O efeito da substituição de gordura vegetal hidrogenada e sacarose nas propriedades físicas, químicas e aceitabilidade de sorvete com mangaba foi avaliado. As formulações de sorvete foram testadas com os substitutos de gordura: Selecta Light, Litesse e Dairy-Lo e os substitutos de sacarose: Lactitol e Splenda. As formulações foram submetidas às análises físicas, químicas, microbiológicas e teste de aceitação. Verificou-se no teste sensorial uma maior aceitação das formulações elaboradas com Selecta Light (SL) e combinação de Litesse, Lactitol e Splenda (LLS). A maior redução do valor energético (50%) foi observada na formulação LLS. A substituição de gordura, açúcar ou ambos promoveu a redução da incorporação de ar e afetou a viscosidade dos sorvetes elaborados. A maior velocidade de derretimento ocorreu na formulação com a combinação Dairy-Lo, Lactitol e Sucralose. Todas as formulações tiveram bom nível de aceitação global e aparência. A substituição da gordura vegetal hidrogenada por substitutos de gordura promoveu uma redução da incorporação de ar e alterações da viscosidade dos sorvetes. Sorvete com mangaba, de reduzido valor energético, elaborado com Selecta Light teve o melhor desempenho quanto à viscosidade e incorporação de ar, em comparação ao controle, bom nível de aceitação e baixo teor de gordura.

The effect of replacing shortening and sugar on the physical and chemical properties of mangaba ice cream and its acceptability were evaluated. Ice cream formulations were tested with the following fat replacers: Selecta Light, Litesse, and Dairy Lo and the following sugar substitutes: Lactitol and Splenda. All formulations were subjected to physical, chemical, and microbiological analyses and evaluated by acceptability tests. In the sensory analysis, it was observed a larger acceptance of the formulations containing Selecta Light (SL) and the combination of Litesse, Lactiol, and Splenda (LLS). The largest reduction in total energetic value (50%) was observed in the formulation LLS. The use of fat and/or sugar substitutes caused a reduction in the air incorporation (overrun) and affected viscosity. The highest melting speed was observed in the formulation with Dairy-Lo, Lactitol, and Splenda. All formulations showed good levels of global acceptability and appearance. The substitution of shortening for fat replacers caused a reduction in air incorporation and changes in ice-cream viscosity. The low-fat mangaba ice-cream elaborated with Selecta Light was the best formulation in terms of viscosity and air incorporation when compared with the control. It also showed a good level of acceptability and low fat content.

O baru (Dipteryx alata Vog.), fruto típico do Cerrado, é utilizado na produção de barras de cereais, biscoitos, licores e outros pratos típicos da gastronomia regional goiana. O presente estudo objetivou avaliar as características físicas, químicas e a aceitabilidade de paçocas elaboradas com amêndoas de baru. A paçoca controle foi processada com amendoim e as paçocas testes com proporções de amendoim e amêndoa de baru de 75:25, 50:50 e 25:75, respectivamente. As paçocas elaboradas foram submetidas a análises sensorial, física e da composição centesimal. A amêndoa de baru torrada apresentou maior teor de fibras e cinzas, quando comparada ao amendoim torrado. O aumento do percentual de amêndoa de baru nas paçocas reduziu o teor de lipídios, o valor energético total e a aceitação global e elevou a concentração de fibras. A massa, diâmetro e espessura das paçocas não se alteraram, com a substituição parcial de amendoim por amêndoa de baru. Paçocas com 25% de amêndoa de baru tiveram o melhor desempenho, com relação à aceitação global, e apresentaram a menor densidade energética e maior concentração de fibra alimentar total, em comparação à paçoca tradicionalmente elaborada com amendoim.

Baru (Dipteryx alata Vog.), a typical fruit from the Brazilian Savannah, is used for producing cereal bars, cookies, and other typical dishes from the Goiás State (Brazil) gastronomy. This study aimed to evaluate the physical and chemical features, as well as acceptability, of paçoca (a typical Brazilian sweet made from peanuts) made from baru nuts. The control was processed by using only peanuts and the tests comprised proportions of peanut and baru nuts of 75:25, 50:50, and 25:75, respectively. The processed sweets were submitted to sensory, physical, and proximate analyses. The roasted baru nuts showed higher fiber and ash contents than the roasted peanut. The percent increase of baru nuts in the paçoca reduced its lipids content, total energetic value, and overall acceptance, and increased its fiber concentration. Its mass, diameter, and thickness were not affected with the partial substitution of peanuts by baru nuts. Paçocas made with 25% of baru nuts showed the best results for global acceptance and presented the lowest energetic density and the highest total dietary fiber concentration, when compared to the one traditionally made from peanuts.

