Abstract The generation of agroindustrial waste has become a serious environmental problem, which conflicts with the need for sustainability sought by modern agriculture. An alternative that helps minimizing these effects is the use of residues, such as fruit peel, in food production. The objective of this study was to evaluate the viability of the mesocarp of the white-fleshed red pitaya (Hylocereus undatus) in the preparation of jellies, verifying the influence of different percentages of pulp replacement per mesocarp (0, 20, 40 and 60%) on the physicochemical, microbiological, and sensorial characteristics of the final products. The jellies presented good acceptability among consumers, with the 60% substitution level being the most accepted. Besides the mesocarp not altering the flavor of the jellies, its use increases the attractiveness to the consumer in addition to contributing to cost reduction and environment preservation.

Abstract This study evaluated the impact of processing, packages (amber and transparent glass jars), and storage time on the stability of the bioactive compounds (total phenolic compounds and vitamin C), and antioxidant activity of mangaba jelly. Jelly processing, significantly (p < 0.05) decreased the bioactive compounds and antioxidant activity. The storage time, significantly (p < 0.05) influenced all the variables studied in this work, although they were not affected by packages. A significant decrease of the bioactive compounds and antioxidant activity was observed during the jelly storage. HPLC-DAD/UV-Vis analyses allowed to identify 10 phenolic compounds, including flavonoids and non-flavonoids, and among these, quercetin and catechin were the major compounds. After processing, all these compounds decreased significantly (p < 0.05), except for the gallic acid and the p-coumaric acid, which presented an increasing tendency. During jelly storage, only gallic acid, caffeic acid, catechin, and rutin were affected. Despite the reduction in the antioxidant activity and bioactive compounds studied, mangaba jelly retained good levels of them and may be considered a potential novel functional food.

Abstract The objective herein was to evaluate the effect of processing, packaging type (with and without exposure to light) and storage time on the quality of functional attributes of jelly prepared from curriola pulp. The experimental design was a completely randomized 2 × 5 factorial design, with two levels of packaging (transparent and amber) and five storage periods (0, 3, 6, 9 and 12 months). In general, the processing of curriola pulp determined a slight increase in phenolic compounds and antioxidant activity and a reduction in vitamin C content of freshly prepared jelly. The amber package and storage time promoted higher retention of bioactive compounds, mainly gallic acid, besides reducing the percentage of jelly oxidation, determined by the β-carotene / linoleic acid antioxidant method. A reduction in phenolic compounds and vitamin C was observed, which caused a reduction in the antioxidant capacity of curriola jelly. Of the five phenolic compounds identified in freshly prepared curriola jelly, gallic acid was identified as the major compound. In addition, the use of amber packaging, which prevents the incidence of light, may favor the maintenance of bioactive compounds during storage period of curriola jelly under environmental conditions.

Abstract The objective of this study was to prepare a jelly with the pulp of curriola as raw material and evaluate the effect of processing, type of glass packaging (transparent and amber) and storage time on the quality of the jelly by means of physical (color), chemical (proximal composition, total soluble solids, titratable acidity and pH), microbiological (coliforms at 35 °C and 45 °C, filamentous fungi and Salmonella sp.) and sensorial analyses (sensory acceptance and purchase intent). For this, the raw material and the freshly prepared jelly were compared and a completely randomized design in factorial 2 x 5 was used. There were two levels of light exposure (transparent packaging and amber packaging) and five storage times (0, 3, 6, 9 and 12 months), with four replicates. Processing affected all physical, chemical and microbiological characteristics of the freshly prepared jelly. Between the two factors studied, only the storage time significantly influenced the jelly quality, except protein, ash, dietary fiber content and taste and purchase intention. According to the microbiological analysis, the product is within the legislated recommendations. It was well accepted sensorially and can be kept under ambient conditions and still maintain its durability for up to twelve months.

