Abstract Background While Omega-3 and omega-6 polyunsaturated fatty acids (n-3 and n-6 PUFAs) have established effects on cardiovascular disease (CVD) risk factors, little is known about their impacts on LDL quality markers. Objective To assess the associations of n-3 and n-6 PUFA within red blood cells (RBC) with LDL particle size, small dense LDL-c (sdLDL-c), and electronegative LDL [LDL(-)] in adults with CVD risk factors. Methods Cross-sectional study involving 335 men and women aged 30 to 74 with at least one cardiovascular risk factor. Analyses were conducted on biochemical parameters, such as glucose, insulin, HbA1c, C-reactive protein (CRP), lipid profile, lipoprotein subfractions, electronegative LDL particle [LDL(-)] and its autoantibody, and RBC n-3 and n-6 PUFAs. Independent t-test/Mann-Whitney test, one-way ANOVA/Kruskal-Wallis test, and multiple linear regressions were applied. All tests were two-sided, and a p-value of less than 0.05 was considered statistically significant. Results The RBC n-6/n-3 ratio was associated with increased LDL(-) (β = 4.064; 95% CI = 1.381 – 6.748) and sdLDL-c (β = 1.905; 95% CI = 0.863 – 2.947) levels, and reduced LDL particle size (β = -1.032; 95% CI = -1.585 − -0.478). Separately, n-6 and n-3 PUFAs had opposing associations with those parameters, reinforcing the protective effects of n-3 and showing the potential negative effects of n-6 on LDL particle quality. Conclusion RBC n-6 PUFA was associated with increased cardiometabolic risk and atherogenicity of LDL particles, while n-3 PUFA was associated with better cardiometabolic parameters and LDL particle quality.

Resumo Fundamento Embora os ácidos graxos poli-insaturados ômega-3 e ômega-6 (AGPIs n-3 e n-6) tenham efeitos bem conhecidos sobre os fatores de risco de doenças cardiovasculares (DCV), ainda existe um conhecimento limitado sobre como eles afetam os indicadores de qualidade da LDL. Objetivo Avaliar as associações dos AGPIs n-3 e n-6 de hemácias com o tamanho da partícula da LDL, LDL-c pequena e densa (sdLDL-c) e com LDL eletronegativa [LDL(-)] em adultos com fatores de risco para DCV. Métodos Estudo transversal com 335 homens e mulheres de 30 a 74 anos com, pelo menos, um fator de risco cardiovascular. Foram realizadas análises de parâmetros bioquímicos, como glicose, insulina, HbA1c, proteína C reativa (PCR), perfil lipídico, subfrações de lipoproteínas, partícula eletronegativa de LDL [LDL(-)] e seu autoanticorpo, e os AGPIs n-3 e n- 6 de hemácias. Os testes t independente/teste de Mann-Whitney, ANOVA unidirecional/teste de Kruskal-Wallis e regressões lineares múltiplas foram aplicados. Todos os testes foram bilaterais e um valor de p inferior a 0,05 foi considerado estatisticamente significativo. Resultados A relação n-6/n-3 de hemácias foi associada ao aumento dos níveis de LDL(-) (β = 4,064; IC de 95% = 1,381 – 6,748) e sdLDL-c (β = 1,905; IC de 95% = 0,863 – 2,947), e redução do tamanho das partículas de LDL (β = -1,032; IC de 95% = -1,585 − -0,478). Individualmente, os AGPIs n-6 e n-3 apresentaram associações opostas com esses parâmetros, realçando os efeitos protetores do n-3 e evidenciando os possíveis efeitos adversos do n-6 na qualidade das partículas de LDL. Conclusão O AGPI n-6, presente nas hemácias, foi associado ao aumento do risco cardiometabólico e à aterogenicidade das partículas de LDL, enquanto o AGPI n-3 foi associado a melhores parâmetros cardiometabólicos e à qualidade das partículas de LDL.

