Resumo O objetivo do trabalho foi avaliar os parâmetros físico-químicos, microbiológicos e a aceitabilidade de iogurtes funcionais, com e sem suplementação de frutooligossacarídeos, sabor cajá. Elaborou-se quatro formulações de iogurte, sendo elas: duas com leite integral com e sem suplementação de frutooligossacarídeos e duas com leite desnatado com e sem suplementação de frutooligossacarídeos. Foram analisados os valores de pH, acidez titulável, sólidos solúveis, padrões microbiológicos de qualidade, contagem de bactérias lácticas totais e análise sensorial, na qual foram realizadas perguntas sobre frequência de consumo, conhecimento dos benefícios relacionados ao consumo de produtos lácteos fermentados, intenção de compra e índice de aceitabilidade. Quanto ao pH, a formulação elaborada com leite integral e frutooligossacarídeos apresentou diferença significativa (p < 0,05) em relação às demais formulações. Não houve diferenças significativas (p > 0,05) quanto à acidez titulável e sólidos solúveis. A contagem de bactérias lácticas totais demonstrou valores elevados que atendem aos parâmetros da legislação. As formulações apresentaram qualidade higiênico-sanitária satisfatória e foram bem aceitas pelos consumidores para todos os atributos avaliados no teste sensorial. Assim, apresentaram-se viáveis em termos sensoriais, físico-químicos e microbiológicos, com potencial aproveitamento pela população por possuírem características simbióticas benéficas à saúde.

Abstract This work aimed to evaluate the physicochemical, microbiological parameters and acceptability of functional yogurt, with and without fructooligosaccharide supplementation, flavor yellow mombin . Four yogurt formulations were elaborated: two with whole milk with and without fructooligosaccharide supplementation, and two with skimmed milk with and without fructooligosaccharide supplementation. It was evaluated the formulations’ pH, titratable acidity, soluble solids, microbiological quality standards, total lactic acid bacteria count, and sensory analysis. Questions were asked about frequency of consumption, knowledge of the benefits related to the consumption of fermented dairy products, purchase intention and acceptability index. Regarding pH, the formulation made with whole milk and fructooligosaccharides showed significant difference (p < 0.05) compared to the other formulations. It was observed no significant differences (p > 0.05) regarding titratable acidity and soluble solids. The total lactic bacteria count has shown high values that meet the parameters of the legislation. The described formulations of satisfactory hygienic and sanitary quality were well accepted by consumers for all sensory detection tests, being viable in sensory, physicochemical and microbiological terms, with potential use by the population for its symbiotic characteristics and health benefits.

Resumo: Com o ritmo de vida moderno e acelerado, o número de pessoas que realizam refeições fora casa aumentou, consequentemente houve avanço da demanda de trabalho dos estabelecimentos do setor de refeições coletivas, fazendo com que os ambientes de trabalho se tornem susceptíveis ao surgimento de riscos ocupacionais que podem comprometer a saúde física, mental e social dos trabalhadores. No intuito de amenizar esses riscos, é preciso ter o conhecimento do quanto eles podem interferir na qualidade de vida e de trabalho dos colaboradores. Considerando esses aspectos, foram avaliados os riscos ocupacionais em dois restaurantes da região metropolitana do Recife-PE. Para avaliação desses foram estudados os níveis de ruído, calor e iluminação. Foram também avaliados os riscos químicos e a relação físico-ergonômica. Foi observado em todas as análises feitas, algum tipo de desconforto aos colaboradores. Na análise de ruído foi verificado desconforto, onde o garçom era exposto a níveis de 83 dB, na exposição ao calor a área de cocção contribuiu para o desconforto térmico, onde foi encontrada a exposição de 30,7 IBTUG e a iluminação insuficiente na área de lavagem de panelas, com 86 lux. Riscos provenientes do uso incorreto de EPI’S e falta destes foram encontrados na manipulação de produtos químicos e nos riscos ergonômicos foi observada inadequação da altura de bancadas para execução do trabalho. A partir desses resultados se torna fundamental a promoção de medidas corretivas para proporcionar um ambiente de trabalho confortável com diminuição do desgaste para o colaborador, de maneira que não haja consequências negativas para o mesmo, para a empresa e também ao cliente.

