Diethylene glycol is an extremely toxic substance to humans. Recently, cases of beer contamination in Brazil have raised awareness of the need for developing simple screening methods to evaluate this type of compound. This research developed a liquid-liquid extraction with low-temperature partitioning technique to determine diethylene glycol in beer via gas chromatography. Employing a flame-ionization detector simplifies the method, lowers its cost and therefore, it can be used as screening step to assess the possibility of contamination. A gas chromatograph coupled to a mass spectrometer would be used only for a confirmatory analysis. The optimized method was validated for the main figures of merit, and it proved to be adequate, with good values of recovery rate (94-106%), limit of detection (3.0 mg L-1), and quantification (10.0 mg L-1). Accuracy, in terms of repeatability and intermediate accuracy, showed variation coefficients lower than or equal to 20%. This method was applied to 28 samples of beers marketed in Brazil, and diethylene glycol was found above the limit of detection in three of them (10.7%). These results were confirmed by a gas chromatograph coupled to a mass spectrometer, which showed the reliability of the screening method for determining diethylene glycol in beer samples.

RESUMO A acerola e o jambolão são frutos com diversos compostos bioativos de origem fenólica e a composição de um produto elaborado com essas duas matérias-primas se afigura como um alimento com elevado potencial antioxidante e nutracêutico. Diante disso, este estudo foi realizado com o objetivo de avaliar a secagem em camada de espuma da polpa mista de jambolão e acerola. Foram elaboradas formulações com a polpa mista, contendo 1,0% de albumina com 0,5% de goma xantana (F1), 0,5% de carboximetilcelulose - CMC (F2) e 0,5% de goma guar (F3), desidratadas a 50, 60, 70 e 80 °C, com espessura da camada de espuma de 0,5 cm. A elevação da temperatura de secagem diminuiu o teor de água e tempo de desidratação das amostras. Os menores tempos de secagem foram obtidos na formulação F3; todos os modelos de secagem resultaram em bons ajustes, com destaque para Midilli. A maior difusividade efetiva foi obtida na formulação F3; a energia de ativação foi maior na combinação da F1. As amostras com albumina-guar (F3) apresentaram maiores entalpia e entropia e as com albumina-xantana (F1) as maiores energias livres de Gibbs. A secagem em camada de espuma é uma forma eficiente de conservação da polpa mista de jambolão e acerola.

ABSTRACT Acerola and jambolan are fruits with several bioactive compounds of phenolic origin and a product made with these two raw materials appears to be a food with high antioxidant and nutraceutical potential. Therefore, this study aimed to evaluate the foam mat drying of the mixed pulp of jambolan and acerola. Mixed pulp formulations, containing 1.0% albumin with 0.5% xanthan gum (F1), 0.5% carboxymethylcellulose (F2) and 0.5% guar gum (F3), were dehydrated at 50, 60, 70 and 80 °C, with foam mat thickness of 0.5 cm. The elevation of the drying temperature decreased the water content and dehydration time of the samples. Formulation F3 obtained the shortest drying times; all drying models resulted in good adjustments, especially Midilli. Formulation F3 obtained greater effective diffusivity; the activation energy was higher in the F1 combination. The samples with albumin-guar (F3) showed greater enthalpy and entropy and samples with albumin-xanthan gum (F1) showed the highest Gibbs free energy. Foam mat drying is an efficient way of preserving the jambolan and acerola mixed pulp.

Abstract Jackfruit is an exotic fruit present in the Northeast region of Brazil, presenting a great economic potential for the region because of the internal and external commercialization of its fruit. Its seed is rich in carbohydrates, protein, minerals and vitamins, and is an alternative source of starch and for food. Germination is an easily accessible, inexpensive technology for the production of sprouts, improving the bioavailability of nutrients in the seed for consumption, such as proteins and bioactive compounds. The objective of this work was to evaluate the chemical, physical and physicochemical parameters of fresh and germinated jackfruit seeds. The germination of jackfruit seeds increased the contents of water, proteins, ascorbic acid, phenolic compounds and total sugars, in addition to reducing the content of starch, lipids, tannins and the parameters of color, luminosity, red (+ a*) and yellow (+b*) intensities. In relation to the physical properties of the seed, there was an increase in the real specific mass and in the unit mass. For apparent specific mass there was a reduction. Seed germination provided an increase in the levels of magnesium, iron and sodium, consequently reducing potassium, phosphorus, calcium, zinc, copper and manganese.

