Abstract This study evaluated an intermittently aerated, fixed-bed, single-batch reactor, with mini BioBob© as biofilm media support, as an alternative treatment of craft brewery wastewater. In order to remove chemical oxygen demand (COD) and total nitrogen (TN), seven conditions were performed in a central composite experimental design (CCD) with different aeration times (1, 2 and 3 h in a 4 h cycle) and hydraulic retention times (HRT) (12, 16 and 20 h). The results showed that the removal of COD and TN were positively affected by increased aeration time and HRT. The condition that presented the best quality effluent was Condition No. 1 (20 h HRT and 3 h aeration), with 209 ± 28 mg COD L-1; 3.00 ± 0.15 mg TKN L-1 ; and 0.67 ± 0.11 mg NO3-N L-1. Kinetic assays showed that the highest values for the substrate removal rate constant, kCOD = 0.1774 h-1 were obtained with the longest aeration time (3 h). The most probable number (MPN) test showed a higher concentration of denitrifying bacteria (heterotrophic), 3.3 x 106, than for AOB and NOB bacteria (autotrophic), which were 4.9 x 103 and 2.7 x 103, respectively. Moreover, it was possible to verify that correcting the influent alkalinity with 7.14 mg CaCO3 for each 1 mg of TKN resulted in better process efficiency. It was concluded that COD and TN can be removed from craft brewery wastewater using an intermittently aerated, fixed-bed, single-batch reactor with mini Biobob© as biofilm media support.

Abstract The purpose of this paper was to evaluate the production of propionic acid from the fermentation of agroindustrial effluents using a Propionibacterium acidipropionici culture. The composition of the substrates was determined by using an experimental design of mixtures, resulting in 10 trials. The substrates were fermented in batch borosilicate glass reactors at a temperature of 35°C, initial pH of 6.5, and 20 mL.L-1 of inoculum suspension. The highest yield of propionic acid production, 0.79 g of product per g of substrate, was obtained with a substrate composed only of corn steep liquor, which showed a productivity of 5.20 mg.L-1h-1 and production of 0.40mL.L-1. These results showed that the corn steep liquor positively influenced performance and productivity. Although the production of acid did not reach high values, the results indicate that it is possible to produce propionic acid by a biotechnological route; however, further studies are required to adapt and optimise these results.

Abstract This study aimed to combine the nutritional advantages of whey and soybean by developing a type of chocolate beverage with water-soluble soybean extract dissolved in whey. Different concentrations of thickeners (carrageenan, pectin and starch – maximum level of 500 mg.100 mL-1) were tested by a simplex-centroid design. Several physicochemical, rheological, and sensory properties of the beverages were measured and a multi-response optimization was conducted aiming to obtain a whey and soybean beverage with increased overall sensory impression and maximum purchase intention. Beverages presented mean protein levels higher than 3.1 g.100 mL-1, a low content of lipids (< 2 g.100 mL-1) and total soluble solids ≥20 g.100 mL-1. Response surface methodology was applied and the proposed for overall impression and purchase intention presented R2=0.891 and R2=0.966, respectively. The desirability index (d-value=0.92) showed that the best formulation should contain 46% carrageenan and 54% pectin in the formulation. The formulation manufactured with this combination of thickeners was tested and the overall impression was 7.11±1.09 (over a 9-point hedonic scale) and the purchase intention was 4.0±1.3 (over a 5-point hedonic scale), thus showing that the proposed models were predictive.

Abstract Grape pomace, which is derived from the skin and seeds, is the residue from the production of grape juice and wine. It corresponds to up to 20% of the total volume and it contains a high level of dietary fibers and bioactive compounds. In the Brazilian market, there is no product containing grape pomace as a replacement for conventional wheat flour. Thus, this study aimed to assess the effects of whole-wheat flour and organic Bordeaux grape pomace (Vitis labrusca L.) on the sensory, physicochemical and functional properties of cookies using response surface methodology (RSM). The regression models indicated that the addition of whole-wheat and organic grape pomace decreased (p < 0.0001) the water activity and significantly increased the content of fibers, hardness, brittleness, antioxidant activity and total phenolic content of the cookies. The RSM models presented suitable R2 and R2adj values (> 65% of explained data variability), except for brittleness. The sensory evaluation results revealed that no significant differences (p > 0.05) were observed for the cookie samples, implying that the addition of grape pomace and whole-wheat flour did not negatively affect the preference of cookies.

