Development of W/O emulsion for encapsulation of “Pitanga” (Eugenia uniflora L.) leaf hydroethanolic extract: droplet size, physical stability and rheology

Abstract The low chemical stability under environmental conditions of “Pitanga” leaf hydroethanolic extract (PLHE) can limit its application in industrial scale. It is known that this extract has high antioxidant and antimicrobial activities and that it must be stored under special conditions or encapsulated into W/O emulsions. The objective of this research was to encapsulate PLHE in a W/O emulsion, analyzing the effect of the concentration of the emulsifier and phase ratios on its droplet size, physical stability and viscosity. In general, the droplet size and stability of the W/O emulsions were affected by the concentrations of emulsifiers and phase ratios. The emulsion with a 20/80 W/O ratio and 3 g PGPR/100 g oil was chosen as the most stable formulation because they presented well distributed droplet sizes (unimodal distribution), the lowest D3,2 (0.25 ± 0.02 μm), the highest physical stability at 60 °C and presented Newtonian behavior. In conclusion, the W/O emulsion is able to encapsulate PHLE and can be applied to thermal processed foods.

Resumo Um levantamento atualizado das plantas com sementes e análises relevantes acerca desta biodiversidade são apresentados. Este trabalho se iniciou em 2010 com a publicação do Catálogo de Plantas e Fungos e, desde então vem sendo atualizado por mais de 430 especialistas trabalhando online. O Brasil abriga atualmente 32.086 espécies nativas de Angiospermas e 23 espécies nativas de Gimnospermas e estes novos dados mostram um aumento de 3% da riqueza em relação a 2010. A Amazônia é o Domínio Fitogeográfico com o maior número de espécies de Gimnospermas, enquanto que a Floresta Atlântica possui a maior riqueza de Angiospermas. Houve um crescimento considerável no número de espécies e nas taxas de endemismo para a maioria dos Domínios (Caatinga, Cerrado, Floresta Atlântica, Pampa e Pantanal), com exceção da Amazônia que apresentou uma diminuição de 2,5% de endemicidade. Entretanto, a maior parte das plantas com sementes que ocorrem no Brasil (57,4%) é endêmica deste território. A proporção de formas de vida varia de acordo com os diferentes Domínios: árvores são mais expressivas na Amazônia e Floresta Atlântica do que nos outros biomas, ervas são dominantes no Pampa e as lianas apresentam riqueza expressiva na Amazônia, Floresta Atlântica e Pantanal. Este trabalho não só quantifica a biodiversidade brasileira, mas também indica as lacunas de conhecimento e o desafio a ser enfrentado para a conservação desta flora.
Abstract An updated inventory of Brazilian seed plants is presented and offers important insights into the country's biodiversity. This work started in 2010, with the publication of the Plants and Fungi Catalogue, and has been updated since by more than 430 specialists working online. Brazil is home to 32,086 native Angiosperms and 23 native Gymnosperms, showing an increase of 3% in its species richness in relation to 2010. The Amazon Rainforest is the richest Brazilian biome for Gymnosperms, while the Atlantic Rainforest is the richest one for Angiosperms. There was a considerable increment in the number of species and endemism rates for biomes, except for the Amazon that showed a decrease of 2.5% of recorded endemics. However, well over half of Brazillian seed plant species (57.4%) is endemic to this territory. The proportion of life-forms varies among different biomes: trees are more expressive in the Amazon and Atlantic Rainforest biomes while herbs predominate in the Pampa, and lianas are more expressive in the Amazon, Atlantic Rainforest, and Pantanal. This compilation serves not only to quantify Brazilian biodiversity, but also to highlight areas where there information is lacking and to provide a framework for the challenge faced in conserving Brazil's unique and diverse flora.

Análise térmica da carne de coelhos

O objetivo deste trabalho foi avaliar o efeito da adição de condimentos na carne de coelho, sobre a estabilidade térmica de suas proteínas miofibrilares. Retalhos de 24 músculos Longissimus dorsis foram moídos e misturados, para a obtenção de um lote homogêneo. Foram adicionados, em alíquotas dessa carne: 1,0; 2,0 ou 3,0% de sal; 2,5; 5,0 ou 7,5% de sacarose e 1,5; 3,0 ou 4,5% de ácido acético 3% em solução aquosa, e uma mistura perfazendo 3% de sal, 5% de sacarose e 3% da mesma solução de ácido acético. Após homogeneização manual, as amostras foram mantidas em repouso sob refrigeração, por 30 minutos. Alíquotas da ordem de 10mg foram usadas para análise térmica e o restante, para análises de pH, proteínas e umidade. As análises térmicas foram realizadas em um calorímetro diferencial de varredura DSC-TA2010, a 10ºC/min, entre 0 e 100ºC. As curvas de DSC da carne pura apresentaram endotermas nas temperaturas de (Td) 58,4(0,7ºC (miosina) e 78,2(0,2ºC (actina), envolvendo entalpia (DHd) de 17,5J/g de proteínas. O sal e o ácido acético desestabilizaram as proteínas, provocando redução da Td da miosina e actina, contrariamente à sacarose, que apresentou efeito estabilizante. A adição da mistura dos condimentos desestabilizou as proteínas miofibrilares. Apenas o ácido, adicionado acima de 1,5%, provocou desnaturação das proteínas.
The objective of this work was to evaluate the effect of some additives over the myofibrillar protein thermal stability of rabbit meat. Steaks of 24 Longissimus dorsis muscle were ground and mixed to obtain a homogeneous portion. Samples of this meat were added with: 1.0, 2.0, or 3.0% of salt; 2.5, 5.0, or 7.5% of saccharose and 1.5, 3.0 or 4.5% of acid acetic solution 3%, and a mixture with 3% salt, 5% saccharose and 3% of the same acid acetic solution. After manual homogenization, the samples were stored refrigerated for 30 minutes. The meat was analyzed for thermal behavior, pH, protein and water content. The thermal analysis was done with a differential scanning calorimeter DSC-TA2010, using samples of about 10mg, at 10ºC/min, between 0 and 100ºC. The DSC curves showed endothermic peaks (Td) at 58.4±0.7ºC (myosin) and 78.2±0.2ºC (actin), having enthalpy (DHd) of 17.5J/g of protein. The proteins were destabilized by the salt and by the acetic acid, leading to a reduction of myosin and actin Td, contrarily to the saccharose which showed a stabilizing effect. The addition of the mixture of additives destabilized the myofibrillar proteins. Only the acid, added above 1.5% caused protein denaturation.