RESUMO Campomanesia rufa (O. Berg) Nied. é uma espécie nativa do Cerrado que apresenta grande potencial comestível. No entanto, é uma espécie “em perigo de extinção”, segundo a União Internacional para a Conservação da Natureza (IUCN). Não existe informação técnica e científica sobre a espécie, demonstrando a importância das pesquisas. O presente trabalho teve como objetivo a caracterização físico-química de frutos imaturos e maduros de C. rufa. Os frutos apresentaram alteração na coloração de verde (b * = 25.11, h = 122.43) para verde amarelado (b * = 34.26, h = 115.73), aumento na massa (6.54 g para 10.88 g), diâmetro (23.76 mm a 28.03 mm) e sólidos solúveis (8.00 a 10.80%). Os frutos apresentaram altos teores de pectina total (1246.35 mg 100 g-1) e solúvel (195.93 mg 100 g-1), alto teor de água (78.86 g 100 g-1), baixo valor de pH (3.40) e alto ácido cítrico conteúdo (1.2%). No entanto, os frutos apresentaram baixo teor de proteína (0.81 g 100 g-1), teor de lipídios e baixo valor calórico (64.76 kcal 100 g-1). Os frutos apresentaram valores significativos de carotenóides, compostos fenólicos (312.47 mg 100 g-1), vitamina C (263.60 mg 100 g-1) e boa atividade antioxidante in vitro (1862.81 µM g-1). Os resultados obtidos indicam que os frutos de C. rufa apresentam composição semelhante aos frutos de outras espécies de Campomanesia, e suas propriedades biológicas devem ser investigadas adicionalmente em condições in vivo.

ABSTRACT Campomanesia rufa (O. Berg) Nied. is a native Cerrado species that presents great edible potential. However, it is a species “in danger of extinction” as recommended by the International Union for the Conservation of Nature (IUCN). No technical and scientific information about the species exists, thus demonstrating the importance of its research. The present work aimed at the physical and chemical characterization of immature and mature C. rufa fruits. The fruits showed a change in coloration from green (b * = 25.11, h = 122.43) to yellowish-green (b * = 34.26 , h = 115.73), an increase in mass (6.54 g to 10.88 g), diameter (23.76 mm to 28.03 mm) and soluble solids (8.00 to 10.80%). The fruits presented high levels of total (1246.35 mg 100 g-1) and soluble pectin (195.93 mg 100 g-1), high water content (78.86 g 100 g-1), low pH value (3.40), and high citric acid content (1.2%). However, the fruits had low protein (0.81 g 100 g-1), lipid contents, and low caloric values (64.76 kcal 100 g-1). The fruits presented significant values of carotenoids, phenolic compounds (312.47 mg 100 g-1), vitamin C (263.60 mg 100 g-1) as well as good in vitro antioxidant activity (1862.81 µM g-1). The results obtained indicate that C. rufa fruits showed a similar composition to the fruits of other Campomanesia species, and their biological properties should be investigated additionally under in vivo conditions.

RESUMO A Mangaba, fruto exótico do cerrado brasileiro, é muito apreciada por suas características sensoriais peculiares. Aqui, objetivamos avaliar o perfil sensorial da polpa de mangaba submetida a três tratamentos (polpas não pasteurizadas e pasteurizadas; congeladas por ar estático e ar forçado; armazenadas congeladas por zero, 4, 8 e 12 meses). Foram aplicados os seguintes testes sensoriais: dominância temporal das sensações (TDS) (identificar sensações dominantes do sabor ao longo do tempo de consumo), escala ideal (identificar a concentração ideal de sacarose a ser adicionada ao néctar) e teste de aceitação (avaliar o efeito dos tratamentos na aceitação do consumidor). O TDS, identificou o gosto ácido na maioria dos tratamentos, combinado com a identificação de um sabor ruim na maioria das polpas a partir de 8 meses de armazenamento congelado. A escala ideal determinou que 87,8 g / L de sacarose seja adicionada ao néctar de mangaba. Os métodos de congelamentos não influenciaram a aceitação das polpas. A pasteurização favorece maior aceitação da polpa de mangaba por até 8 meses, no entanto, aos 12 meses de armazenamento, os tratamentos ainda apresentam boa aceitação sensorial.