Resumo A jaca é um fruto exótico presente na região Nordeste do Brasil, apresentando um grande potencial econômico para região em face da comercialização interna e externa do seu fruto. Sua semente é rica em carboidratos, proteína, minerais e vitaminas, constituindo fonte alternativa de amido para alimentação. A germinação é uma tecnologia barata de fácil acesso para produção de brotos, melhorando a biodisponibilidade de nutrientes na semente para o consumo, a exemplo das proteínas e compostos bioativos. O objetivo do trabalho foi avaliar os parâmetros químicos, físicos e físico-químicos das sementes de jaca in natura e germinadas. A germinação das sementes de jaca proporcionou o aumento nos teores de água, proteínas, ácido ascórbico, compostos fenólicos e açúcares totais, além de reduzir os conteúdo de amido, lipídios, taninos e os parâmetros de cor, a luminosidade, intensidade de vermelho (+a*) e de amarelo (+b*). Em relação às propriedades físicas da semente, ocorreu acréscimo na massa específica real e na massa unitária. Para massa específica aparente houve redução. A germinação das sementes proporcionou aumento nos teores de magnésio, ferro e sódio, consequentemente ocorrendo redução de potássio, fósforo, cálcio, zinco, cobre e manganês.

RESUMO As polpas de frutas estão sujeitas a mudanças de temperatura durante o processo de fabricação que podem alterar a viscosidade. Este estudo objetivou avaliar o comportamento reológico da polpa de macaíba em diferentes condições de temperatura (10 a 50 °C, com incrementos de 5 ºC) e velocidades de rotação (2,5 a 200 rpm, totalizando 17 velocidades). As medições experimentais foram realizadas em viscosímetro Brookfield e os modelos Ostwald-de-Waele, Mizrahi-Berk, Herschel-Bulkley e Casson foram ajustados aos dados experimentais de tensão de cisalhamento em função da taxa de deformação. Dentre os modelos testados, o modelo que descreveu com maior precisão os reogramas foi o modelo de Mizrahi-Berk (R² > 0,9656 e desvio percentual médio P ≤ 4,1%). A polpa de macaíba comportou-se como fluido não-newtoniano com características pseudoplásticas apresentando valores de índice de comportamento menores que a unidade, nas condições estudadas, apresentando diminuição da viscosidade aparente com o aumento da temperatura e taxa de deformação, podendo ser expressa através da equação de Arrhenius. Os modelos de Mizrahi-Berk e Falguera-Ibarz (R² > 0,99 e P ≤ 10%) foram os que obtiveram melhores ajustes podendo ser utilizados na predição do comportamento da viscosidade da polpa de macaíba. A polpa apresentou valores de energia de ativação variando entre 17,53 a 25,37 kJ mol -1, tendo características reológicas similares a outras polpas de frutas.

ABSTRACT Fruit pulps undergo temperature variations during processing, leading to viscosity changes. This study aimed to analyse the rheological behaviour of macaíba pulp at different temperatures (10 to 50 ºC, with 5 ºC increments) and speeds (2.5 to 200 rpm, totalling 17 speeds). Experimental measurements were performed in a Brookfield viscometer, fitting the Ostwald-de-Waele, Mizrahi-Berk, Herschel-Bulkley, and Casson models to the experimental data of shear stress as a function of shear rate. Among the models used, the Mizrahi-Berk model (R² > 0.9656 and average percentage deviation - P ≤ 4.1%) was found to best fit the rheogram data. Macaíba pulp exhibited a non-newtonian behaviour and was characterised as pseudoplastic. It showed fluid behaviour indexes below unity under the studied conditions, with decreases in apparent viscosity as temperature and shear rate increased. Such behaviour could be described by the Arrhenius equation. The Mizrahi-Berk and Falguera-Ibarz models (R² > 0.99 and P ≤ 10%) best fitted the data and were used to represent the viscosity behaviour of macaíba pulp. The activation energy values of macaíba pulp ranged between 17.53 and 25.37 kJ mol-1, showing a rheological behaviour like other fruit pulps.