Abstract: With the modern and fast pace of life, the number of people who eat out has increased; consequently there has been an increase in the demand for work in establishments in the collective meals sector, making work environments susceptible to the emergence of occupational risks which may compromise the physical, mental and social health of workers. In order to mitigate these risks, one must have the knowledge of how they can interfere in the quality of life and work of the employees. Considering these aspects, occupational risks were evaluated in two restaurants in the metropolitan area of Recife-PE. For the evaluation of these were studied the levels of noise, heat and illumination. The chemical risks and physical-ergonomic relationship were also evaluated. It was observed in all the analyzes made, some type of discomfort to the collaborators. The noise analysis showed discomfort, where the waiter was exposed to levels of 83 dB, in the heat exposure the cooking area contributed to the thermal discomfort, where the exposure of 30.7 IBTUG was found and insufficient lighting in the area of washing pots with 86 lux. Risks arising from the incorrect use of PPE's and lack of these were found in the handling of chemicals and in the ergonomic risks was observed inadequacy of the height of worktops. From these results, it is fundamental to promote corrective measures to provide a comfortable work environment with reduced wear for the employee, so that there are no negative consequences for the company, as well as the customer.

AbstractThe aim of this study was to analyze the impact that heat treatment with salts and freezing processes on the sensory, instrumental, and physico-chemical characteristics of fried potatoes of the Monalisa cultivar. The potatoes were blanched in distilled water (P); sodium chloride solution (B1); calcium chloride solution (B2), and a solution with both of these salts (B3). They were then pre-cooked and frozen for 24 hours and for 30 days. After frying, sensory characteristics were analyzed (color, texture, flavor, oiliness), along with overall preference and instrumental determinations of texture, color, and oil content. Further tests were conducted on the sample with the best results in the sensory analysis (B1), along with sample P as a control, to determine granule microstructure, carbohydrate fractions, glycemic index, and glycemic load. Blanching B3, despite reducing oil absorption and providing less oiliness, obtained lesser overall preference. Freezing for 30 days increased the lightness, except for when sodium chloride was used, which intensified the color yellow. The use of sodium chloride did not interfere with the type of starch granules, nor with the formation of resistant starch; however, longer freezing time reduced the glycemic index and concentrated the dietary fiber content. All samples exhibited low glycemic index and moderate glycemic loads.

The goal of this study was to develop a symbiotic lacteous drink, evaluate its physicochemical and sensory characteristics, and verify the viability of Lactobacillus acidophilus in the drink. The milk serum-based drink consisted of 50% milk serum containing 10% saccharose, 25% powdered milk, 15% yacon pulp, and cultures of Lactobacillus acidophilus-La 5E and Bifidobacterium bifidum BB12. It was stored for up to 21 days under refrigeration. The milk serum-based drink was analyzed for protein, ether extract, total dietary fiber, total frutans, carbohydrate content, color, pH, acidity, and contamination by coliforms, and Salmonella sp. Coliforms and Salmonella sp were not detected, and L. acidophilus and B. bifidum provided satisfactory probiotic counts up to 21 days of storage under refrigeration. Lactobacillus acidophilus resistance to gastric acids and bile salts was detected only up to seven days of storage when evaluated in vitro. Sensory analysis and purchase viability were evaluated by consumers at 0, 7, 14, and 21 days of storage. Based on the analytical results and consumer evaluation, the drink was acceptable up to seven days of storage.

A pesquisa teve como objetivo elaborar pães com diferentes níveis de farinha de yacon (6% e 11%) e analisá-los quanto à sua composição centesimal, índice glicêmico e potencial prebiótico "in vitro". O pão com 11% de farinha de yacon mostrou baixo índice glicêmico e com 6%, índice glicêmico moderado. Quanto ao potencial prebiótico foi evidente a presença de bactérias probióticas, em especial o gênero Lactobacillus. Os resultados mostraram que a adição de farinha de yacon em pães propiciou produtos de baixo a moderado IG, com potencial prebiótico, light em gorduras e teor de fibras elevado, segundo a legislação de vigente.

The purpose of this study was to elaborate bread with yacon flour at two different levels (6% and 11%) and to analyze their proximate composition, their glycemic indices and their prebiotic potentials in vitro. Bread with 6% and 11% of yacon flour presented, simultaneously, low and moderate glycemic index. As for the prebiotic potentials, it was evident the presence of probiotic bacteria, particularly Lactobacillus. The results showed that, the addition of yacon flour on bread rendered products from low to moderate GI, with prebiotic potential, low fat and high fiber contents, according to the Brazilian food legislation.