ABSTRACT The Mangaba, an exotic fruit of the Brazilian Cerrado, is very appreciated for its peculiar sensory characteristics. Here we aimed to evaluate the sensory profile of mangaba pulp subjected to three treatments (unpasteurized and pasteurized pulps; frozen by static air and forced air; stored frozen for zero, 4, 8 and 12 months). The following sensory tests were applied: temporal dominance of sensations (TDS) (identify and check the dominant sensations of flavor over time of consumption), ideal scale (identify optimal concentration of sucrose to be added in nectar) and acceptance test (to evaluate the effect of treatments on consumer acceptance). By TDS analyses, a sour taste was reported for most treatments, combined with the identification of a bad flavor in most pulps from 8 months of frozen storage. The ideal scale determined that 87.8 g/L sucrose should be added to the mangaba nectar. The frozen methods by static air or forced air did not significantly influence the sensory acceptance of the mangaba pulp. Pasteurization favors high mangaba pulp acceptance for up to 8 months, however, by 12 months of storage, treatments still have good sensory acceptance.

ABSTRACT The bioactive compounds and in vitro antioxidant activity of jabuticaba fruits var. Pingo de mel were evaluated during their physiological development. The fruits were harvested ten days after anthesis until maturity, at intervals of four days between collections. The period between anthesis and maturity was 34 days. Higher phenolics levels, hydrolysed tannins, and antioxidant activity were observed in 10 days after anthesis, while vitamin C contents were higher throughout the ripening process. At the end of development (34 days), higher levels of vitamin C and lower hydrolysed tannin were observed. It is known that the lower the hydrolysed tannins, the better the sensory characteristics of the fruit, and considering the benefits of vitamin C, it is necessary to harvest the jabuticaba fruits var. Pingo de mel in 34 days after anthesis for better use of these compounds.

Abstract The objective of this study was to analyze the effect of different calcium chloride concentrations on the post-harvest conservation of jabuticaba variety Pingo de Mel at different storage temperatures. The fruit were collected 30 days after the anthesis and subjected to immersions in calcium chloride solution at different concentrations (0%, 2%, 4%, and 6%) for 30 minutes at room temperature. Then, the fruit were dried and packed in polypropylene bags and incubated in a chamber at different temperatures (6 °C, 12 °C, and 25 °C). Samples were analyzed at time 0 and every two days, up to 12 days of storage. No effect of different calcium chloride concentrations was observed in the fruit characteristics at different storage temperatures over time. During storage, an increase of soluble and total pectin contents, antioxidant activity, CO2, total sugars, acidity, and weight loss was observed. Higher storage temperatures affected both the increase in weight loss, pH, and O2 production and the reduction of vitamin C content. Refrigeration was important for the post-harvest conservation of jabuticaba variety Pingo de Mel , once the fruit stored at 6 °C suffered minor variations with improvements or little changes during the 12 days.

Abstract The objective of this study was to characterize jabuticaba fruits for their proximate composition, minerals profile, and predominant sugars during fruit physiological development. The fruits were harvested ten days after anthesis (DAA) until maturity, at intervals of four days between collections. The period between anthesis and maturity was 34 days. An increase in moisture was observed, as for protein and lipids up to 18 DAA, with subsequent reduction until ripening, while an opposite behavior was observed for ash and carbohydrates levels. In general, minerals decreased throughout the fruit development. Regarding the carbohydrates profile, fructose showed the highest concentration, followed by glucose and sucrose, respectively, with an increase during ripening for all sugars. Whereas the sweet taste of fruit is a major factor for both consumption in natura and processing, we observed that jabuticaba fruits harvested 34 days after anthesis presented the best results.

RESUMO O estádio de abertura floral na colheita e o uso de técnicas pós-colheita, como o revestimento das inflorescências com cera de carnaúba, podem influenciar na manutenção da qualidade para comercialização. Assim, objetivou-se avaliar o conteúdo de carboidratos em inflorescências de bastão-do-imperador colhidas em dois diferentes estádios de abertura e tratadas com diferentes concentrações da cera de carnaúba. As inflorescências foram colhidas com brácteas semiabertas (brácteas basais iniciando seu processo de expansão) e abertas (brácteas basais totalmente expandidas e abertura das brácteas menores do interior da inflorescência) e receberam a aplicação de cera de carnaúba nas concentrações 0,75%; 1,5% ou 3,0%, além de um tratamento controle, sem aplicação da cera. Após o tratamento, as hastes florais foram mantidas a 16 e 21 ° C por 20 dias. Ao longo do período de armazenamento realizaram-se cinco amostragens de brácteas (brácteas externas e internas separadamente – em inflorescências abertas; brácteas externas e internas em conjunto – em inflorescências semiabertas), a cada três dias para avaliação dos teores de açúcares solúveis totais e amido. Os teores de açúcares solúveis totais e amido diferiram entre os diferentes tipos de brácteas coletadas e ao longo do período de armazenamento avaliado, podendo indicar uma remobilização de reservas. A concentração de 3,0% de cera de carnaúba proporcionou um maior teor de açúcares solúveis totais, entretanto esse teor não interfere na longevidade do bastão-do-imperador nos dois estádios de abertura floral avaliados.

