Abstract This study aimed to prepare a feijoa wine and to assess its physicochemical parameters, bioactive compounds, and antioxidant activity. Feijoa were harvested at physiological maturation, and their pulp was fermented in a BOD device at 16 ± 2 °C for 15 days. After the fermentation process, the beverage was characterized for its physicochemical parameters, total phenolic compounds and total flavonoids by spectrophotometry, carotenoids by HPLC, and antioxidant activity by the FRAP, DPPH, and ABTS methods. These same analyses were performed on the pulp in natura for comparative and evaluation purposes of the process. The feijoa fermentation process had a high yield (82%), and the physicochemical characteristics were in accordance with this class of beverage. The beverage had high antioxidant activity, while six carotenoids were identified in the fruit in natura, with (all)-trans-lutein and β-cryptoxanthin being the major carotenoids, in addition to a phenolic content of 176.22 mg GAE 100 g−1 and a total flavonoid content of 0.11 mEq quercetin 100 g−1. The wine had a lower bioactive compound content but a higher antioxidant activity than the pulp. Feijoa wine is a viable technological product in addition to exhibiting antioxidant activity.

Resumen El objetivo de este trabajo fue preparar un vino de feijoa y evaluar sus parámetros fisicoquímicos, compuestos bioactivos y actividad antioxidante. La feijoa se cosechó en el punto de maduración fisiológica y su pulpa se fermentó en un dispositivo BOD a 16 ± 2 °C, durante 15 días. Después del proceso de fermentación, la bebida se caracterizó por sus parámetros fisicoquímicos, compuestos fenólicos totales y flavonoides totales por espectrofotometría, carotenoides por HPLC y actividad antioxidante por los métodos FRAP, DPPH y ABTS. Los mismos análisis se realizaron en la pulpa en forma natural para fines comparativos y de evaluación del proceso. El proceso de fermentación de feijoa fue un alto rendimiento (82%) y características fisicoquímicas de acuerdo con esta clase de bebidas. La bebida mostraron una alta actividad antioxidante, mientras que se identificaron seis carotenoides en la fruta in natura, siendo (all) -trans-luteína y β-criptoxantina los principales, además de un contenido fenólico de 176.22 mg GAE 100 g−1 y 0.11 mEq de quercetina 100 g−1 flavonoides totals. El vino tuvo un menor contenido de compuestos bioactivos, pero una mayor actividad antioxidante. El vino de feijoa es un producto tecnológico viable además de exhibir actividad antioxidante.

Heat map and hierarchical cluster analysis showed that sparkling wines produced with immobilized yeasts contained mostly higher levels of compounds that impart positive notes to wines. Fisher ratio pointed out nine volatile compounds as the main components responsible for differentiation of samples treated with mannoproteins/lees and others. Principal component analysis (PCA) showed differences between the sparkling wines produced with and without adjuvants (commercial mannoproteins or lees). Sparkling wines aged without adjuvants presented higher levels of decanoic and dodecanoic acids (fatty/metallic aroma), while the use of mannoproteins or lees resulted in higher content of some fruity esters, nerolidol and β-damascenone. Therefore, the combination of immobilized yeast and aging on mannoproteins or lees seems to be the most promising treatment to obtain the volatile profile that positively influence wine quality.

RESUMO: O suco de uva foi incluído nas refeições de escolas públicas do estado do Rio Grande do Sul e Santa Catarina, Brasil. O suco destinado para as escolas é produzido por pequenas vinícolas através do método de arraste a vapor. Este método apresenta uma particularidade em relação aos demais métodos de produção do suco, pois as uvas não são maceradas para a extração do mosto. Cabe salientar que a maceração das uvas é o principal ponto crítico relacionado à contaminação dos sucos com ocratoxina A (OTA), que é uma micotoxina que apresenta efeitos nefrotóxicos e imunossupressores. O objetivo deste estudo foi verificar a ocorrência de OTA em sucos produzidos pelo método de arraste de vapor, pois o suco de uva pode ser uma fonte de exposição à OTA para crianças. Nenhuma amostra apresentou OTA em níveis maiores que o limite de detecção (0,05μg L-1) do método usado para determinar esta toxina. Este resultado evidenciou a qualidade adequada do suco produzido por este método de extração. Além disso, dados sobre a ocorrência de OTA são importantes para subsidiar estudos relacionados à exposição a compostos tóxicos através da dieta.