Abstract Background Several studies have associated dietary saturated fatty acids (SFAs) with cardiovascular risk but there are still many controversies. Most of these studies have focused on the effects of palmitic acid on circulating lipids. Stearic acid usually shows a neutral effect on blood lipids, however, there is a lack of clinical studies assessing the link with inflammatory and endothelial dysfunction markers. Objective To evaluate the association of red blood cell (RBC) SFA (palmitic and stearic acids) with circulating inflammatory and endothelial dysfunction biomarkers. Methods Cross-sectional study of 79 adults of both sexes with at least one cardiovascular risk factor but without previous events (acute myocardial infarction or stroke). Plasma biomarkers – lipids, glucometabolic markers, high-sensitivity C-reactive protein (hs-CRP), interleukin-6 (IL-6), interleukin-10 (IL-10), monocyte chemoattractant protein-1 (MCP-1), and tumor necrosis factor-α (TNF-α) – and RBC palmitic and stearic fatty acids were analyzed. The associations were assessed by correlation and multiple linear regression analyses, with statistical significance set at p < 0.05. Results Palmitic acid showed no significant associations with traditional cardiovascular risk factors or inflammatory markers. Stearic acid, on the other hand, was inversely correlated with blood cholesterol and triglycerides, but independently associated with hs-CRP, IL-6, and TNF-α. Conclusion Stearic acid is associated with inflammatory and endothelial dysfunction biomarkers in individuals with at least one cardiovascular risk factor.

Resumo Fundamento Vários estudos têm associado o consumo de ácidos graxos saturados (AGSs) com risco cardiovascular, mas ainda existem muitas controvérsias. A maioria desses estudos avaliou os efeitos do ácido palmítico sobre lipídios circulantes. O ácido esteárico geralmente apresenta um efeito neutro sobre os lipídios sanguíneos, mas faltam estudos clínicos avaliando sua relação com marcadores de inflamação e de disfunção endotelial. Objetivos Avaliar a associação de AGSs das hemácias (ácido palmítico e ácido esteárico) com biomarcadores inflamatórios e de disfunção endotelial circulantes. Métodos Estudo transversal que incluiu 79 adultos de ambos os sexos com pelo menos um fator de risco cardiovascular, mas sem eventos prévios (infarto agudo do miocárdio ou acidente vascular cerebral). Biomarcadores plasmáticos – lipídios, marcadores glicometabólicos, proteína C ultrassensível (PCR-us), Interleucina 6 (IL-6), Interleucina 10 (IL-10), Fator de Necrose Tumoral-α (TNF-α), Proteína quimioatraente de Monócitos 1 (MCP-1) – e ácidos graxos das hemácias (ácidos palmítico e esteárico) foram analisados. As associações foram avaliadas por análises de correlações e regressões lineares múltiplas, com significância estatística estabelecida em p<0,05. Resultados O ácido palmítico não apresentou associações com fatores de risco cardiovasculares ou com marcadores inflamatórios. Por outro lado, o ácido esteárico foi inversamente correlacionado com PCR-us, IL-6 e TNF-α, mas independentemente associado com PCR-us, IL-6, e TNF-α. Conclusão O ácido esteárico está associado com biomarcadores inflamatórios e disfunção endotelial em indivíduos com um ou mais fatores de risco cardiovascular.

RESUMO O feijão-caupi (Vigna unguiculata [L.] Walp.) é uma das mais importantes leguminosas produzidas em regiões tropicais e subtropicais do mundo, principalmente nos países em desenvolvimento da África, América Latina e Ásia. Para um grande segmento da população mundial é a principal fonte de proteínas, calorias, fibras alimentares, minerais e vitaminas. Possui ainda compostos bioativos, destacando-se os compostos fenólicos. É produzido no Norte e Nordeste, consumido também em outras regiões do país e apresenta grande importância para os agricultores que sobrevivem desta cultura. O objetivo do presente estudo foi identificar e quantificar os compostos fenólicos no feijão-caupi, cultivar BRS Xiquexique. Tal determinação permitirá conhecer características funcionais do feijão-caupi, como fonte de antioxidantes, o que será de primordial importância para agregar valor funcional e nutricional a este alimento e ampliar as formas de consumo. Os extratos foram analisados por CLAE em equipamento modelo LC-20AT, com injetor manual. Para as análises foram preparadas soluções padrões com os ácidos fenólicos puros, tais como: ácido gálico, quercetina, ácido cafeico, ácido clorogênico, ácido ferúlico, ácido p-cumárico, catequina e epicatequina. Foram identificados catequina (2,07 ± 0,329 mg 100 g-1), epicatequina (0,48 ± 0,130 mg 100 g-1), ácido gálico (67,19 ± 6,200 mg 100 g-1), ácido ferúlico (32,07 ± 0,753 mg 100 g-1) e ácido clorogênico (3,08 ± 0,489 mg 100 g-1) em concentrações importantes. Concluiu-se que a cultivar BRS Xiquexique contêm compostos funcionais, destacando-se o ácido gálico e o ácido ferúlico com maiores teores, comprovando o potencial antioxidante do feijão-caupi.