O presente trabalho avaliou o efeito da adição de inulina sobre os parâmetros sensoriais, nutricionais e físicos do pão branco. Foram desenvolvidas três formulações contendo 0%, 6% e10% de inulina. Foram realizadas análises físicas de massa, volume, volume específico, densidade, composição centesimal, índice glicêmico (IG) e análise sensorial descritiva quantitativa. A redução do volume do pão contendo 10% de inulina foi maior que os dados da literatura. O peso do pão não diferiu estatisticamente. Houve uma redução de 85% do teor de gordura do pão com 6% de inulina e 86% para o pão com 10% de inulina. O índice glicêmico obtido no pão com 10% de inulina foi menor do que o com 6% de inulina e igual ao sem inulina. O pão adicionado de 6% de inulina foi tido como de boa qualidade sensorial.

The present work evaluated the effect of the addition of inulin on sensory, nutritional and physical parameters of white bread. Three formulations containing 0%, 6% and 10% of inulin were produced. Physical analyses of mass, volume, specific volume, density, centesimal composition, glycemic index (GI) and qualitative descriptive sensory analyses, were carried out. The reduction in bread volume seen with 10% inulin was higher than that reported in the literature. Bread weight did not differ statistically. There was an 85% reduction in fat content for bread with 6% inulin and 86% for bread containing 10% inulin. Glycemic index in bread containing 10% inulin was lower than bread with 6% inulin and equal to inulin-free bread. A level of 6% inulin added to bread was regarded to yield good sensory quality.

O yacon, tubérculo de origem andina, vem sendo cada vez mais aplicado na tecnologia de alimentos, em virtude de suas propriedades funcionais, por ser fonte de inulina e fruto-oligossacarídeos, considerados prebióticos. Foram preparadas três formulações de pães, sendo uma padrão e duas testes contendo farinha de yacon, denominadas de amostra P (pão padrão, sem farinha de yacon), amostra A (pão com 6% de farinha de yacon e 3% de gordura) e amostra B (pão com 11% de farinha de yacon sem adição de gordura). Para a avaliação sensorial foi realizada a Análise Descritiva Quantitativa (ADQ), utilizando-se 11 provadores treinados, os quais definiram 10 atributos sensoriais (aroma, cor, porosidade e uniformidade do miolo, sabor, textura, umectância, untuosidade, adesividade e qualidade global). Também foi realizada análise física dos pães, por meio da caracterização cromática. Os resultados da ADQ foram analisados por análise de variância e testes de médias de Duncan, a 5% de significância. Os resultados da ADQ foram representados graficamente por análise multivariada de análise de componentes principais (ACP). Nao houve diferença entre as amostras A e B em relação aos atributos porosidade, textura, sabor e qualidade global. A amostra A obteve média maior em atributos sensoriais indesejáveis como aderência, enquanto a amostra B apresentou maior média para o atributo umectância, devido ao maior teor de yacon. Na ACP, a soma de componentes principais 1 e 2 foi de 97,59%, ou seja, a variabilidade entre as amostras foi quase totalmente explicada por estes dois componentes. Os resultados obtidos demonstram o grande potencial para o desenvolvimento de novos produtos utilizando alimentos fontes de prebióticos, como os frutanos do yacon.

The yacon, tuber vegetable crop of Andean origin, is increasingly being used in food technology because of its functional properties, as a source of inulin and fructooligosaccharides, which are considered prebiotics. Samples of bread made out of yacon were analyzed. Sample P (Standard bread, without yacon flour), sample A (6% yacon flour and 3% fat) and sample B (11% yacon flour, without fat). Quantitative Descriptive Analysis (QDA) was carried out for sensory evaluation; 11 experienced tasters participated and defined 10 sensory attributes (smell, color, crumb porosity and uniformity, flavor, texture, humectancy, unctuousness, adhesiveness and overall quality). Bread physical analysis was also carried out by chromatic characterization. QDA results were analyzed by analysis of variance and Duncan's test of means, at 5% significance level. QDA results were graphically represented by multivariate principal component analysis (PCA). No difference was found between samples A and B for porosity, texture, flavor, and overall quality. Sample A showed the highest means for undesirable sensory attributes such as adherence, whereas sample B showed the highest mean for humectancy due to the highest content of yacon, which is a highly hygroscopic product. In PCA, the sum of the main components 1 and 2 was 97.59%, that is, the variability between the samples is almost totally explained by these two components. The results demonstrate the great potential for the development of new products using prebiotic food source such as the fructans from yacon.

