that the image analysis measures have a different mean hue when compared with the mean hue obtained by the method using a colorimeter. Therefore, it is recommended that digital image analysis be used for the evaluation of the hue of fruit peel color when fruit presents non-uniform coloration.

RESUMO Morangos são apreciados em todo o mundo. No entanto, uma grande quantidade de produtos agroquímicos é utilizada na sua produção por serem muito susceptíveis a pragas e doenças. Muitos estudos têm comparado à qualidade de frutos provenientes do sistema orgânico e do sistema convencional, mas os resultados são contraditórios. O objetivo deste estudo foi comparar a qualidade de morangos (Fragaria ananassa Duch) cultivados sob métodos de cultivo orgânico e convencional. Setepares de fazendas foram selecionados, e frutos foram coletados em diferentes momentos e locais de produção. O delineamento experimental foi inteiramente casualizado, com esquema fatorial 2 x 5 (dois tipos de cultivo x cinco períodos de armazenamento), com quatro repetições. Morangos produzidos no sistema de cultivo orgânico apresentaram maiores teores de sólidos solúveis e polpa mais firme que os produzidos no sistema convencional. A perda de massa fresca, acidez titulável e os teores de ácido ascórbico não foram influenciados pelos sistemas de cultivo. O sistema convencional resultou em frutos com menores índices de podridão, enquanto que morangos provenientes do sistema de cultivo convencional exibiram frutos com conteúdo maior de sólidos solúveis e polpa firme. Desta forma, neste trabalho foi observado que cada sistema de cultivo foi responsável em beneficiar diferentes atributos de qualidade em morangos.

ABSTRACT Strawberries are appreciated worldwide. However, a large quantity of agrochemicals is used in their production because of their highly susceptibility to pests and diseases. Many studies have compared the quality of fruits grown on organic production system and conventional system, but results are often contradictory. The aim of this study was to compare the strawberries fruits quality (Fragaria ananassa Duch) grown under organic and conventional production systems. Seven pairs of farms were selected, and fruits were collected at different times and production locations. Experimental design was completely randomized, with a 2 x 5 factorial scheme (two production system types x five storage periods) with four replicates of ten strawberries. Strawberries produced under organic production system exhibited higher soluble solids contents and firmer pulp than those produced under conventional system. Weight loss, titratable acidity and ascorbic acid concentrations were not influenced by farming systems. Conventional system resulted in fruits with lower rot index, while strawberries produced under organic production system exhibited higher soluble solids contents and firmer pulp. Thus, in this study it was observed that each production system was responsible for benefit different attributes in strawberries.

RESUMO: O objetivo deste trabalho foi determinar os efeitos das etapas de beneficiamento pós-colheita de lima ácida 'Tahiti' na sua qualidade e conservação. Foram utilizados frutos colhidos por torção, em estádio de maturação fisiológica e beneficiados de acordo com o procedimento para frutos de exportação. Foram estabelecidos cinco pontos de coleta de frutos ao longo do processo de beneficiamento, os quais correspondem aos tratamentos estudados: "Campo"- coleta diretamente na planta; "Recepção"- na área de recepção da unidade de beneficiamento; "Repouso"- após a primeira etapa do beneficiamento; "Beneficiamento completo"- após o beneficiamento completo; e "Centro de comercialização"- na recepção do centro de comercialização. Foram conduzidas análises físicas e químicas durante 20 dias de armazenamento a 22±2ºC e 70±5% de UR. Os frutos que passaram pelo processo de beneficiamento completo e os que foram coletados no centro de comercialização apresentaram maior perda de massa fresca, maior incidência de oleocelose, menor porcentagem de frutos em condição de comercialização ao final do período de armazenamento, escurecimento da polpa e maior degradação de ácido ascórbico. A qualidade e conservação dos frutos de lima ácida 'Tahiti' foram prejudicadas pela movimentação, manipulação e injúrias mecânicas que ocorrem durante as etapas de beneficiamento pós-colheita.

ABSTRACT: This study aimed to determine the effects of postharvest packing line stages of 'Tahiti' acid lime on their quality and conservation. Fruits were harvested by twisting in physiological maturation stage and packed according to the procedure for export fruits. Five sampling points were set throughout the packing line, which correspond to the treatments studied: "Field"- sampling directly in the plant; "Reception"- collection in the reception area of the packinghouse; "Rest"- collection after the first stage of the packing process; "Complete packing"- collection at the end of the packing process; "Marketing center" and collects at the reception area of the marketing center. Physical and chemical analyzes were conducted for 20 days of storage at 22±2ºC and 70±5% RH. Fruits that have gone through the complete packing process and those collected in the marketing center had higher fresh mass loss, higher incidence of oleocellosis, lower percentage of fruit on condition of marketing at the end of the storage period, pulp browning and higher degradation of ascorbic acid. Quality and conservation of 'Tahiti' lime fruits were affected by movement, handling and mechanical injuries that occur during postharvest processing.