ABSTRACT Floral opening stage during harvest and use of postharvest techniques, such as inflorescence coating with carnauba wax, may influence quality maintenance for commercialization. The aim was to evaluate the carbohydrate content of torch ginger inflorescences harvested at two different opening stages and treated with different concentrations of carnauba wax. The inflorescences were harvested with semi-open (basal bracts beginning their expansion process) and open bracts (fully expanded basal bracts and opening of the smaller bracts on interior of the inflorescence) and received the application of carnauba wax at concentrations of 0.75%; 1.5% or 3.0%, in addition to a control treatment, without wax application. After the treatment, the floral stems were maintained at 16 and 21 °C for 20 days. During the storage period, five bracts samples (external and internal bracts separately - in open inflorescences, external and internal bracts together - in semi-open inflorescences) were carried out every three days for evaluation of total soluble sugars and starch content. Contents of total soluble sugars and starch differed between the different types of bracts collected and throughout the storage period evaluated, and could indicate a remobilization of reserves. The concentration of 3.0% carnauba wax induced higher total soluble sugar content. However, this content does not affect the longevity of torch ginger at the two evaluated floral opening stages.

Abstract Maroleiro (Annona crassiflora Mart), belonging to the family of Annonaceae is a typical specie of the Cerrado and has occurred in most states. For fruit characteristics “sui generis”, with significant nutritional value. This study aimed to characterize the marolo (Anonna crasiflora Mart) during fruit development, through the evaluation of its proximal and mineral composition. The fruits 2012/2013 season, were picked to 12Km from the city of Itumirim, southern Minas Gerais, in intervals of 20 days from anthesis to maturity, and the first fruits were harvested 60 days after anthesis. The flowering marolo began in late September 2012, with fruiting initially observed at the end of October, with peak production at the end of February and beginning of March 2013 The fruits were harvested in the morning and carried to the laboratory, where followed up the moisture, ether extract, protein, ash, fiber and high sugar fraction beyond mineral quantification of them. During development reductions in moisture content and protein increments of ether extract, crude fiber and high sugar fraction and an oscillation in the mineral along the developmental stages was observed.

ABSTRACT The aim of this study was to analyze the effect of colored-shade nets on the physicochemical characteristics of physalis in subtropical area. The experimental design was the randomized blocks with a 4 × 5 factorial, being four species of physalis (Physalis peruviana, P. pubescens, P. minima and P. ixocarpa) and four net colors (white, blue, red and black), besides the control under full sun. Titratable acidity (TA), pH, vitamin C, soluble solids (SS), SS/TA relation, total phenolics, anthocyanins and antioxidant capacity were evaluated. It was observed that P. peruviana and P. pubescens have more acid fruits, and P. minima shows vitamin C content higher than the other species. In general, fruits of P. peruviana and P. pubescens have better quality when grown in white, blue or black shade net; fruits of P. minima are physicochemically superior when produced under full sun or under white or blue shade net; finally, fruits of P. ixocarpa have low quality when produced under black net.