RESUMO A melancia africana é um produto agrícola de excelente potencial econômico. Suas sementes são muito utilizadas para extração de óleo, servindo como fonte energética, demonstrando características nutricionais que a habilitam como produto a ser estudado. Assim, objetivou-se caracterizar quanto à composição físico-química, as sementes de melancia africana, além de determinar a cinética de secagem, ajustar modelos matemáticos aos dados, determinar os coeficientes de difusividade efetiva e propriedades termodinâmicas. As sementes foram submetidas à secagem em secador convectivo, variando-se a temperatura de secagem, com velocidade do ar de 1,0 m s-1. Com o aumento da temperatura de secagem diminuiu o teor de água, atividade de água, teor de cinzas, acidez total titulável, lipídios e açúcar redutor. As sementes de melancia africana são ricas em lipídios e cinzas, tem baixos teores de açúcares e baixa acidez; as cinéticas de secagem foram muito bem descritas pelos modelos Dois Termos e Aproximação da Difusão, seguidos pelos modelos de Midilli e Page, que resultaram em ajustes aceitáveis. A difusividade efetiva acompanhou o aumento da temperatura de secagem, e este comportamento foi satisfatoriamente ajustado por equação do tipo Arrhenius. As variações de entalpia e entropia foram reduzidas com a temperatura de secagem, com aumentos da energia livre de Gibbs.

ABSTRACT Citron watermelon is an agricultural product of excellent economic potential. Its seeds are widely used for oil extraction, serving as an energy source, showing nutritional characteristics that make them a suitable product to be studied. Thus, the objective was to characterize citron watermelon seeds regarding their physicochemical composition, in addition to determining drying kinetics, fitting mathematical models to the data, and determining the effective diffusivity coefficients and thermodynamic properties. The seeds were dried in a convective dryer, varying the drying temperature, with air velocity of 1.0 m s-1. With the increase in drying temperature, there were reductions in moisture content, water activity (aw), ash concentration, total titratable acidity, lipids and reducing sugar. Citron watermelon seeds are rich in lipids and ash, have low sugar concentration and low acidity; their drying kinetics was very well described by the Two Terms and Approximation of Diffusion models, followed by the models of Midilli and Page, which resulted in acceptable fits. Effective diffusivity accompanied the increase in drying temperature, and this behavior was well fitted by an Arrhenius-type equation. Enthalpy and entropy variations were reduced with drying temperature, with increments in Gibbs free energy.

RESUMO O quiabo é uma hortaliça que destaca-se agronomicamente por apresentar ciclo vegetativo rápido, de alto rendimento, além de apresentar considerável valor nutritivo. Em razão da sua composição e de ser consumido ainda verde, a sua vida útil é bastante curta, requerendo algum processo de conservação para manter a aceitabilidade. Nesse sentido, objetivou-se secar o quiabo em fatias, com espessura de aproximadamente 2 mm, nas temperaturas de 50, 60, 70 e 80 °C, ajustar modelos matemáticos aos dados experimentais e determinar os coeficientes de difusão, a energia de ativação e as propriedades termodinâmicas. Observou-se que o aumento de temperatura de secagem em 30 °C reduziu em 50,55% o tempo total de processo. Dentre os modelos matemáticos testados, o modelo de Midilli apresentou os melhores parâmetros de ajustes aos dados experimentais. Os coeficientes de difusão efetivos aumentaram com o incremento da temperatura, apresentando-se na ordem de 10-11 m2 s-1, e sua dependência com a temperatura foi descrita pela Equação de Arrhenius, que indicou uma energia de ativação de 26,12 kJ mol-1. Os valores de entalpia e entropia se reduziram com a elevação da temperatura de secagem, enquanto que a energia livre de Gibbs foi aumentada na faixa de temperatura avaliada.