ABSTRACT: The grape juice was included in meals of public schools in the states of Rio Grande do Sul and Santa Catarina, Brazil. The juices intended for schools have been produced by small wineries through the steam distillation method. This method presents a particularity in relation to other juice production methods, since the grapes are not macerated to extract the juice. In literature is well established that maceration of grapes is the main critical point associated with the ochratoxin A (OTA) contamination in juices. OTA is a mycotoxin with nephrotoxic and immunosuppressives effects. The aim of this study was to verify the OTA occurrence in juices produced by steam distillation method, as grape juice may be a source of OTA exposure for children. No sample showed OTA levels higher than the detection limit (0.05μg L-1) of method used to determine this toxin. This study demonstrated the adequate quality of juice produced by this extraction method. Furthermore, data about OTA occurrence are important to support risk assessment studies related to the exposure to toxic compounds through diet.

A ocratoxina A (OTA) é uma micotoxina que possui propriedades nefrotóxicas, genotóxicas, teratogênicas e carcinogênicas. A presença dessa toxina em vinhos e sucos ocorre devido à contaminação das uvas por fungos toxigênicos. Estudos têm mostrado a presença desse metabólito secundário tóxico nestas bebidas, o que pode significar perdas econômicas ao setor vitícola, bem como problemas à saúde dos consumidores. Na Europa, vários estudos têm sido realizados com o objetivo de mapear as áreas em que o desenvolvimento de fungos ocratoxigênicos é mais favorável. Entretanto, no Brasil estes estudos ainda são incipientes. O Comitê de Especialistas em Aditivos Alimentares da Organização Mundial da Saúde (JECFA) estabeleceu a ingestão tolerável segura de 112ng de OTA por quilo de peso corpóreo por semana. Para verificar se população está exposta a OTA em níveis que representam risco para à saúde, é necessário comparar o parâmetro de ingestão segura, definido pelo JECFA, com os níveis de exposição a esta toxina. O monitoramento periódico dos níveis de OTA em alimentos e bebidas é justificado por alguns motivos que incluem: (i) os efeitos tóxicos dessa toxina, (ii) a publicação recente da legislação brasileira que estabelece limite máximo para OTA, (iii) a introdução do suco de uva na merenda escolar; e (iv) a recomendação da ingestão regular de vinho/suco de uva devido as suas propriedades funcionais.

Ochratoxin A (OTA) is a mycotoxin with nephrotoxic, genotoxic, teratogenic and carcinogenic properties. The presence of this toxin in wines and juices occurs due to the development of toxigenic fungi in grapes. Studies have shown the presence of this toxic secondary metabolite in these beverages may results in economic losses to the winery as well as health problems for consumers. In Europe, several studies have been done in order to map the areas where the development of ochratoxigenic fungi is more favorable. However, in Brazil these studies are still incipient. The Joint Expert Committee on Food Additives of the World Health Organization (JECFA) established the safe tolerable intake of 112ng OTA per kg of body weight per week. To verify whether the population is exposed to OTA levels that pose a risk to health is necessary to compare the parameter of safe ingestion defined by JECFA with the levels of exposure to this toxin. Periodic monitoring of the OTA levels in food and beverage has been justified by some reasons including: (i) the toxic effects of this toxin, (ii) the recent publication of the Brazilian legislation establishing maximum limit for OTA, (iii) the introduction of grape juice in school meals and (iv) the recommendation of regular wine intake because of their functional properties.

<p>Solid phase microextraction, one-dimensional gas chromatography (1D-GC) and comprehensive two-dimensional gas chromatography (GC×GC) with mass spectrometric detector have been used to characterize the volatile profile of Moscatel sparkling wines. Predominant classes were esters, acids, alcohols and terpenes. The efficiency of GC×GC was apparent due to the higher number of compounds positively and/or tentatively identified through this technique (two and a half times higher than with 1D-GC), as well as by the separation of co-eluted compounds in 1D-GC. Principal components analysis showed that the volatile profile of the majority of sparkling wines is similar. Only two samples differed from others and the compounds responsible for this behavior were nerol, menthol, linalool acetate, limonene and geraniol. Furthermore, a clear separation among sparkling wines done with two Moscato grape varieties (Bianco and Giallo) was observed in cluster analysis due to the higher chromatographic area of terpenes and norisoprenoids verified in Giallo samples.</p>