The main objective of this study was to characterise the cassava bagasse and to evaluate its addition in composites. Two cassava bagasse samples were characterised using physicochemical, thermal and microscopic techniques, and by obtaining their spectra in the mid-infrared region and analysing them by using x-ray diffraction. Utilising sorption isotherms, it was possible to establish the acceptable conditions of temperature and relative humidity for the storage of the cassava bagasse. The incorporation of cassava bagasse in a low-density polyethylene (LDP) matrix was positive, increasing the elasticity modulus values from 131.90 for LDP to 186.2 for 70% LDP with 30% SP bagasse. These results were encouraging because cassava bagasse could serve as a structural reinforcement, as well as having environmental advantages for its application in packaging, construction and automotive parts.

Este trabalho teve por objetivos verificar as características físicas, mecânicas, contaminação por Fusarium sp e por zearalenona e suas relações, em vinte variedades crioulas de milho da região sul do Brasil. Verificou-se que das amostras analisadas, 60% foram consideradas como possuidoras de endosperma do tipo duro e 40% com endosperma do tipo intermediário. As variáveis físicas e mecânicas se correlacionaram, indicando que quanto maior a proporção de endosperma vítreo, mais denso e maior a força necessária até a ruptura do grão. A contaminação por Fusarium sp esteve entre 5,5% e 24,75% nos grãos analisados, correlacionando-se positivamente com o índice de flotação, indicando que as variedades crioulas de milho com uma maior proporção de endosperma macio podem apresentar uma maior contaminação por Fusarium sp, sugerindo-se a utilização de variedades crioulas com a textura do endosperma predominantemente vítrea. A presença de zearalenona foi verificada em 75% das amostras, em concentrações que variaram de 50 a 640 µg kg-1.

This work had as objectives the study of the physical and mechanical characteristics of maize kernels in relation to the contamination by Fusarium sp and by zearalenone in twenty landraces of maize from the southern region of Brazil. From the analyzed samples, 60 % has been considered to have a hard endosperm type and 40 % an intermediary one. A correlation between the physical and mechanical variables was observed as an indication that the higher is the proportion of hard endosperm, more dense will be the kernel and more force for its rupture will be necessary. The level of contamination by Fusarium sp was between 5.5 and 24.75% among the analyzed grains, correlating positively with the flotation index, indicating that the landraces of maize with a softer endosperm can present a higher contamination by this genus. The presence of zearalenone was verified in 75 % of the samples, in concentrations varying from 50 to 640 µg kg-1.

Avaliou-se a eficiência do tratamento anaeróbio de efluente de matadouro de suínos e bovinos em dois conjuntos de biodigestores anaeróbios de duas fases, operados com e sem controle de temperatura. O conjunto A, formado por um reator acidogênico com recirculação e um filtro biológico de fluxo ascendente, foi operado a temperatura ambiente e o conjunto B, formado por um reator de fluxo ascendente e um filtro biológico de fluxo ascendente, foi mantido a 32°C. Os reatores metanogênicos apresentaram remoção de DQO acima de 60 % para os TRHs de 20, 15, 10, oito, seis, quatro e dois dias. Quando o TRH destes reatores foi mudado para um dia observou-se uma queda da porcentagem de remoção de DQO para 50 %. As variações de temperatura parecem não ter prejudicado o desempenho dos reatores do conjunto A.

The effectiveness of the anaerobic treatment of effluent from a swine and bovine slaughterhouse was assessed in two sets of two-phase anaerobic digesters, operated with or without temperature control. Set A, consisting of an acidogenic reactor with recirculation and an upflow biological filter as the methanogenic phase, was operated at room temperature, while set B, consisting of an acidogenic reactor without recirculation and an upflow biological filter as the methanogenic phase, was maintained at 32°C. The methanogenic reactors showed COD (Chemical Demand of Oxygen) removal above 60% for HRT (Hydraulic Retention Time) values of 20, 15, 10, 8, 6, 4, and 2 days. When the HRT value in those reactors was changed to 1 day, the COD percentage removal decreased to 50%. The temperature variations did not have harmful effects on the performance of reactors in set A.