ABSTRACT Okra is a vegetable that stands out agronomically due to its fast vegetative cycle, of high yield, besides presenting considerable nutritional value. Due to its composition and to be consumed still green, its useful life is quite short, requiring some conservation process to maintain acceptability. In this sense, the objective was to dry the okra in slices, approximately 2 mm thick, at temperatures of 50, 60, 70 and 80 ° C, adjust mathematical models to the experimental data and determine the diffusion coefficients, activation energy and thermodynamic properties. It was observed that the increase in drying temperature at 30 ° C reduced the total process time by 50.55%. Among the mathematical models tested, the Midilli model presented the best parameters of adjustments to the experimental data. The effective diffusion coefficients increased with increasing temperature, in the order of 10-11 m2 s-1, and their dependence on temperature was described by the Arrhenius Equation, which indicated an activation energy of 26.12 kJ mol-1. The enthalpy and entropy values decreased with the increase of the drying temperature, while the Gibbs free energy was increased in the temperature range evaluated.

RESUMO Objetivou-se neste estudo determinar a melhor condição de desidratação osmótica (DO) das fatias de manga cv. Espada através de planejamento fatorial, avaliando perda de água e atividade de água durante o processo, e realizar a secagem convectiva em diferentes temperaturas para avaliar sensorialmente as mangas-passas obtidas. Foi realizado um planejamento experimental fatorial 23, com três pontos centrais, para avaliar a influência da espessura (1; 1,5 e 2 cm), concentração de sacarose (35; 45 e 55 ºBrix) e temperatura (30, 40 e 50 ºC), sobre a perda de água e atividade de água durante o processo. A secagem convectiva foi realizada em secador de bandejas nas temperaturas de 50, 60 e 70 ºC, com velocidade do ar de 1,5 m s-1. A melhor condição da DO foi encontrada para as fatias com 1 cm de espessura, concentração de sacarose de 55 °Brix e temperatura de 50 °C. As mangas-passas elaboradas nas temperaturas de secagem de 50 e 60 °C foram as mais aceitas entre os provadores para os atributos de cor, aparência, odor e sabor, intensidade de dureza, preferência e intenção de compra, podendo ser uma alternativa promissora de aproveitamento da manga Espada.

ABSTRACT The objective of this study was to determine the best osmotic dehydration (OD) condition for slices of mango cv. Espada through a factorial experiment, evaluating water loss and water activity during the process, and then perform convective drying at different temperatures to sensorially evaluate the obtained dried mango. An experiment was conducted in a 23 factorial experiment, with three central points, to evaluate the influence of thickness (1; 1.5 and 2 cm), sucrose concentration (35; 45 and 55 ºBrix) and temperature (30, 40 and 50 ºC) on water loss and water activity during the process. Convective drying was carried out in a tray dryer at temperatures of 50, 60 and 70 ºC, with an air speed of 1.5 m s-1. The optimal OD condition was found for slices with 1 cm thickness, sucrose concentration of 55 °Brix and temperature of 50 °C. Dried mangoes produced at temperatures of 50 and 60 °C were the most accepted among the tasters for the attributes of color, appearance, odor and taste, intensity of hardness, preference and purchase intention, and can be a promising alternative for utilization of Espada mango.