ABSTRACT Cowpea (Vigna unguiculata [L.] Walp.) is one of the most important legumes produced in tropical and subtropical regions throughout the world, especially in the developing countries in Africa, Latin America, and Asia. It is the main source of protein, calories, dietary fiber, minerals, and vitamins for a large segment of the world population. Cowpea is also a potential functional food with a range of bioactive compounds, including phenolic compounds. This legume is grown mainly in the North and Northeast regions of Brazil, but is also consumed in other regions, and is thus important for the farmers who depend on this crop for income. This study identified and quantified phenolic compounds in the cowpea cultivar BRS Xiquexique. Such quantification reveals the functional characteristics of cowpeas, mainly as a source of antioxidants, which will be essential to add value to this food and to expand its forms of consumption. The extracts were analyzed using an HPLC model LC-20AT, equipped with a manual injector. For the HPLC analysis, standard solutions were prepared with pure phenolic acids such as gallic acid, quercetin, caffeic acid, chlorogenic acid, ferulic acid, p-coumaric acid, catechin, and epicatechin. The major phenolic compounds identified were catechin (2.07± 0.329 mg 100 g-1), epicatechin (0.48 ± 0.130 mg 100 g-1), gallic acid (67.19 ± 6.200 mg 100 g-1), ferulic acid (32.07 ± 0.753 mg 100 g-1), and chlorogenic acid (3.08 ± 0.489 mg 100 g-1). We observed that the BRS Xiquexique cultivar contains functional phenolic compounds, especially gallic acid and ferulic acid, demonstrating the antioxidant potential of cowpea.

RESUMO O estudo de compostos antioxidantes em alimentos tem sido bastante difundido na atualidade, tendo em vista a magnitude da atuação destes auxiliando na prevenção de doenças e promoção da saúde, devido ao retardamento ou inibição dos danos oxidativos, sendo de suma importância a identificação destes antioxidantes para utilização em seres humanos. Este estudo teve por finalidade identificar e quantificar compostos antioxidantes em uma cultivar e em uma linhagem de feijão-caupi, tendo em vista sua potencial utilização na elaboração de novos produtos e funcionalidade dos antioxidantes. Foram estudados a cultivar de feijão-caupi BRS Tumucumaque e a linhagemPingo de Ouro 1-2. Os extratos foram analisados por CLAE em equipamento modelo LC-20AT, com injetor manual. Para as análises foram preparadas soluções padrões com os ácidos fenólicos puros, tais como: ácido gálico, quercetina, ácido cafeico, ácido clorogênico, ácido ferúlico, ácido p-cumárico, catequina e epicatequina. O ácido gálico foi o composto fenólico com maiores teores (45,4 ± 2,66 e 93,4 ± 1,25 mg/100 g) na cultivar BRS Tumucumaque e na linhagem Pingo de Ouro 1-2, respectivamente. Foram identificados também catequina (5,57 ± 0,34 e 6,48 ± 0,51 mg/100 g), epicatequina (8,67 ± 0,47 e 2,95 ± 0,17 mg/100 g), ácido ferúlico (11,1 ± 1,42 e 13,8 ± 0,55 mg/100 g), ácido clorogênico (2,39 ± 0,24 e 0,59 ± 0,28 mg/100 g) em concentrações importantes na cultivar BRS Tumucumaque e na linhagem Pingo de Ouro 1-2, respectivamente, sendo que o ácido cafeico (27,8 ± 2,99 mg/100 g) só foi identificado na cultivar BRS Tumucumaque. Concluiu-se que a linhagem e a cultivar estudadas apresentaram compostos antioxidantes que auxiliam na prevenção de doenças e manutenção da saúde, comprovando o potencial funcional do feijão-caupi.