A finalidade deste estudo foi caracterizar os óleos extraídos das sementes de limão rosa e limão siciliano, como aproveitamento de resíduos industriais. Foram determinados os índices de iodo, ácidos graxos livres (AGL,% em ácido oléico) e teor de peróxidos. Foram realizadas análises termoanalíticas (termogravimetria, TG; termogravimetria diferencial, DTG e calorimetria diferencial exploratória, DSC); espectroscópicas (infravermelho e ultravioleta) e cromatográficas (cromatografia gasosa). Foram identificados no óleo das sementes de limão rosa os seguintes ácidos graxos na forma de ésteres metílicos: caprílico (0,90%), palmítico (21,40%), esteárico (2,60%), oléico (21,20%), linoléico (43,00%), linolênico (7,60%) e araquídico (0,20%) e no óleo das sementes de limão siciliano: caprílico (1,00%), mirístico (0,10%), palmítico (19,60%), esteárico (3,00%), oléico (28,60%), linoléico (34,40%), linolênico (10,00%) e araquídico (0,20%). Os resultados indicaram que ambos os óleos apresentam estabilidade térmica até 250ºC, composição química semelhante e alto teor de ácidos graxos insaturados (71,80 e 73,00%). Pela composição de ácidos graxos também foi possível determinar a provável composição em triacilgliceróis dos óleos. Os resultados mostraram que os óleos apresentam características semelhantes a óleos comestíveis de boa qualidade.

The purpose of this study was to characterize the oil extracted from rangpur lime and "Sicilian" lemon seeds. Iodine, peroxide values, as well as free fatty acid percent (FFA%) expressed as oleic acid were accomplished. The thermal gravimetric analysis, TG; differential thermal gravimetric, DTG; differential scanning calorimetry analysis, DSC; infrared and ultraviolet spectroscopic and gas chromatographic analysis were also determined. In the rangpur lime seed oil, the following fatty acids, as methyl esters were identified: caprilic (0,90%), palmitic (21,40%), stearic (2,60%), oleic (21,20%), linoleic (43,00%), linolenic (7,60%) and araquidic (0,20%) and in the Sicilian lemon seed oil: caprilic (1,00%), myristic (0,10%), palmitic (19,60%), stearic (3,00%), oleic (28,60%), linoleic (34,40%), linolenic (10,00%) and araquidic (0,20%). The results indicate that both oils present thermal stability until 250ºC, as well as analogous chemical composition and high contents of unsaturated fatty acids (UFA, 71,80 and 73,00%). With the fatty acid composition, it was possible to determine the triacylglycerol composition of both oils. The results indicated that the oils show characteristics analogous to the edible oils with good quality.

Um dos resíduos gerados no processamento da mandioca (Manihot esculenta) é a manipueira, passível de tratamento por biodigestão anaeróbia. Este trabalho objetivou estudar o processo de partida de um biodigestor tipo plug-flow, tratando manipueira de duas maneiras: diminuindo-se gradativamente o tempo de retenção hidráulica (TRH) até se chegar ao tempo pré-estabelecido, quatro dias; ou mantendo-se o TRH fixo em quatro dias e aumentando-se gradativamente a concentração do afluente. O biodigestor, com capacidade 1980 mL, foi mantido a temperatura de 32ºC ± 1. Empregou-se como substrato manipueira e ajustou-se o pH entre 5,5 e 6,0. A primeira etapa foi caracterizada empregando-se TRH de 16,6; 13,6; 11,6 e 9,6 dias e 3,1; 2,0; 2,3 e 2,9 g DQO L-1 d-1 de carga orgânica, respectivamente. Na segunda etapa manteve-se TRH fixo, 4 dias, porém cargas orgânicas de 0,48, 0,86, 1,65 e 2,46 g DQO L-1 d-1. Determinaram-se no afluente e efluente, sólidos totais (ST) e sólidos voláteis (SV), demanda química de oxigênio (DQO), alcalinidade e acidez volátil. Na primeira etapa, melhores resultados foram observados trabalhando com TRH 9,6 dias e carga orgânica 2,9 g DQO L-1 d-1, quando houve redução de DQO, ST e SV de 60%, 44% e 60%, respectivamente. Na segunda etapa o TRH de 4 dias apresentou melhores resultados empregando-se carga orgânica de 0,86 g DQO L-1 d-1, houve redução de 71%, 58% e 79% de DQO, ST e SV, respectivamente. A partida do biodigestor plug-flow tratando manipueira, pode ser realizada tanto diminuindo-se o TRH, quanto mantendo-o fixo e aumentado-se a concentração do afluente.