RESUMO Este estudo avaliou o ajuste de modelos matemáticos na cinética de secagem convectiva de cubos de mamão pré-desidratados osmoticamente. Os cubos de mamão foram submetidos à desidratação osmótica em soluções de sacarose a 40 e 50 ºBrix, em temperaturas de 50 e 60 ºC, seguida de secagem convectiva complementar em estufa com circulação forçada de ar sob três temperaturas (50, 60 e 70 °C) e velocidade do ar constante de 1,0 m s-1. Aos dados experimentais foram ajustados dez modelos matemáticos de secagem em camada fina. O aumento da temperatura do ar e a diminuição da concentração da solução osmótica resultou em aumento da taxa de remoção de água. Com base nos índices estatísticos, o modelo de Dois Termos foi o que melhor descreveu a cinética de secagem das amostras para todas as condições avaliadas. Os coeficientes de difusão efetivos aumentaram com a elevação da temperatura do ar, variando de 1,766 x 10-10 a 3,910 x 10-6 m2 s-1, enquanto os coeficientes convectivos de transferência de massa variaram entre 3,910 x 10-7 a 1,201 x 10-6 m s-1 com número de Biot de 0,001 a 12,500.

ABSTRACT This study assessed the fitting of mathematical models to the convective drying kinetics of osmotically pre-dehydrated papaya cubes. Papaya cubes were subjected to osmotic dehydration in sucrose solutions at 40 and 50 ºBrix, at temperatures of 50 and 60 ºC, followed by complementary convective drying in forced air circulation oven under three temperatures (50, 60 and 70 °C) and constant air velocity of 1.0 m s-1. Ten thin-layer drying mathematical models were fitted to the experimental data. The increase in air temperature and the decrease in osmotic solution concentration resulted in increased water removal rate. Based on the statistical indices, the Two Terms model was the one that best described the drying kinetics of the samples for all evaluated conditions. The effective diffusion coefficients increased with the elevation of air temperature, ranging from 1.766 x 10-10 to 3.910 x 10-6 m2 s-1, whereas the convective mass transfer coefficients ranged from 3.910 x 10-7 to 1.201 x 10-6 m s-1 with Biot number from 0.001 to 12.500.

RESUMO Como a radiação solar é abundante no Brasil durante quase todo o ano e por ser essa a fonte de energia renovável e não poluente por excelência, a secagem solar dos produtos agrícolas é uma metodologia promissora. Objetivou-se, neste trabalho, secar grãos de feijão-caupi [Vigna unguiculata (L.) Walp.] utilizando energia solar em diferentes tempos de exposição, ajustando os modelos matemáticos e calculando a difusividade efetiva. As secagens foram realizadas durante o dia com as amostras expostas ao sol; durante a noite metade das amostras eram postas para secar em secador acumulador de calor de uso noturno e a outra metade era deixada em bancada de laboratório como amostras testemunhas. Os grãos de feijão-caupi apresentaram teor de água inicial e final de 65,42 e 6,73% b.u. (após a secagem no secador acumulador de calor), respectivamente. Os modelos de Aproximação da Difusão, Page, Verma, Logarítmico e Dois Termos foram ajustados às cinéticas de secagem, os quais apresentaram bons ajustes aos dados experimentais, com valores dos coeficientes de determinação (R2) superiores a 0,98, desvio quadrático médio (DQM) inferiores a 0,01 e valores de qui-quadrado (χ2) inferiores a 0,0001. Os valores de difusividade efetiva foram da ordem de 10-11 m2 s-1 para as amostras de feijão-caupi. O secador acumulador de calor foi eficaz como complemento à secagem por exposição ao sol, mantendo temperatura adequada à secagem no período noturno.

ABSTRACT As solar radiation is abundant in Brazil during most of the year and this source of energy is renewable and non-polluting par excellence, solar drying of agricultural products is a promising methodology. The objective of this study was to dry cowpea [Vigna unguiculata (L.) Walp.] bean grains using solar energy in different exposure times, adjusting the mathematical models and calculation of the effective diffusivity. Drying was performed during the day with samples exposed to the sun; during the night, half of the samples were put to dry in a heat accumulator dryer for nighttime drying and the other half was left on a laboratory bench as control. Cowpea bean grains had initial and final moisture contents of 65.42 and 6.73% d.b. (after drying in the heat accumulator dryer), respectively. The models Approximation of Diffusion, Page, Verma, Logarithmic and Two Terms were fitted to the drying kinetics and all of them fitted well to the experimental data, with coefficients of determination (R2) higher than 0.98, mean square deviations (MSD) less than 0.01 and chi-square (χ2) values lower than 0.0001. The effective diffusivity values were of the order of 10-11 m2 s-1 for the cowpea bean samples. The heat accumulator dryer was effective as a complement to the drying by exposure to the sun, maintaining a suitable temperature for nighttime drying.