ABSTRACT Dietary antioxidant compounds have been widely studied because of their ability to delay or inhibit oxidative damage, which allows them to play an important role in the prevention of diseases and the promotion of health. The identification and characterization of such compounds are required before their use in humans. This study aimed to identify and quantify antioxidant compounds in the cowpea cultivar, BRS Tumucumaque, and the cowpea strain, Pingo de Ouro 1-2, in view of their potential use in the development of new products with potent antioxidant activity. Here, we report the antioxidant activity and the phenolic compound content of the aforementioned cowpeas. The antioxidant extracts were analyzed by HPLC in a Shimadzu LC-20AT chromatograph model equipped with a manual injector using standard solutions of pure phenolic compounds, including gallic acid, quercetin, caffeic acid, chlorogenic acid, ferulic acid, . -coumaric acid, catechin, and epicatechin. Gallic acid was the phenolic compound with the highest level in both BRS Tumucumaque and Pingo de Ouro 1-2 (45.4 ± 2.66 and 93.4 ± 1.25 mg/100 g, respectively). Moreover, we identified and quantified catechin (5.67 ± 0.34 and 6.48 ± 0.51 mg/100 g, respectively), epicatechin (8.67 ± 0.47 and 2.95 ± 0.17 mg/100 g, respectively), ferulic acid (11.1 ± 1.42 and 13.8 ± 0.55 mg/100 g, respectively), and chlorogenic acid (2.39 ± 0.24 and 0.59 ± 0.28 mg/100 g, respectively). In contrast, caffeic acid was only identified in BRS Tumucumaque and quantified at 27.8 ± 2.99 mg/100 g. We conclude that Vigna unguiculata demonstrates functional potential, as both the strain and the cultivar contain antioxidant compounds that help in disease prevention and health maintenance.

Background: studies have investigated the relationship between the transition through menopause and cardiovascular diseases. White population, generally, have lower levels of traditional coronary heart risk factors, particularly dyslipidemia, hypertension, obesity, and diabetes, and lower rates of coronary heart disease mortality, than black population. Furthermore many studies have shown the cardioprotective and anti-inflammatory effects of omega-3 polyunsaturated fatty acids (eicosapentaenoic acid and docosahexaenoic acid) of marine origin. The aim of this study was to investigate the effect of omega-3 supplementation, combined or not with vitamin E, on oxidative biomarkers and lipid profiles in nonwhite and white women with dyslipidemia transitioning through menopause. Methods: a randomized, double-blind, placebo-controlled trial was conducted. Seventy-four eligible women were assigned to receive: fish oil, fish oil plus vitamin E and placebo for three months. At baseline, 45 and 90 days blood sample for biochemical variables and biomarkers of oxidative stress were taken. Socioeconomic and lifestyle variables were collected with standardized questionnaires. Results: after 90 days the fish oil plus vitamin E treated group had a significant decrease in total cholesterol and LDL-C. Furthermore, there was a decrease in anti- LDL- autoantibodies after 45 days. Plasma TBARS concentrations were increased after 90 days in the group receiving only fish oil when compared to the placebo and fish oil-vitamin E groups. All of the effects observed were independent of ethnic group. Conclusions: supplementation with fish oil and vitamin E reduced total cholesterol and LDL-C, but had opposite effects on oxidative stress compared to supplementation with fish oil alone.

Introducción: diversos estudios han investigado la relación entre la transición a la menopausia y las enfermedades cardiovasculares. Generalmente, la población de etnia blanca posee bajos niveles de factores de riesgo coronarios, particularmente dislipidemia, hipertensión, obesidad, diabetes y bajas tasas de mortalidad por enfermedades del corazón en comparación con la población de etnia negra. Además, varios estudios demostraron efectos cardioprotectores y antiinflamatorios provenientes de ácidos grasos poliinsaturados omega-3 (ácido eicosapentaenoico y ácido docosahexaenoico) de origen marino. El objetivo del estudio fue investigar el efecto de la suplementación de omega-3 combinado o no con vitamina E en biomarcadores oxidativos y perfiles lipídicos en mujeres blancas y no blancas con dislipidemia en transición hacia la menopausia. Métodos: fue realizado un estudio randomizado, duplo- ciego, placebo-controlado. Setenta y cuatro mujeres elegibles fueron escogidas para recibir: aceite de pescado, aceite de pescado con vitamina E y placebo durante tres meses. Fueron recogidas muestras de sangre en de referencia, 45 y 90 días para realizar exámenes bioquímicos y de biomarcadores para estrés oxidativo. Las variables socioeconómicas y de estilo de vida fueron recogidas por medio de cuestionarios estandarizados. Resultados: después de 90 días, el grupo tratado con aceite de pescado con vitamina E tuvo una disminución significativa para colesterol total y LDL-C. Además, hubo una disminución de anticuerpos anti-LDL después de 45 días. La concentración de plasma TBARS aumentó después de 90 días en el grupo que recibió solamente aceite de pescado, comparado con los grupos placebo y aceite de pescado con vitamina E. Todos los efectos observados fueron independientes del grupo étnico. Conclusiones: la suplementación con aceite de pescado y vitamina E redujo el colesterol total y LDL-C, pero tuvo un efecto opuesto en el estrés oxidativo comparado con la suplementación solamente con aceite de pescado.