Manipueira, wastewater of cassava (Manihot esculenta) processing, can be treated by anaerobic biodigestion. To study the start-up process of a plug-flow digester for manipueira treatment, this work consisted of two stages: gradual decrease of the hydraulic retention time (HRT) to the preset time of 4 days or maintaining a fixed HRT of 4 days with gradual increase of the substrate concentration. A digester of 1980 mL capacity was opperated, at constant temperature (32 ± 1º C), with substrate pH corrected between 5.5 and 6.0. The first stage had durations of 16.6; 13.6; 11.6; and 9.6 days and the organic loads were 3.1; 2.0; 2.3; and 2.9 COD L-1 d-1, (chemical oxigen demand) respectively. The second stage was characterized by a fixed HRT (4 days) and organic loads of 0.48; 0.86; 1.65; and 2.46 g COD L-1 d-1. Total solids (TS), volatile solids (VS), COD, alkalinity and volatile acidity were determined in the substrate and in the effluent. During the first stage, the HRT of 9.6 days and organic load of 2.9 g COD L-1 d-1 resulted in the best performence; reductions in COD, total and volatile solids were 60, 44 and 60%, respectively. During the second stage, with a 4-day HRT, the best results were achieved with the 0.86 g COD L-1 d-1 organic load, which provided reductions in COD, total and volatile solids of 71, 58 and 79%, respectively. The start-up of the plug-flow digester for manipueira treatment can be made by gradually by decreasing the HRT, or fixing HRT and increasing substrate concentration.

Um biodigestor anaeróbio de duas fases foi utilizado para se analisar a produção de metano com diferentes cargas de entrada de manipueira. A fase acidogênica foi realizada em processo de batelada e a metanogênica em biodigestor anaeróbio de fluxo ascendente e leito fixo com alimentação contínua. As cargas orgânicas de entrada variaram de 0,33 a 8,48 gDQO (Demanda Química de Oxigênio)/L.dia. A maior porcentagem de metano encontrada foi de 80,9%, com carga orgânica de 0,33g e a menor, 56,8%, obtida com 8,49gDQO/L.d. A maior taxa de redução de DQO foi de 88,89%, obtida com carga orgânica de 2,25g e a menor, 54,95%, com 8,48gDQO/L.d. Analisando-se os dados apresentados verificou-se que a biodigestão anaeróbia pode ser conduzida, pelo menos, de duas maneiras, ou seja, para produção de energia (metano) ou para redução de carga orgânica. A carga orgânica de entrada deve ser calculada em função do objetivo a ser alcançado com a biodigestão anaeróbia.

A two-phase anaerobic biodigestor was employed in order to analyze methane production with different manipueira organic loading rates. The acidogenic phase was carried out in a batch process whereas the methanogenic in an up-flow anaerobic fixed bed reactor with continuous feeding. The organic loading rates varied from 0.33 up to 8.48g of Chemical Demand Oxygen (COD)/L.day. The highest content of methane, 80.9%, was obtained with organic loading rate of 0.33g and the lowest, 56.8%, with 8.48gCOD/L.d. The highest reduction of COD, 88.89%, was obtained with organic loading rate of 2.25g and the lowest, 54.95%, with 8.48gCOD/L.d. From these data it was possible to realize that anaerobic biodigestion can be managed in at least two ways, i.e., for energy production (methane) or for organic loading reduction. The organic loading rate should be calculated as part of the purpose of the treatment to be accomplished.
