ABSTRACT We aimed to study the potential use of carcass condemnation data of broiler chicken slaughterhouses in Brazil as indicators in an animal welfare monitoring program, and to identify points to be addressed to increase data reliability. Data from 2010 to 2015 in the states of Paraná (PR), Santa Catarina (SC) and Rio Grande do Sul (RS) were used. Fractures and bruising were recorded together, representing the most prevalent welfare problem, followed by skin lesion or inflammation. In PR, progressive increases on injury, arthritis, ineffective bleeding, and air sacculitis condemnation may reveal important welfare aspects. High correlation between AWI within PR was more commonly observed than in RS and SC, perhaps as a result of earlier implementation of local meat inspection standardization. Principal component analysis showed changes on condemnation data pattern in PR after standardization, pointing injury and Escherichia coli problems as the main causes for condemnation related to animal welfare. There is considerable potential to improve animal health and welfare surveillance using meat inspection structure that is already in place for food safety purposes, provided that the competent authority harmonizes the procedure of meat inspection among the States, sets specific animal welfare outcomes to be monitored, and integrates condemnation, transport and flock data. It seems crucial to update data collection to establish a routine that allows risk analysis regarding both food safety and animal welfare. In this regard, cooperative work between Federal Inspection and companies seems an interesting approach to promote transparency of the production processes, which would benefit society and animals.

Abstract Scientific literature on broiler chicken welfare in Brazilian industrial systems is scarce. This study aimed at assessing broiler chicken welfare on industrial farms in the State of Rio Grande do Sul, Southern Brazil, using the Welfare Quality(r) assessment protocol for poultry, to provide directly applicable scientific information. Results are presented as criteria scores ranging from 0 to 100, with higher scores indicating better welfare; and percentages of prevalence. The scores classified as excellent (above 80) were absence of prolonged thirst, absence of prolonged hunger, litter quality, breast blister and touch test. Enhanced scores (between 55 and 80) were comfort around resting, plumage cleanliness and dust sheet test. Acceptable scores (between 20 and 55) were thermal comfort, stocking density, absence of injuries, footpad dermatitis and hock burn; and unacceptable scores (below 20) were lameness and qualitative behavioral assessment. The median percentage of mortality and culled birds were 5.2% and 0.6%, respectively. This study provides useful information to select priorities of action on assessed farms and may contribute for setting up legal standards and guiding decisions related to animal welfare issues in Brazil.

Scientific information on the welfare of broilers reared in alternative systems is scarce. The objective of this study was to assess the welfare of free-range broilers using the Welfare Quality® protocol. Free-range broilers reared in ten farms were observed, and measures were made in broilers of five of these farms. The collected data were transformed into scores (0-100), with higher scores indicating better welfare, except for emotional states. Prevalence percentages were calculated for the remaining data. Median (min-max) scores were 81 (63-98) for lameness, 93 (83-99) for hock burn on the farm, 100 (95-100) for plumage cleanliness, 35 (8-70) for podermatitis on the farm, 56 (26-88) for density, 53 (20-53) for dust, 34 (14-67) for litter quality, 93 (41-100) for drinkers, and 100 (100-100) for birds panting or huddling on the farm. The following average (min-max) prevalence percentages were obtained: total mortality 2.0% (1.4-7.2%), culling 0.0% (0.0-2.2%), feed withdrawal time 875 min (715-945 min), water withdrawal time 220 min (170-275 min), dead on arrival at the processing plant 0.00% (0.00-0.01%), broken wings 0%, (0-0%), inefficient stunning 3.9% (1.3-6.7%), pre-stun shock 49.3% (26.7-56.8%), hepatitis 4.5% (1.8-11.0%), bruising 9.3% (6.7-16.7%), and ascites 0% (0-0%). The negative broiler welfare points detected were pododermatitis, litter quality, density, dust, culling, feed withdrawal time, inefficient stunning, pre-stun shock, and hepatitis. The positive points identified were the absence of birds panting or huddling on the farm; low prevalence of lameness, hock lesions, dead on arrival, broken wings, and ascites; good plumage cleanliness scores, and short water withdrawal time.