Estudos em diferentes partes do mundo mostraram que o vinho pode conter Ocratoxina A, uma micotoxina com propriedades nefrotóxicas e carcinogênicas. O objetivo deste trabalho foi avaliar a presença de Ocratoxina A em vinhos brasileiros e importados, utilizando-se a técnica de cromatografia em camada delgada com detector de carga acoplada. Foram analisadas 63 amostras de vinhos tintos brasileiros, argentinos, uruguaios e chilenos. O método se mostrou suficientemente sensível para análise da micotoxina em vinho, com recuperação de 99%. Os limites de detecção e quantificação foram 0,2 e 0,4 µg.L- 1, respectivamente. Não foi constatada a presença de Ocratoxina A em nenhuma das 63 amostras analisadas. A baixa ocorrência dessa micotoxina registrada neste estudo está de acordo com trabalhos semelhantes já realizados e contribui, de certa forma, para a comprovada qualidade do vinho, produzido principalmente no sul do Brasil, além de garantir a saúde da população consumidora desses produtos.

Studies in different parts of the world have shown that wine may contain ochratoxin A, a mycotoxin with nephrotoxic and carcinogenic characteristics. The aim of this study was to evaluate the presence of ochratoxin A in wines from different countries, including Brazil, using thin layer chromatography with charged-coupled device technique. The method was sufficiently sensitive for mycotoxin analysis, with mean recovery of 99%. The limits of detection and quantification were 0.2 and 0.4 µg.L- 1, respectively. It was not observed the presence of ochratoxin A in any of the 63 samples analyzed. The low occurrence of this mycotoxin is consistent with similar studies already undertaken and contributes to establish the quality of the wine, especially for the product from southern Brazil; besides ensuring the health of the population consuming these products.

Os objetivos deste trabalho foram caracterizar e diferenciar vinhos-base para espumante (cultivares 'Chardonnay' e 'Pinot Noir') provenientes da Serra do Nordeste e Serra do Sudeste do Rio Grande do Sul por meio de parâmetros físico-químicos e elementos minerais combinados com técnicas de análise multivariada. Foram analisados nove parâmetros físico-químicos (densidade, grau alcoólico, extrato seco total, extrato seco reduzido, acidez total, acidez volátil, acidez fixa, pH e açúcares redutores), por espectrofotometria no infravermelho, e 11 elementos minerais (Al, B, Ba, Ca, Cu, Fe, K, Mg, Mn, Na e Sr), por espectrometria de emissão ótica com plasma indutivamente acoplado (ICP-OES). Os elementos encontrados em maiores concentrações foram K, Mg e Ca e, em menores concentrações, Ba, Fe, Sr e Al. A Análise de Componentes Principais (ACP) mostrou que há uma tendência natural de separação entre os vinhos-base da Serra do Nordeste e Serra do Sudeste. Por meio da Análise Discriminante (AD) foram obtidos cinco descritores (Mg, Ca, Mn, pH e grau alcoólico) para os vinhos-base da cultivar 'Chardonnay' e seis descritores (B, Mn, Fe, Na, pH e acidez volátil) para a cultivar 'Pinot Noir', com capacidade de classificar as amostras de vinhos-base de acordo com a origem geográfica. Os elementos Mn e Mg parecem ser aqueles com maior capacidade de discriminação entre os vinhos-base da Serra do Nordeste e Serra do Sudeste.

This research describes the base wines characterization and differentiation (cultivars Chardonnay and Pinot Noir) from Serra do Nordeste and Serra do Sudeste of Rio Grande do Sul by physicochemical parameters and mineral elements followed by multivariate statistical analysis. Nine physicochemical parameters (density, alcoholic content, total dry extract, reduced dry extract, total acidity, volatile acidity, fix acidity, pH and reducing sugars) were analyzed by infrared spectrofotometry and eleven mineral elements (Al, B, Ba, Ca, Cu, Fe, K, Mg, Mn, Na and Sr) by inductively coupled plasma optical emission spectrometry (ICP-OES). Elements K, Mg, and Ca were founded in higher concentrations and Ba, Fe, Sr, and Al were founded in lower ones. Principal Component Analysis (PCA) showed a natural separation tendency between wines from Serra do Nordeste and Serra do Sudeste. Five descriptors were obtained by Discriminant Analysis (DA) for base wines from cultivar Chardonnay (Mg, Ca, Mn, pH and alcoholic content) and six descriptors for base wines from cultivar Pinot Noir (B, Mn, Fe, Na, pH and volatile acidity). These descriptors were capable to classify samples of base wines according to geographical origin. Mn and Mg elements seem to be the elements with higher discrimination capacity between base wines from northwest Serra and Southeast Serra.