Evidências científicas reconhecem o yacon (Smallanthus sonchifolius) como fonte promissora de frutanos, tais como inulina e frutooligossacarídeos (FOS). No entanto, a presença de compostos fenólicos torna-o suscetível à reação de escurecimento enzimático. Este trabalho teve como objetivo avaliar o emprego de agentes químicos no processamento de yacon, para obtenção de farinha, a fim de inibir o escurecimento enzimático do produto e favorecer o tempo de secagem. Amostras de yacon sem inibição química, de yacon submetido à solução de cloreto de cálcio 1,0g 100g-1 por 30 minutos e de yacon submetido à solução de metabissulfito de potássio 0,5g 100g-1 por 5 minutos foram secas a 55°C, em estufa ventilada, e o teor de água e curvas de secagem foram determinados. As atividades das enzimas peroxidase (POD) e polifenoloxidase (PPO) foram determinadas antes e após a secagem como um possível marcador bioquímico do escurecimento enzimático desse tubérculo. No parâmetro umidade, os três tratamentos apresentaram-se semelhantes; porém, o tratamento 2 (cloreto de cálcio) reduziu a umidade no menor tempo. Antes e após o tratamento térmico, a atividade enzimática foi maior no tratamento 3 (metabissulfito de potássio). As atividades enzimáticas não foram inativadas completamente pela ação térmica. Para a obtenção da farinha de yacon, o tratamento com cloreto de cálcio 1,0g 100g-1 por 30 minutos foi o que apresentou melhor resultado. Apesar de não inibir totalmente a atividade das enzimas POD e PPO foi o melhor tratamento de inativação, propiciando menor tempo de secagem e melhor firmeza da matéria-prima e facilitando o processamento para obtenção da farinha.

Scientific evidences acknowledged the yacon (Smallanthus sonchifolius) like a promise source of fructans, as inulin and fructooligosaccharides - FOS, meanwhile, the presence of phenolic coumpounds became this susceptible to enzimatic browning reaction. This project aimed to evaluate the use of chemical agents in yacon processing to obtain flour in a way that inhibits enzymatic darkening of the product besides determining the enzymatic activity in these treatments. Samples of yacon without chemical inhibitions, yacon treated with 1.0g 100g-1 calcium chloride for 30 seconds and yacon treated with 0.5g 100g-1 potassium metabisulfite for 5 minutes were dried at 55oC in a ventilated greenhouse and the proportions of humidity and drying curves were determined. The peroxidase activities and polyphenol oxidase enzymes were checked before and after being dried with an enzymatic darkening possible biochemist marker of this tubercle. Regarding humidity Parameter all the three treatment were equivalent, but treatment 2 (calcium chloride) reduced the humidity in lower time. Before and after the thermal treatment the enzymatic activity was higher in treatment 3 (potassium metabisulfite). The thermal action did not inhibit completely polyphenol oxidase and peroxidase. The treatment with calcium chloride at 1.0g 100g-1 for 30 minutes to obtain yacon flour was the one with better result despite the fact that it did not inhibit completely peroxidase and polyphenol oxidase enzymes activity, offering a better drying time better material of row firmness , facilitating the process for obtaining the meal.