The Brazilian Savannah, known as "Cerrado," has an extensive biodiversity, but it is under explored. Among the native vegetables is the jatobá-do-cerrado (Hymenaea stigonocarpa Mart.), a legume with great potential for exploration for its content of dietary fiber. Legumes are an important source of nutrient compounds, such as phenolic compounds and vitamins that have antioxidant properties. This study aimed at determining the chemical composition and antioxidant activity of the jatobá flour. The jatobá flour showed high fiber content (insoluble and soluble fiber 47.8 and 12.8 g.100 g- 1, respectively), significant amounts of carotenoids such as beta-carotene and lutein, and some minerals such as calcium: 145 mg.100 g- 1, magnesium: 125 mg.100 g- 1, and potassium: 1352 mg.100 g- 1. The jatobá flour extracted with different solvents (water, methanol, and acetone) exhibited antioxidant activity by the DPPH, FRAP, and ORAC methods. The solvent used in the extraction affected the total phenolic content and antioxidant activity. Acetone extraction produced the best results. Therefore, the jatobá flour is an ingredient that can be used to develop new products with properties that promote health.

A semente de linhaça vem sendo estudada por pesquisadores em todo o mundo; sua incorporação em produtos habitualmente consumidos pela população vem sendo estimulada devido a seu destacado valor nutricional. Objetivos: avaliar a composição da linhaça brasileira, analisar a estabilidade dos lipídios presentes na farinha de linhaça integral (WFF) ou na farinha parcialmente desengordurada (DFF), estocadas sob diferentes temperaturas, e investigar o efeito do processamento em pão contendo linhaça. A farinha de linhaça integral apresentou (g.100 g-1): 25,7 de fibra insolúvel, 10,7 de fibra solúvel, 38,9 de lipídios e 2,65 de lignana. A farinha parcialmente desengordurada apresentou 65% menos lipídios, 36% mais fibra e 56% mais lignana, comparado a farinha de linhaça integral. O perfil de ácidos graxos foi mantido em DFF. A composição da farinha parcialmente desengordurada permaneceu estável durante o armazenamento sob temperaturas ambiente, refrigeração e congelamento. O perfil de ácidos graxos foi similar no pão contando DFF após o crescimento da massa, o cozimento e a estocagem às temperaturas ambiente ou de refrigeração. Após a cocção, 89% do conteúdo de lignana foi mantido no pão. Os resultados demonstram que a linhaça brasileira parcialmente desengordurada, subproduto da extração lipídica, apresenta estabilidade a moagem e estocagem sob diferentes temperaturas. Assim, a farinha parcialmente desengordurada pode ser incorporada a pães para incrementar seu valor nutricional e funcional.

Flaxseed has been widely studied around the world; its incorporation into products habitually consumed by human populations has been stimulated due to its unique nutritional value. The objective of this study was to evaluate the chemical composition of Brazilian flaxseed, to analyze the stability of lipids present in whole flaxseed flour (WFF) or partially defatted flaxseed flour (DFF) stored under several temperatures, and to investigate the effect of bread making on a product containing flaxseed. Whole flaxseed flour presented (g.100 g-1) 25.7 of insoluble fiber, 10.7 of soluble fiber, 38.9 of lipids, and 2.65 of lignan. Defatted flaxseed flour presented 65% less lipids, 36% more fiber and 56% more lignan than whole flaxseed flour. The fatty acid profile was maintained in the defatted flaxseed flour, and it presented a stable composition during storage under ambient temperature, refrigeration, and freezing. The fatty acid profile was similar in the bread containing defatted flaxseed flour after dough development, baking, and storage at room temperature or refrigerated. After baking, 89% of the lignan content was kept in bread. Results show that Brazilian flaxseed has an interesting chemical composition, and that defatted flaxseed, by-product of lipid extraction, presents a good stability to grind and storage under several temperatures. Thus, defatted flaxseed flour can be incorporated in bread, increasing its nutritional and functional value.