RESUMO Objetivou-se nesse trabalho obter a difusividade efetiva da batata yacon em secador de leito fixo com diferentes temperaturas (50, 60 e 70 ºC) e velocidades do ar (1,0; 1,5 e 2,0 m s-1) de secagem. Foi realizada a análise de regressão não-linear, pelo método Quasi Newton, através do programa Statistica 7.0, onde os valores dos parâmetros dos modelos foram estimados em função da temperatura do ar de secagem. Os modelos de Aproximação da Difusão, Dois Termos, Henderson & Pabis e Page ajustaram-se bem aos dados experimentais. Constatou-se que a temperatura e a velocidade do ar de secagem influenciaram no tempo de secagem das amostras. Verificou-se que a difusividade efetiva aumentou com o aumento da temperatura, variando de 1,18 x 10-9 a 2,15 x 10-9 m2 s-1 em todas as temperaturas estudadas.

ABSTRACT The aim of this study was to obtain the effective diffusivity of yacon potato in fixed-bed dryer at different temperatures (50, 60 and 70 ºC) and drying air velocities (1.0, 1.5 and 2.0 m s-1). Non-linear regression analysis was performed by the Quasi-Newton method using the program Statistica 7.0, where the parameters of the models were estimated as a function of the drying air temperature. Approximation of Diffusion, Two Terms, Henderson & Pabis, and Page models fitted well the experimental data. Drying air temperature and speed influenced the drying time of the samples. The effective diffusivity increased with increasing temperature, ranging from 1.18 x 10-9 to 2.15 x 10-9 m2 s-1.

RESUMO Objetivou-se com este trabalho obter as curvas de cinética de secagem das cascas de pitaya branca e caracterizar o pó obtido quanto aos parâmetros físicos e químicos. Diferentes modelos matemáticos foram ajustados aos dados experimentais de cinética de secagem, considerando-se como critério de ajuste o coeficiente de determinação (R2), o desvio quadrático médio (DQM) e a distribuição dos resíduos. As cascas apresentaram teor de água inicial de 93,38% b.u. e final de 5,39% na temperatura de 50 °C, 5,27% em 60 °C e 4,40% em 70 °C. Após as secagens, as cascas foram desintegradas, para a obtenção dos pós e caracterizadas quanto ao teor de água, açúcares redutores, acidez total titulável, ácido ascórbico, betacianinas, betaxantinas, atividade de água e cor, com a finalidade de se avaliar a influência da temperatura na qualidade dos pós. O modelo de Page foi o que melhor se ajustou aos dados experimentais, apresentando coeficiente de determinação maior do que 0,998, desvio quadrático médio menor que 0,02 e distribuição aleatória dos resíduos. O aumento da temperatura do ar de secagem promoveu aumento do pH, ácido ascórbico, luminosidade e intensidade de amarelo e a redução do teor de água, açúcares redutores, acidez, betacianinas, betaxantinas, atividade de água e intensidade de vermelho. Considerando-se a retenção de betalaínas, a temperatura de secagem de 50 oC é a mais adequada para produção e utilização das cascas de pitaya em pó.