O trabalho foi conduzido em Bento Gonçalves, RS, com uvas Cabernet Sauvignon, cultivar destacada no Brasil pela produção de vinhos tintos de guarda. Como outras cultivares na Serra Gaúcha, possui, em determinadas safras, dificuldades para uma adequada maturação, dificultando a elaboração de vinhos estruturados. Dentre as estratégias para minimizar esse problema, está um adequado manejo do vinhedo, aliado a determinadas operações enológicas. Nesse contexto, objetivou-se estudar a aplicação de taninos enológicos na composição físico-química do vinho Cabernet Sauvignon. Na safra 2004, foram usados taninos de quebracho e castanheira, aplicados em três dosagens (5,0, 10,0, 20,0 g.hL-1) e em três momentos de aplicação (maceração, 2 dias após o esmagamento; descuba, 8 dias após o esmagamento; após a fermentação malolática, 4 meses após o esmagamento). Nos vinhos estabilizados, realizaram-se as análises físico-químicas clássicas, mais características cromáticas e polifenóis. Em função das boas condições meteorológicas apresentadas nesta safra, no que concerne às características físico-químicas clássicas, de modo geral, se verificou que a adição dos taninos teve pouca influência na composição do vinho. Aquelas variáveis que seriam, hipoteticamente, mais influenciáveis, como antocianinas e índices de cor, mostraram, da mesma forma, poucas mudanças significativas, enquanto o I 280 e os teores de taninos totais foram afetados.

This study was carried out in the city of Bento Gonçalves, RS, Brazil, with Cabernet Sauvignon, a cultivar known throughout the country for the production of cellaring red wine. Like with other red vines, there may be obstacles to maturation in certain harvests, which can make the production of well-structured wines difficult Among the strategies adopted to minimize this problem, is an adequate handling of the vineyard and certain enological operations. In this context, the objective of this study is to investigate the application of enological tannins in the physicochemical composition of the Cabernet Sauvignon wine. In the 2004 harvest, quebracho and chestnut tannins were applied in three different dosages (5,0, 10,0, 20,0 g.hl-1), and three different times of application (maceration, 2 days after crushing; drawing off,, 8 days after crushing; and after the malolatic fermentation, 4 months after crushing). In the stabilized wines, classic physicochemical analyses were performed and chromatic characteristics and polifenols were identified. Due to the good weather during this season, in terms of classic physicochemical characteristics, in general, it seems that the addition of tannins had little influence on the composition of the wine. The variables that would, hypothetically, be more influential, such as anthocyanins and color index, also showed few significant changes, whereas the R 280 and the levels of total tannins were affected.

Objetivou-se estudar o efeito do uso de taninos enológicos na composição sensorial do vinho Cabernet Sauvignon. O trabalho foi conduzido em Bento Gonçalves, Rio Grande do Sul (RS), com uvas Cabernet Sauvignon, safra 2004. Trata-se de uma cultivar que se destaca no Brasil pela importância na produção de vinhos tintos de guarda. Porém, em algumas safras, possui dificuldades para uma adequada maturação, o que dificulta a elaboração de vinhos com o perfil sensorial desejado pelos consumidores. Dentre as estratégias para minimizar esse problema, está o manejo do vinhedo, aliado a ajustes tecnológicos nas etapas de elaboração do vinho. Para tal, foram usados taninos de quebracho e castanheira, aplicados em três dosagens (5,0g hl-1, 10,0g hl-1, 20,0g hl-1) e em três momentos de aplicação (maceração, descuba, e após a fermentação malolática). Nos vinhos estabilizados, realizaram-se análises sensoriais, em relação aos atributos ligados aos perfis olfativos e gustativos, com análise de oito descritores olfativos e nove descritores gustativos, além de um conceito geral. Assim, verificou-se que os taninos enológicos imprimiram algumas diferenças, principalmente no perfil aromático dos vinhos, que apresentaram acréscimo de qualidade quando tratados com os taninos enológicos. Da mesma maneira, houve superioridade olfativa e gustativa nos vinhos que receberam tratamentos com taninos na etapa de maceração.