Amaranth has attracted increasing interest over recent decades because of its nutritional, functional and agricultural characteristics. Amaranth grain can be cooked, popped, toasted, extruded or milled for consumption. This study investigated the effect of these processes on the antioxidant activity of amaranth grain. Total phenolic content and in vitro antioxidant activity were determined according to two methods: inhibition of lipid oxidation using the β-carotene/linoleic acid system and the antioxidant activity index using the Rancimat® apparatus. The processing reduced the mean total phenolics content in amaranth grain from 31.7 to 22.0 mg of gallic acid equivalent/g of dry residue. It was observed that the ethanol extract from toasted grain was the only one that presented a lower antioxidant activity index compared with the raw grain (1.3 versus 1.7). The extrusion, toasting and popping processes did not change the capacity to inhibit amaranth lipid oxidation (55%). However, cooking increased the inhibition of lipid oxidation (79%), perhaps because of the longer time at high temperatures in this process (100°C/10 min). The most common methods for processing amaranth grain caused reductions in the total phenolics content, although the antioxidant activity of popped and extruded grain, evaluated by the two methods, was similar to that of the raw grain. Both raw and processed amaranth grain presents antioxidant potential. Polyphenols, anthocyanins, flavonoids, tocopherols, vitamin C levels and Maillard reaction products may be related to the antioxidant activity of this grain.

As características nutricionais, funcionais e agrícolas do amaranto são responsáveis pelo aumento do interesse por este alimento nas últimas décadas. O grão pode ser cozido, estourado, torrado, extrusado ou moído para ser consumido. Foi avaliado o efeito destes processamentos na atividade antioxidante do grão de amaranto, através das determinações do teor de fenólicos totais e da atividade antioxidante in vitro por dois métodos: inibição da oxidação lipídica pelo sistema β-caroteno/ácido linoléico e índice de atividade antioxidante pelo aparelho Rancimat®. Os processamentos reduziram em média o teor de fenólicos totais do grão de amaranto de 31,7 para 22,0 mg de equivalentes de ácido gálico/g de resíduo seco. Observou-se que o extrato obtido por etanol do grão torrado foi o único a apresentar menor índice de atividade antioxidante (IAA) em relação ao grão cru (1,3 v 1,7). Os processos de extrusão, torração e explosão não alteraram a capacidade de inibição da oxidação lipídica (IOL) do amaranto (55%). Já o cozimento aumentou o IOL (79%), o que pode ter ocorrido devido ao maior tempo de processamento sob alta temperatura (100ºC/10min). Os métodos mais comuns de processamento do grão de amaranto ocasionaram redução do teor de fenólicos totais, no entanto a atividade antioxidante do estourado e do extrusado, avaliada pelos dois métodos, foi semelhante ao do grão cru. O grão de amaranto tanto cru como processado apresenta potencial antioxidante. Polifenóis, antocianinas, flavonóides, tocoferóis, vitamina C e compostos gerados na reação de Maillard podem estar relacionados à atividade antioxidante deste grão.

A gordura vegetal parcialmente hidrogenada tem sido utilizada na aromatização de snacks. Entretanto, o risco à saúde ocasionado pelo elevado consumo de ácidos graxos saturados e trans (AGT) vem estimulando o desenvolvimento de abordagens alternativas a essa gordura. Substituímos a gordura vegetal parcialmente hidrogenada (F) por óleo de canola (O) na aromatização de snacks. Snacks com diferentes níveis de O foram produzidos, embalados e armazenados em temperatura ambiente durante vinte semanas. Monitoramos o perfil de ácidos graxos, o teor de substâncias reativas ao TBA (TBARS), a força de cisalhamento e a aceitabilidade sensorial. A substituição total reduziu o teor de ácidos graxos saturados em 72,5%, em comparação aos snacks comerciais. Os snacks eram inicialmente isentos de AGT, porém, após 8 semanas, esses compostos surgiram, havendo aumento gradual durante o período de armazenamento. Entretanto, estes níveis mantiveram-se inferiores aos observados em snacks comercializados. Também foram observados baixos teores de TBARS e estabilidade da força de cisalhamento. Snacks aromatizados com F ou O foram igualmente bem aceitos durante as vinte semanas de armazenamento. É possível desenvolver snacks com teores reduzidos de ácidos graxos saturados e trans, estáveis durante o armazenamento, mantendo a elevada aceitabilidade sensorial típica deste tipo de produto.

