O presente estudo foi realizado no Pólo de Tecnologia em Pós-Colheita de Café, na Universidade Federal de Lavras - MG. Seu objetivo foi estudar a distribuição da temperatura e do teor de água na direção radial do secador rotativo. Para a realização do teste, foram usados, concomitantemente, dois secadores da marca Pinhalense, com capacidade de 5.000 kg cada; em um secador usou-se lenha e no outro GLP, como combustíveis para o aquecimento do ar. A medição da temperatura do ar de secagem e da massa de café foi feita por meio de termopares distribuídos em 18 pontos no secador. As leituras de todas as temperaturas, registradas em um indicador, foram feitas em intervalos de meia hora. A redução do teor de água foi acompanhada em nove pontos na massa de café. Observou-se que os valores da temperatura no plenum apresentaram menor oscilação na secagem quando se usou o GLP. Além disso, independentemente do tipo de combustível, foram observados gradientes máximos de até 25 °C na temperatura e três pontos percentuais no teor de água na direção radial, na seção central do secador, em razão dos maiores valores de pressão estática (637,84 Pa). De maneira geral, independentemente do combustível usado, o gradiente de temperatura observado longitudinalmente na massa de café foi bem menor do que na direção radial.

The present study was accomplished in the "Pólo de Tecnologia em Pós-Colheita de Café", at the "Universidade Federal de Lavras", MG, Brazil. Its objective was to investigate the distribution of temperature and moisture content in the radial direction of the rotary dryer. For the test accomplishment, two dryers of the Pinhalense mark were used concomitantly with a 5,000 kg capacity. In a dryer, firewood was used and in the other GLP, as fuels for air heating. The air drying and coffee mass temperature were determined by means of thermocouples distributed on eighteen ends of the dryer. The readings of all the temperatures recorded on the dial were done every half an hour. Moisture content loss was followed in nine points in coffee mass. It was found that the values of temperature in the plenum presented less oscillation in the drying which used GLP. Furthermore, regardless the sort of fuel, there were found maximum temperature gradient of 20 °C and three percents points of moisture content in the radial direction in central section, as consequence of the higher values of static pressure (637.84 Pa) in the plenum observed in this section. Regardless the kind of fuel, the temperature gradient measured in the longitudinal sense of the coffee mass was substantially less in the radial direction.

Determinar o consumo de energia durante a secagem do café usando-se lenha e gás liquefeito de petróleo (GLP) como combustíveis em algumas propriedades, da região sul de Minas e avaliar as razões de possíveis variações existentes no custo entre produtores foi proposta deste trabalho. Vinte propriedades foram visitadas, mas apenas quatro selecionadas, com o objetivo de se padronizar a caracterização técnica e econômica da secagem; esta padronização incluiu: lavagem e separação do café, processamento separado do café bóia do verde-cereja, pré-secagem do café cereja em terreiro e complementação da secagem do café cereja em secador rotativo com capacidade de 15000 L, usando-se lenha ou GLP como combustíveis. Procedeu-se ao acompanhamento de três testes em duas propriedades usando-se GLP como combustível para aquecimento do ar na secagem e três testes em outras duas propriedades usando lenha, também como combustível. Os resultados obtidos conduziram às seguintes conclusões: as variações na temperatura do ar das secagens em que se usou lenha como combustível, foram maiores que as observadas nos testes nos quais foi empregado GLP; o consumo de GLP no queimador onde se usou chama intermitente, foi maior quando comparado com um queimador regulado para realizar uma queima constante do GLP; enfim, o consumo de combustível está fortemente relacionado ao manejo adotado durante a secagem.

The main objective of this work was to determine the consumption of energy during the drying using firewood and petrol-liquefied-gas, as fuels in some farms, as well as, to evaluate the possible reasons of variation in the cost among different producers. Twenty properties were visited and four were selected. The selection was made aiming at standardizing the technical and economic characterization of drying process. The standardization process adopted was the following: washing and separation of the coffee; separation of coffee which floats from the green-cherry; previous drying of the coffee cherry in yard, and complementary drying of cherry coffee using rotary dryer with 15,000 L capacity using firewood and petrol-liquefied-gas as fuels for heating the air. Six drying tests were accomplished using petrol liquefied gas and firewood. The analysis of the results leads to the following conclusions: the temperature variations of the air in the drying process that used firewood, as fuel were greater than those observed in the tests that used petrol-liquefied-gas. The consumption of petrol-liquefied-gas in the burner that used intermittent flame was greater when compared with a regulated burner to accomplish a constant heating. The consumption of the fuel of petrol-liquefied-gas or firewood is strongly related to the management adopted in the drying process.