ABSTRACT The objective of this work was to obtain the drying kinetic curves of white-fleshed ‘pitaya’ peels and characterize the obtained powder regarding physical and chemical parameters. Different mathematical models were fitted to the experimental data of drying kinetics, considering the coefficient of determination (R2), mean square deviation (MSD) and residual distribution as fit criteria. The peels had an initial moisture content of 93.38% (w.b.) and final moisture contents of 5.39% at temperature of 50 °C, 5.27% at 60 °C and 4.40% at 70 °C. After drying, the peels were disintegrated to obtain the powders and characterized for moisture content, reducing sugars, total titratable acidity, ascorbic acid, betacyanins, betaxanthins, water activity and color, in order to evaluate the influence of temperature on the quality of powders. The Page model was the one that best fitted to the experimental data, presenting coefficient of determination higher than 0.998, mean square deviation lower than 0.02 and random distribution of residuals. Increment in drying air temperature promoted increase of pH, ascorbic acid, luminosity and yellowness, and reduction of moisture content, reducing sugars, acidity, betacyanins, betaxanthins, water activity and redness. Considering the retention of betalains, the drying temperature of 50 °C is the most suitable for the production and use of ‘pitaya’ peel powder.

RESUMO Neste trabalho objetivou-se desenvolver formulações de polpa de murta adicionada de emulsificante/estabilizante (Emustab® e Super Liga Neutra®) em proporções diferentes; caracterizar a melhor espuma, com base na densidade e over-run; e determinar as cinéticas de secagem nas temperaturas de 50, 60, 70, 80 e 90 oC e nas espessuras 0,5, 1,0 e 1,5 cm. A incorporação de 1,5% de Emustab® e 0,5% Super liga Neutra® à polpa de murta (F1) mostrou-se eficaz para a secagem em camada de espuma. A adição de aditivos influenciou nos parâmetros físico-químicos da polpa de murta integral. O modelo de Midilli et al. se destacou como o melhor ajuste aos dados experimentais.

ABSTRACT The objective of this study was to develop formulations of myrtle pulp with emulsifier/stabilizer (Emustab® and Super Liga Neutra®) in different proportions; characterize the best foam, based on density and over-run; and determine drying kinetics at temperatures of 50, 60, 70, 80 and 90 oC and thicknesses of 0.5, 1.0 and 1.5 cm. Incorporation of 1.5% Emustab® and 0.5% Super Liga Neutra® to the myrtle pulp (F1) proved to be effective for foam-mat drying. The addition of additives influenced the physicochemical parameters of the whole myrtle pulp. The Midilli et al. model showed the best fit to the experimental data.

RESUMO Objetivou-se, neste trabalho, estudar a cinética de secagem da polpa de pequi por meio da secagem convectiva em diferentes condições de temperatura (50, 60, 70 e 80 ºC) e espessura (0,5; 1,0 e 1,5 cm) na velocidade do ar 1,0 m s-1, sem adição de adjuvante de secagem. Com os dados experimentais da cinética de secagem da polpa de pequi foram traçadas curvas de secagem cujos modelos ajustados aos dados experimentais, foram: Midilli, Page, Henderson e Pabis e Newton. Calculou-se a difusividade efetiva utilizando o modelo difusivo de Fick para uma placa plana. Constatou-se que, com o aumento da espessura, o tempo de secagem aumentou e com o aumento da temperatura o tempo de secagem foi reduzido. O modelo de Midilli foi o que melhor se ajustou aos dados experimentais da secagem da polpa de pequi, em todas as temperaturas e espessuras, por apresentar maior coeficiente de determinação (R2), indicando que este modelo representa satisfatoriamente o fenômeno de secagem da polpa de pequi. Foi evidenciado que houve tendência de aumento da difusividade efetiva com o aumento da espessura da camada da polpa e com o aumento da temperatura.