Partially hydrogenated vegetable oil has been used in snack flavoring for its ability to entrap hydrophobic aroma compounds. However, increasing concerns about the health risks of saturated and trans fatty acids (TFA) consumption led to the development of alternative agents for this use. We studied the use of rapeseed oil (O) as a replacement for partially hydrogenated vegetable oil (F) in snack flavoring. Products with several different rapeseed oil contents were designed, packed, and then stored for twenty weeks at room temperature. Fatty acids compositions, TBA reactive substances (TBARS), shear strength and sensory acceptability were assessed throughout storage time. Total replacement reduced saturated fat by 72.5% in relation to market available snacks. TFA were initially absent in these products, but their production occurred spontaneously on the 8th week with gradual increase during storage up to levels still lower than those observed in commercially available snacks. Low TBARS levels and stability of shear strength during the twenty-week of storage were also observed. Snacks flavored with F or O were equally well accepted during the storage period. It is feasible to develop a storage stable snack with reduced saturated and trans fatty acid contents while maintaining the high sensory acceptability typical of this food product.

Com o objetivo de avaliar o efeito do beneficiamento sobre o valor nutricional do peixe mandim (Arius spixii) comercializado em Maceió-AL, determinaram-se nas suas formas in natura e beneficiada (salgado-seco) a composição centesimal, valor calórico, cloretos, perfil de ácidos graxos e colesterol, sendo também analisada a ocorrência de óxidos de colesterol. Os resultados obtidos para o mandim in natura e beneficiado, respectivamente, de umidade (70,13% e 40,31%), proteínas (51,73% e 38,07%, base seca), carboidratos (4,67% e 2,24%, base seca), calorias (486 kcal/100g e 367 kcal/100g, base seca), ácidos graxos (poliinsaturados 14,54% e 15,49%, ômega-3 8,51% e 6,51%), colesterol (82,66 mg/100g e 61,30 mg/100g) e óxidos (7-cetocolesterol 8,31 µg/g e 17,90 µg/g), permitiram concluir que o beneficiamento favoreceu alterações significativas no valor nutricional do mandim.

In an attempt to analyze how processing enhances the nutritional value of the mandim fish (Arius spixii) marketed in Maceió-AL, Brazil, the following nutritional components were determined in fresh and processed (salted-dried) fish: centesimal composition, calorie count, chloride, fatty acid and cholesterol profile. The presence of cholesterol oxides was also investigated. Respective results for fresh and processed mandim fish were: moisture (70.13% and 40.31%), proteins (51.73% and 38.07%, dried), carbohyrdrates (4.67% and 2.24%, dried), calories (486 kcal/100g and 367 kcal/100g, dried), fatty acids (polyunsaturared 14,54% and 15,49%, ômega-3 8,51% and 6,51%), cholesterol (82.66 mg/100g and 61.30 mg/100g) and oxides (7-ketocholesterol 8.31 µg/g and 17.90 µg/g). These figures clearly showed that processing led to significant change in the nutritional value of the mandim fish.