The objective of this research was to study the effect of enological tannins in the sensory composition of the Cabernet Sauvignon wine. The study was conducted in Bento Gonçalves, RS, with Cabernet Sauvignon grapes, harvest 2004. This is a cultivar that stands out in importance in Brazil for the production of red wines. However, in some crops there are difficulties for a proper maturation, which hampers the development of wines with the sensory profile desired by consumers. Among the strategies to minimize this problem there is the management of vineyards, combined with technological adjustments in stages of winemaking. To this end, quebracho and nut tannins were used and applied in three doses (5.0g hl-1, 10.0g hl-1, 20.0g hl-1), with three times of application (maceration, drawing off and after malolactic fermentation). In the stabilized wines, there were sensory analysis, related to the attributes associated with olfactory and taste profiles, with analysis of 8 olfactory descriptors 8 and 9 descriptors taste, besides a general concept. Thus, it was found that the enological tannins enabled some differences, mainly in the volatile profile of wines, which showed an increase of quality when treated with the enological tannins. Similarly, there was superiority smell and taste in the wines that received treatment with tannins in the stage of maceration.

O trabalho foi realizado em Santana do Livramento. Rio Grande do Sul, com o objetivo de avaliar o efeito de épocas de desfolha e de colheita sobre a composição físico-química do vinho Cabernet Sauvignon. O experimento foi conduzido num fatoriat incompleto, com quatro épocas de desfolha e três épocas de colheita, realizadas em função de uma data ideal de colheita, totalizando onze tratamentos, com três repetições. A intensidade de desfolha foi de aproximadamente 25%. Os vinhos foram elaborados através de microvinificações. Os resultados mostraram que a época de desfolha não afetou de forma significativa a maioria das variáveis analisadas no vinho, à exceçao do álcool, açúcares redutores e extraio seco. A época de colheita, por outro lado, influiu significativamente na maior parte das variáveis, exceto na acidez total e na acidez volátil, o que sugere uma maior influência deste fator sobre a composição e qualidade do vinho.

The fleld work was carried out in Santana do Livramento, State of Rio Grande do Sul, Brazil, aiming to evaluate the effect of defotiation and harvesting times on the physicchemical composition of Cabernet Sauvignon wines. The experimental design was an incompletely factorial with four defotiation times and three harvesting limes at on ideal harvest date with a total of eleven treatments in three replicales. The defotiation intensity was about 25% and wines were elaborated in small volumes The results showed that the time of defotiation did not have significam effect on the majority of the variables anatyzed, exception on the alcohot, reducing sugars and dry extract. On the other hand, the harvesting time had a significant effect on almost ali variables, exception to the total and votatile acidities. These results suggests a greater influence of the harvesting time on the composition and quatity of Cabernet Sauvignon wine.

O objetivo do trabalho foi estudar o efeito do ácido 3-indoibiitirico (A/B) no enraizamento e desenvolvimento de estacas semi-lenhosas de quivi, cv. Monte. O experimento foi conduzido na Estação Experimental Agronômica da UFRGS, em Eldorado do Sul, RS, e constou de cinco tratamentos, com cinco repetições, em blocos casualizados. Usou-se 19 sacos/parcela, com duas estacas/saco plástico, plantadas em uma mistura argila: areia.-esterco (1: 1: 1): e tratadas com AIB nas concentrações de: 2000ppm, 4000ppm, 6000ppm e 8000ppm, além da testemunha (sem AIB). O AIB não influenciou na porcentagem de enraizamento das estacas, mas resultou no aumento linear do peso seco médio das raízes. Houve, da mesma forma, incrementos lineares no comprimento e no peso seco dos brotos, à medida que se elevou a concentração de AIB.

The objective of this experiment was to study the effect of the 3-indolbutiric acid (IBA) on the rooting and development of semi-hardwood cuttings of kiwi, cv. Monty. The experiment was carried out at the Staccatos Experimental Agronomical/UFRGS in Eldorado do Soul. RS, Brazil with five treatments and five repetitions, in completely randomized blocks design. There were 19 bags per pilot with two cuttings per plastic bag grow in a catty: sane manure mixture (1:1:1) and treated by /BA at the concentrations of 2000ppm, 4000ppm, 6000ppm and 8000ppm. In addition to the contrail. IBA did not affect the rooting percentage but resulted in a linear increase of the mean root dry weight. Shoot development was not affected by the IBA. Buy there was a tendency for a linear increase of shoot length and dry weight in response to IBA concentrations above 2000 ppm.
