Resumo: O estudo objetiva desenvolver e testar um modelo que enfatiza o relacionamento da intenção empreendedora e capacidade gerencial no desempenho de propriedades leiteiras. O artigo também examina o efeito do desempenho atual na expectativa de desempenho futuro e no planejamento sucessório das fazendas. A amostra consistiu em 158 produtores de leite do Paraná e do Rio Grande do Sul, realizada em 2017. Para validar o modelo e testar as hipóteses, utilizou-se o procedimento estatístico Path Analysis (Análise de Caminhos). Os resultados mostram que, entre as dimensões da orientação empreendedora, a inovatividade tem mais impacto no desempenho e na capacidade gerencial. A capacidade gerencial não é significativamente relacionada ao desempenho atual das fazendas leiteiras, mas sim à expectativa de desempenho, que, por sua vez, tem impacto significativo no planejamento sucessório das fazendas. A idade dos agricultores modera as relações, especialmente, entre inovatividade, proatividade e capacidade gerencial no desempenho das fazendas.

Abstract: The main objective of the study is to develop and test a model that emphasizes the relationship between entrepreneurial orientation (EO) and managerial capacity (MC) to the performance of dairy farms. This article also examines the effect of these variables on performance expectations as well as the succession planning of farms. Cross-sectional data were collected out of a sample of 158 dairy farmers in 2017 in Brazil. A path analysis approach has been applied to validate the hypothesized model. Results show that between EO dimensions, innovativity has the greatest impact on performance as well as on MC. MC is not significantly related to the current performance on dairy farms, but it is so to the performance expectation, which in turn has an impact on the succession planning of farms. The age of the farmers moderates the relations hypothesized in the model, especially between innovativity, proactivity, and MC in the farms’ performance.

ABSTRACT We aimed to evaluate the impact of milking management practices on milk quality though somatic cell count (SCC) and total bacterial count (TBC). By means of a survey that included farmers associated to two cooperatives, namely Cosulati in the state of Rio Grande do Sul and Castrolanda in the state of Paraná, the hypothesis that milking handling practices impact SCC and TBC levels negatively, regardless of the technological development level of the farm, was analyzed. For such, the quantile regression method was used to estimate models for the 10th, 50th, and 90th quantiles. The results confirmed that SCC and TBC levels decrease as the number of practices increases. However, only three practices impact SCC and TBC levels significantly, and their impact is not related to the farm technological level, according to tests performed by quantile regression. Finally, the study showed that some milk quality and management practices affect somatic cell count and total bacterial count more than others, which consists of using the correct active principle during dry cattle, post-dip, and the water temperature control periods.

RESUMO: O objetivo deste estudo foi detectar fontes de contaminação por Yersinia enterocolitica no fluxograma de abate e sua relação com a contaminação na granja. Sessenta suínos foram acompanhados. Foram coletadas amostras de fezes dos animais na granja de origem e durante o abate, diretamente do reto, após a insensibilização. Também foram coletadas amostras da carcaça após a passagem na depiladeira, após a evisceração, antes da entrada na câmara fria, da papada e da água do tanque de escaldagem antes de iniciar o abate e após a passagem dos animais. Os isolados foram obtidos através de análises microbiológicas, identificados por PCR e comparados através de rep-PCR. Yersinia enterocolitica foi isolada de três baias na granja de origem (20%) e de 20 amostras (6,67%) obtidas no fluxograma de abate. Após a rep-PCR, observou-se que os suínos contaminados na granja podem carrear o micro-organismo para diferentes pontos do fluxograma de abate. No entanto, outras fontes de contaminação que não a granja são mais frequentes e diversas. A papada e a carcaça na entrada da câmara fria são os pontos mais críticos. Conclui-se que Y. enterocolitica presente no trato gastrointestinal de suínos na granja pode não ser eliminada ao longo de todo o fluxograma de abate e permanecer na carcaça destinada à câmara fria.

ABSTRACT: The research intends to detect sources of contamination by Yersinia enterocolitica in the abattoir flowchart and endeavors to study its relation with the contamination in the farm. For this purpose, sixty pigs were followed up. In order to carry out the study, samples of faeces were collected from the animal farm, where the animals were originally kept and from the abattoir, directly from the animal’s rectum, after desensitization. Additionally, samples were also collected from the carcass, after passage into the hair removal machine, after evisceration, prior to entry into the cold chambre, from the jowls, and water of the scald tank, before the commencement of the abattoir as well as after the passage of the animals. Further, the isolates were obtained through microbiological analyzes, upon being identified by PCR and compared via rep-PCR. Basically, Yersinia enterocolitica was isolated from three bays in the original farm (20 %) and from 20 samples (6.67 %), obtained in the abattoir flowchart. Comparison made via rep-PCR revealed that the contaminated pigs on the farm could carry the microorganism to different points in the abattoir flowchart. However, apart from the farm, other sources of the contamination were reported to be more frequent and diverse. Indeed, the chins and the carcass at the entrance of the cold chamber were identified as the most critical points. Therefore, we concluded that Y. enterocolitica present in the gastrointestinal tract of pigs on the farm, cannot be eliminated throughout theabattoir flowchart and remain in the chambers intended for the cold room.