O feijão caupi é uma das principais culturas alimentares do Nordeste brasileiro. Para melhorar sua resistência contra pragas e produtividade, a nova cultivar (BRS-Milênio) foi obtida por melhoramento genético. Este trabalho objetivou caracterizar o potencial nutricional desta variedade, determinando-se a composição centesimal, o perfil de aminoácidos e ácidos graxos, o conteúdo de minerais e a atividade inibitória de tripsina. A semente contém (g.100 g-1): 24,5 de proteínas; 51,4 de carboidratos; 16,6 de fibra insolúvel e 2,7 de fibra solúvel; 2,6 de cinzas, tendo como principais minerais (mg.100 g-1): ferro - 6,8; zinco - 4,1; manganês - 1,5; fósforo - 510,0 e potássio - 1430,0. O teor de lipídios foi de 2,2%, e seu perfil de ácidos graxos apresenta 29,4% de saturados e 70,7% de insaturados. Foi estimado valor calórico de 323,4 kcal.100 g-1 de semente. Encontrou-se baixa atividade inibitória de tripsina (8,0 UIT.mg-1 de amostra). O perfil de aminoácidos foi favorável ao padrão de referência, exceto pela deficiência de sulfurados, sugerindo a necessidade da combinação desta leguminosa com outras fontes alimentares. Os resultados indicam que o feijão caupi possui atributos desejáveis como altos teores de energia, proteínas, fibras e minerais, baixa atividade inibitória de tripsina e, apesar de reduzido conteúdo lipídico, contém alta proporção de ácidos graxos insaturados.

Cowpea is one of the major food cultures of the northeastern region of Brazil. To improve its resistance against plagues and to increase its productivity, a new cultivar (BRS-Milênio) was obtained by genetic improvement. This study aimed at determining the proximate composition, amino acid and fatty acid profiles, mineral constituents and trypsin inhibitory activity of this cultivar. The seed presents (g.100 g-1): 24.5 protein, 51.4 carbohydrates, 16.6 insoluble fiber and 2.7 soluble fiber, 2.6 ash; major mineral constituents (mg.100 g-1) were: iron - 6.8, zinc - 4.1, manganese - 1.5, phosphorus - 510.0 and potassium - 1430.0. Lipid content was 2.2%, and its fatty acids profile: 29.4% saturated and 70.7% unsaturated. The caloric value was estimated as 323.4 kcal.100 g-1 of seeds. A low trypsin inhibitory activity was found (8.0 TIU.mg-1 of sample). The amino acid profile is in accordance with the reference amino acid standard, except for the sulfur amino acid deficiency, suggesting the need to encourage the combination of this bean with other food sources. Results suggest that cowpea presents high contents of energy, protein, dietary fiber, minerals and a low trypsin inhibitory activity. Although it contains low amounts of lipids, its composition presents a high unsaturated fatty acid profile.

O snack light foi desenvolvido através do uso de um substituto de gordura como veículo de aromatização, gerando um novo produto com redução calórica de até 47,5% em relação aos comercializados. Avaliou-se o impacto desta substituição nas características sensoriais do produto, através da comparação com um snack convencional. Não foi observada diferença significativa de textura. Foi observada diferença de cor (deltaE = 8,67), principalmente devido à luminosidade (deltaL = 7,79). O snack light apresentou elevada aceitabilidade sensorial (7,27 ± 1,3; 82,5% das notas foram > 7 em uma escala hedônica de 1 a 9) e não houve diferença significativa de aceitação entre os snacks. Porém, o produto convencional foi significativamente preferido em relação ao light (p < 0,05). Em uma pesquisa de opinião, 75% dos entrevistados, ao serem informados de sua composição, afirmaram que comprariam o snack light ao invés do convencional. A redução calórica e do teor de lipídios permite o uso das alegações snack light e isento de gordura, de acordo com a Legislação de vários países. Conclui-se que a utilização de substitutos de gordura na fabricação de snacks é tecnologicamente viável, resultando em um novo produto aceito sensorialmente e com grande potencial para substituir os tradicionais.

A light snack was developed using a fat replacer as a flavor fixative agent. The product presented a calorie reduction of up to 47.5% in comparison with products available on the market. The impact of this fat replacer on the sensory properties was determined by comparing this light snack to the traditional ones. No significant difference in texture was observed; however, there was a difference in color (deltaE = 8.67), due mainly to luminosity (deltaL = 7.79). The light snack presented high sensory acceptability (7.27 ± 1.3; 82.5% of grades were > 7 on 9-point hedonic scale); no significant difference in snack acceptability was observed. However, the traditional snack was significantly preferred in sensory terms (p < 0.05). In an opinion survey when the consumers were informed about snack composition, 75% of them said that they would buy the light snack instead of the traditional one. The caloric and fat reductions allow the use of the claims "light snack" and "fat free", in accordance with the legislation of various countries. We conclude that it is technologically possible to use a fat replacer in snack production, resulting in a sensory acceptable light snack with great potential to replace traditional ones.