OBJETIVO: Formular bebida para crianças de 4 a 6 anos, à base de flocos de abóbora adicionada de inulina, e caracterizá-la quanto ao valor nutricional, à aceitação e ao efeito prebiótico. MÉTODOS: O valor nutricional da bebida foi avaliado por meio de análise da umidade, de proteínas, lipídeos, cinzas, fibra alimentar, carboidratos e carotenóides. As características microbiológicas foram avaliadas por meio de análises de coliformes a 35ºC e a 45ºC, Staphylococcus aureus, Salmonella ssp, Bacillus cereus, de contagem padrão de aeróbios, bolores e leveduras. A aceitabilidade foi determinada por testes sensoriais, aplicados em duas creches da região metropolitana do Recife (PE), o efeito prebiótico foi avaliado por fermentação in vitro, em meio diferencial para bactérias homefermentativas e heterofermentativas-Ágar, e as análises de ácidos graxos de cadeia curta, foram avaliadas por cromatografia a gás. RESULTADOS: Os resultados físico-químicos demonstram que as formulações pouco diferiram quanto à composição centesimal e que a ingestão 200mL/dia contribui, em média, com 10,8%, 36,0%, 10,2%, 12,6%, 37,1% e 126,4% da Recomendação de Ingestão Diária de energia, proteínas, carboidratos, lipídeos, fibra alimentar e carotenóides, respectivamente. Os resultados microbiológicos comprovaram a inocuidade do produto; os sensoriais que as formulações obtiveram uma aceitação em torno de 70% e os dados da avaliação do efeito prebiótico sugerem maior estudo sobre o tema. CONCLUSÃO: Os resultados permitem concluir que as formulações são nutricionalmente adequadas para pequenas refeições de crianças de 4 a 6 anos, pois, além de prevenir a carência de vitamina A apresentam indícios de efeitos prebióticos.

OBJECTIVE: The objective of this study was to formulate a drink for kids aging from 4 to 6 years based on pumpkin seeds and with insulin, and characterize the drink regarding its nutritional value, acceptance and prebiotic effect. METHODS: The nutritional value of the drink was assessed by determining moisture, proteins, lipids, ash, dietary fiber, carbohydrates and carotenoids. The microbiological characteristics were assessed by coliform analysis at 35ºC and 45ºC, Staphylococcus aureus, Salmonella ssp, Bacillus cereus, standard aerobic organism count, yeasts and molds. Acceptance was determined by sensory tests in two daycare units of the metropolitan region of Recife (PE). The prebiotic effect was assessed by in vitro fermentation in a differential medium for homofermentative and heterofermentative bacteria. Short chain fatty acids were determined by gas chromatography. RESULTS: The physical-chemical results showed that the formulations differed slightly regarding the centesimal composition and that the ingestion of 200mL/day contributes, on average, with 10.8%, 36.0%, 10.2%, 12.6%, 37.1% and 126.4% of the recommended daily intake of energy, proteins, carbohydrates, lipids, dietary fiber and carotenoids respectively. The microbiological results proved that the product is innocuous. The acceptance of the product was of roughly 70%. The results of the prebiotic effects showed that more research is necessary. CONCLUSION: The results allow us to conclude that the formulations are nutritionally adequate for small meals of children aging from 4 to 6 years, since the product not only avoids vitamin A deficiency but also presents evidence of some prebiotic effects.

Considerando a importância das propriedades funcionais do amido resistente para a saúde, o elevado consumo de feijão macassar no Nordeste brasileiro e os efeitos do processo térmico e da estocagem sobre a estrutura do amido, foi realizado este trabalho com o objetivo de avaliar a influência de diferentes tratamentos hidrotérmicos (cocção sob pressão e sem pressão) e do armazenamento a 20ºC por 15 e 30 dias, sobre a formação de amido resistente do feijão macassar em dois estádios de maturação (verde e seco). Para analisar os fatores combinados foi realizado um planejamento fatorial do tipo 2³ com três variáveis independentes (fatores) e uma variável dependente (resposta). Todas as variáveis exerceram efeitos significativos na produção de AR e a maior formação foi registrada para o feijão seco devido à hidratação prévia a cocção sem pressão, além do tempo de armazenamento congelado de 30 dias. No que diz respeito às analises físicas, após os tratamentos hidrotérmicos, ocorreram transformações nos padrões de cristalinidade e no aspecto morfológico dos feijões.

Considering the importance of the functional properties of resistant starch for health, the high consumption of the macassar bean in the northeast of Brazil and the effects of the thermal process and storage on the structure of the starch, this work was implemented to evaluate the influence of different hydrothermal treatments (cooking under pressure and whithout pressure) and of storage at 20ºC for 15 and 30 days, on the formation of resistant starch in the macassar bean, in two stages of maturation (green and dryed). To analyse the combined factors, a factorial design type 2³ was realized with three independent variables (factors) and one dependent variable (response). All the variables exercised significant effects on the production of the resistant starch and the highest formation was registered for the dried bean due to the previous hydration before cooking without pressure, as well as the 30 day frozen storage. Concerning the physics analysis after the hydrothermic treatments there are transformations in the cristalinity patterns and in the morphologic aspect of the beans.