Resumo Objetivando o conhecimento do queijo colonial artesanal produzido na região Sul do Rio Grande do Sul, foram analisadas 30 amostras adquiridas no comércio local e feiras quanto às características físico-químicas, além das análises microbiológicas exigidas pela Agência Nacional de Vigilância Sanitária (ANVISA), isolamento de Yersinia enterocolitica e resistência aos antimicrobianos de isolados de Staphylococcus coagulase positiva, obtidos a partir destas amostras. Os valores medianos resultantes das análises físico-químicas foram: pH 5,81, acidez titulável de 0,44 g de ácido lático/100g, umidade de 48,55%, atividade de água de 0,973, proteína de 19,36%, gordura de 14,54%, teor de cinzas de 2,88% e teor de cloretos 0,51 gNaCl/100g. Quanto às análises exigidas pela ANVISA, 86,66% das amostras estavam fora dos padrões exigidos e nenhuma foi positiva para Salmonella e Listeria monocytogenes. Houve também isolamento de Yersinia enterocolitica em 3,33% das amostras. A maior taxa de resistência dos isolados de Staphylococcus coagulase positiva ocorreu frente à Penicilina G com 100% dos isolados resistentes e a menor contra Ciprofloxacina com nenhum isolado resistente. 65,00% dos isolados foram resistentes a, pelo menos, seis antimicrobianos e 86,95% demostraram resistência à Cefoxitina, resultados preocupantes, especialmente quanto aos isolados Meticilina Resistentes. Além disso, o queijo produzido e comercializado informalmente no Sul do Rio Grande do Sul apresenta grande variação nas características físico-químicas e, em geral, alta contaminação microbiana, podendo representar risco à saúde do consumidor.

Abstract Aiming the knowledge of the artisanal colonial cheese produced in the south of the Rio Grande do Sul, were analyzed 30 samples purchased in the local trade and fairs for physicochemical characteristics, the microbiological analyzes required by the National Agency of Sanitary Surveillance (ANVISA), Yersinia enterocolitica isolation and antimicrobial resistance of Staphylococcus coagulase positive isolates obtained from these samples. The median values resulting from the physicochemical analyzes were, pH 5,86, titratable acidity of 0,49 g of lactic acid/100 g, humidity of 49,12%, water activity of 0,973, protein of 19,14%, fat of 14,71% Ash content of 2,93% and chloride content 0,63 gNaCl/100g. Regarding the analysis required by ANVISA 86,66% of the samples were outside the required standards and no samples were positive for Salmonella and Listeria monocytogenes, there was also isolation to isolate Yersinia enterocolitica from 3,33% of the samples. The highest resistance rate of the isolates of Staphylococcus coagulase positive was compared to Penicillin G with 100% of the resistant isolates, and the lowest against Ciprofloxacin with no resistant isolates. 65.00% of the isolates were resistant to at least six antimicrobials and 86,95% demonstrated resistance to Cefoxitin, a troubling result, especially in Methicillin Resistant isolates. The cheese produced and marketed informally in South of Rio Grande do Sul presents a great variation in the physicochemical characteristics and in general high microbial contamination wich may represent a risk to consumer health.

Resumo Doenças Transmitidas por Alimentos (DTA) estão associadas ao consumo de alimentos e água contaminados por microrganismos patogênicos, sendo alguns desses grupos utilizados como indicadores dos cuidados higiênico-sanitários e empregados nos produtos de origem animal (POA). O objetivo foi avaliar a qualidade higiênico-sanitária dos POA encaminhados para alimentação escolar no município de Pelotas, Rio Grande do Sul, Brasil. As coletas foram realizadas no posto de distribuição da Secretaria de Educação. Foram coletadas cinco amostras de todos os lotes de leite UHT, bebida láctea e filés de frango que deram entrada no período de onze meses, totalizando cinquenta e cinco amostras. Os produtos foram avaliados quanto aos padrões microbiológicos da Agência Nacional de Vigilância Sanitária (ANVISA). Além dessas análises foram realizadas pesquisa da presença de Campylobacter e de Salmonella nos produtos de frango. Foi aplicada uma lista de verificação das boas práticas de armazenamento. Todas as amostras estavam dentro dos padrões microbiológicos admitidos pela ANVISA, entretanto Salmonella foi detectada em quatro amostras de filés de frango. Campylobacter não foi isolado de nenhuma amostra. As condições de armazenamento foram consideradas ruins, apresentando 72,4% de não conformidades, especialmente nos quesitos temperatura e condições de armazenamento. A presença de Salmonella pode oferecer risco à saúde das crianças que venham a consumir filé de frango.

Abstract Foodborne Diseases (FBD) are associated with the consumption of food and water contaminated by pathogenic micro-organisms. Some groups of micro-organisms are used as indicators of employment sanitary hygienic care employees in animal products. The objective was to evaluate the sanitary hygienic quality of animal products sent to school feeding pellets. Samples were collected in the distribution station of the Department of Education in Pelotas, Rio Grande do Sul state, Brasil. Five samples were collected from all batches of UHT milk, milk drinks and chicken fillets which were received in the period of eleven months, reaching fifty-five samples. Products were evaluated for the microbiological standards of the Agência Nacional de Vigilância Sanitária (ANVISA). In addition to these analyzes were performed for the presence of Campylobacter and Salmonella in chicken products. A checklist of good storage practices was applied. All samples were within the microbiological standards accepted by ANVISA, however Salmonella was detected in four samples of chicken fillet. Campylobacter was not isolated from any sample. The storage conditions were considered bad, presenting 72.4% of nonconformities, especially in the temperature and storage conditions. The presence of Salmonella can pose a risk to the health of children that will consume chicken fillet.