ABSTRACT The aim of this work was to study the drying kinetics of pequi pulp by convective drying at different conditions of temperature (50, 60, 70 and 80 °C) and thickness (0.5, 1.0 and 1.5 cm) at the air speed of 1.0 m s-1, with no addition of adjuvant. The experimental data of pequi pulp drying kinetics were used to plot drying curves and fitted to the models: Midilli, Page, Henderson & Pabis and Newton. Effective diffusivity was calculated using the Fick’s diffusion model for a flat plate. It was found that, with increasing thickness, the drying time increased and, with increasing temperature, the drying time was reduced. The Midilli model showed the best fit to the experimental data of pequi pulp drying at all temperatures and thicknesses, presenting higher coefficients of determination (R2), indicating that this model satisfactorily represents the pequi pulp drying phenomenon. There was a trend of increase in the effective diffusivity with the increase in pulp layer thickness and temperature.

RESUMO Este trabalho foi desenvolvido com o objetivo de se obter curvas de secagem a partir de uma suspensão da polpa integral de atemoia através do método de secagem em camada de espuma (foam mat drying). A suspensão foi elaborada com polpa integral de atemoia e adição de 2% de Emustab® e 2% de Super Liga Neutra® com tempo de batimento de 20 min e desidratada em estufa com circulação de ar forçado em diferentes temperaturas (60; 70 e 80 °C) e espessuras da camada de espuma (0,5; 1,0 e 1,5 cm). As curvas de cinética de secagem foram traçadas quanto à razão de água e aplicados os modelos semiteóricos de Henderson & Pabis, Page e Midilli. Todos os modelos testados apresentaram coeficiente de determinação (R2) acima de 0,993 enquanto o modelo de Midilli foi o que apresentou os melhores ajustes para todas as condições. As curvas de secagem foram influenciadas pela temperatura e pela espessura da camada.

ABSTRACT This study was conducted in order to obtain drying curves of whole atemoya pulp through the foam-mat drying method. The suspension was prepared with whole atemoya pulp mixed with 2% of Emustab® and 2% of Super Liga Neutra® with mixing time of 20 min, and dried in a forced-air oven at different temperatures (60; 70 and 80 °C) and thicknesses of the foam layer (0.5, 1.0 and 1.5 cm). The drying rate curves were plotted against the water content ratio and the semi-theoretical models of Henderson & Pabis, Page and Midilli were used. All tested models showed coefficient of determination (R2) above 0.993, and the Midilli model showed the best fit for all conditions. Drying curves were affected by temperature and layer thickness.

RESUMO A estabilidade do figo-da-índia em pó obtido pelo processo de secagem por aspersão durante 40 dias foi avaliada em condições controladas de umidade relativa (83%) e temperatura (25 e 40 °C). A polpa integral foi caracterizada quanto aos parâmetros físico-químicos: pH, acidez total titulável, sólidos solúveis totais, teor de água, sólidos totais, cinzas, açúcares redutores, açúcares totais, açúcares não-redutores, luminosidade, intensidade de vermelho, intensidade de amarelo e atividade de água. As amostras em pó armazenadas foram avaliadas a cada 10 dias de acordo com o teor de água, atividade de água, acidez total titulável e cor (luminosidade, intensidade de vermelho e intensidade de amarelo). Verificou-se que a polpa integral se apresentou pouco ácida e perecível devido ao elevado teor de água. Durante o armazenamento as embalagens não evitaram a absorção de água, aumentando, assim, o teor de água e, consequentemente, a atividade de água; a intensidade de amarelo sofreu oscilações durante o armazenamento, porém a predominância da cor amarela não foi afetada.

ABSTRACT The stability of cactus-pear powder, obtained by the process of spray drying for 40 days, was evaluated under controlled conditions of relative air humidity (83%) and temperature (25 and 40 °C). The whole pulp was characterized with regard to its physico-chemical parameters: pH, total titratable acidity, soluble solids, water content, total solids, ashes, reducing sugars, total sugars, non-reducing sugars, luminosity, redness, yellowness and water activity. The stored samples in powder were evaluated every 10 days for water content, water activity, total titratable acidity and color (luminosity, redness and yellowness). The whole pulp was slightly acidic and perishable, due to the high water content. During storage, the packages did not prevent water absorption, thus increasing water content and, consequently, water activity. Yellowness oscillated along the storage time, but the predominance of the yellow color was not affected.
