Com a finalidade de verificar as transformações por que passam os tubérculos de batatinha durante o período de conservação, quer sob condições normais de armazém, quer em câmaras frigoríficas, estudos foram feitos no que diz respeito aos teores de matéria sêca, acidez, fécula, açúcares e proteínas, bem como sôbre a brotação. Três variedades de batatinhas foram empregadas - Tedria, Bintje e Konst 48-51. Os resultados revelaram diferenças altamente significativas para variedades e tratamentos, quanto aos teores de matéria sêca, enquanto para fécula, açúcares, acidez e proteína, apenas entre tratamentos. Foram encontradas correlações significativas-negativas entre fécula X acidez, e significativas-positivas entre açúcares X acidez, acidez X matéria sêca e acidez X proteína. Não foram obtidas correlações significativas entre proteína x fécula, açúcares X proteína, matéria sêca X proteína e açúcares X matéria sêca. Quanto à brotação, ficou evidenciado que um período inicial de 20 dias de frio contribui para encurtar o período de dormência das variedades, principalmente das mais tardias de brotação, como foi o caso da Konst 48-51.
In this paper an attempt was made to study the possible transformations which the potato tubers go through during the storage period both under normal storage conditions and under refrigerated-chamber conditions as well as with the consertvation alternating and varying under each of these conditions. Records were made of the analyses of the tubers concerning their contents of dry matter, acidity, starch, sugars and protein. Likewise sprouting was recorded. Three varieties were used in these tests : Tedria, Bintje and Konst 48-51. The results obtained revealed highly significant differences for varieties and for treatments, with regard to contents of dry matter, whereas, on the ether hand, these differences were for starch, sugars, acidity and protein among treatments only. Negative significant correlations were found between starch and acidity, positive significant ones between sugars and acidity, acidity and dry matter, and acidity and protein. Regarding sprouting, it was made evident that an initial period of 20 days of cold weather contributes to the effect of shortening the period of dormancy of the varieties mainly of the most belated in sprouting as was the case with Konst 48-51.