Abstract The objective of this work was to characterize promising fruit crops and to explore opportunities for the sustainable and commercial use of flours obtained from fruits as an ingredient in snack bars. The fruit selected was Jeriva, which grow from north to eastern Brazil, and can be found in the Savanna biome. The fruit flour was obtained from dehydrated pulps and the proximate composition, dietary fiber, vitamin C, % scavenging free radicals, mineral composition, pH, ºBrix, titratable acidity and sensory analysis were determined. The flour was incorporated into the formulation by partial substitution of the standard ingredients of snack bars. The presence of increasing amounts (up to 20%) of Jeriva fruit flour resulted in sensory accepted snack bars, with 7.02 average in the scores evaluated, without significant differences among the formulations and significantly increased the protein at 7.12%, vitamin C 40.81 mg.g-1 and fiber contentes showed values at 6.66% for dietary fiber. Moreover, the results of free radical scavenging confirmed the greater antioxidant activity proportional to the increment of flour. Therefore, Jeriva fruit flour could be an alternative sensorily acceptable, for obtaining of snack bars.

RESUMO O cambucizeiro (Campomanesia phaea), pertencente à família Myrtaceae, é uma planta nativa da Mata Atlântica brasileira. A descrição das características dos frutos de cambucizeiro é importante para subsidiar novos trabalhos de melhoramento genético e sua exploração comercial, principalmente no que tange ao processamento dos frutos. O presente trabalho teve como objetivo realizar a caracterização morfológica e química de frutos de cambucizeiro. Cinquenta e oito acessos, oriundos de diferentes locais da Mata Atlântica e Serra do Mar paulista, foram coletados, propagados por sementes e um exemplar de cada acesso encontra-se no Núcleo de Produção de Mudas de São Bento do Sapucaí (SP). Quarenta frutos de cada acesso foram coletados no mês de maio e submetidos às seguintes análises: diâmetro longitudinal e transversal, massa fresca total dos frutos, número e massa das sementes, sólidos solúveis totais, % ácido cítrico, ratio, firmeza, vitamina C e coloração. A conformidade dos frutos varia intensamente entre os acessos. O número de sementes não é um bom indicativo para a relação com a massa do fruto, mas sim a massa de mil sementes. Alguns acessos possuem elevado teor de sólidos solúveis, mas, por outro lado, a grande maioria possui frutos com elevada acidez. Cambuci é uma excelente fonte de vitamina C. Os frutos dos acessos são de coloração verde, persistindo uma tonalidade opaca quando maduros.

ABSTRACT The cambuci fruit tree (Campomanesia phaea), belonging to the Myrtaceae family, is a native tree from the Atlantic Forests. The description of the fruits of cambuci fruit tree is important to support new plant breeding researches and trades exploitation, especially regarding the fruit processing. This study aimed to carry out the morphological and chemical characterization of the fruits of cambuci fruit tree. Fifty-eight accessions, from different places of Atlantic Forests and Serra do Mar, were collected and propagated by seed. A sample of each accession is maintained at Núcleo de Produção de Mudas de São Bento do Sapucaí (SP). Forty fruits of each accession were collected in May and submitted to the following analysis: longitudinal and transverse diameters, total fruit fresh mass, number and mass of the seeds, total soluble solids, % of citric acid, ratio, firmness, vitamin C and color. The similarity of fruits is highly variable between all accessions. The number of seeds is not a good indicator to the ratio with fruit mass; however, the mass of thousand seeds is a good indicator. Some accessions have high content of soluble solids, but most of the fruits showed high acidity. The cambuci fruit is an excellent source of vitamin C. The accession fruits have green color, persisting an opaque hue in ripe fruits.

Abstract The marolo (Annona crassiflora Mart.) and jerivá (Syagrus romanzoffiana Cham Glassm) fruits grow in the Cerrado biome, and have important sensory and nutritional characteristics. These fruits are eaten fresh or processed and embedded in ice cream, candy, juices, and liquors. However, their use is very limited and is localized exclusively to their native region. The aim of this study was to evaluate the use of these fruits in food consumer products to improve the nutritional patterns of consumers and extend knowledge thereof. To do this, different levels (0%, 5%, 10%, 15%, and 20%) of flour derived from the marolo and jerivá fruits were incorporated into food bars, which were then characterized in terms of their physical of the texture (TPA), porosity, color and sensorial properties. The food bars enriched with marolo and jerivá flours had an intense yellow color and increased hardness relative to the control bars; the porosity of the bars progressively decreased as the amount of flour added increased. The sensorial analysis in the snack bars developed added with the fruits flour no was influence by incorporation this component, showed good averages for the scores evaluated.