A fração gérmen com pericarpo de milho (GPM), obtida por meio da degerminação deste cereal, possui alta densidade de nutrientes, contudo, ainda é subutilizada na alimentação humana. Portanto, este trabalho teve como objetivos desenvolver biscoitos tipo cookie, enriquecidos com GPM, avaliar a aceitabilidade e determinar sua composição centesimal. A fração GPM foi acrescentada às formulações, na proporção de 40% e 50%, em substituição à farinha de trigo e fécula de mandioca. Foram realizadas análises de composição centesimal da fração GPM e dos biscoitos. Todos os biscoitos foram aceitos, em relação à aceitação global, porém, apenas o biscoito com 40% de substituição de farinha de trigo e fécula de mandioca por GPM foi aceito, em relação à aparência. Na fração GPM, constataram-se altos teores de lipídios (18%) e de fibra alimentar total (29%), e conteúdo considerável de proteína (12%). Foram observadas diferenças significativas no teor de proteínas do biscoito com 50% de substituição de farinha de trigo e fécula de mandioca por GPM (7,76 g 100g-1, em relação ao controle e àquele com 40% de substituição (6,76 g 100g-1e 6,88 g 100g-1 respectivamente). A fração GPM aumentou o teor de fibra alimentar, não interferiu na concentração de lipídios e reduziu o valor energético dos biscoitos. O emprego da fração gérmen com pericarpo de milho, em produtos alimentícios, possibilita aumento do teor de fibra alimentar e redução do valor energético dos produtos.

The germ fraction with maize pericarp (GMP), obtained from the degermination of this cereal, presents a high nutrient density, however, it is underused as food. Therefore, the objective of this study was to develop cookies enriched with GMP, in order to evaluate their acceptability and determine their centesimal composition. The GMP fraction was added to the formulations, in the proportion of 40% and 50%, in replacement of wheat flour and cassava starch. Centesimal composition analyses were performed for both the GMP fraction and cookies. All cookies were accepted, in relation to global acceptance, however, only the cookie with 40% replacement of wheat flour and cassava starch by GMP was accepted, concerning appearance. The GMP fraction showed high levels of lipids (18%) and total dietary fiber (29%), and considerable protein content (12%). Significant differences were observed in the protein content of the cookie with 50% replacement of wheat flour and cassava starch by GMP (7.76 g 100g-1, in relation to the control and the cookie with 40% replacement (6.76 g 100g-1and 6.88 g 100g-1 respectively). The GMP fraction increased the dietary fiber content, did not change the lipids concentration, and reduced the energy value of cookies. The use of germ fraction with maize pericarp in food products allows the increase of their dietary fiber content and the decrease of their energy value.

A fração gérmen com pericarpo (farelo) é produzida no processamento do grão de milho, sendo usada para extração de óleo e alimentação animal. O estudo avaliou a qualidade nutricional e proteica desta fração em relação ao milho. Foi determinada a composição centesimal, conteúdo em minerais e perfil de aminoácidos da fração gérmen com pericarpo e do milho. Foi conduzido um experimento (4 semanas) com 36 ratos Wistar machos recém-desmamados, e foram formuladas três dietas contendo 10% de proteína (referência, gérmen com 15% de lipídios e caseína com 15% de lipídios), duas dietas com 6% de proteína (milho e caseína), e uma dieta aproteica. Foram constatados maiores teores de proteínas, lipídios, fibra alimentar (27,8 g.100g-1), cinzas, minerais (Fe e Zn - aproximadamente 5 mg. 100g-1) e lisina (57,2 mg.g-1 proteína) no gérmen em relação ao milho. O gérmen apresentou proteína de boa qualidade (Relative Protein Efficiency Ratio-RPER = 80%; Protein Digestibility-Corrected Amino Acid Score-PDCAAS = 86%), superior à do milho (RPER = 49%; PDCAAS = 60%). A fração gérmen com pericarpo é rica em fibra alimentar e é fonte de proteína de boa qualidade e de ferro e zinco, sendo indicado seu uso como matéria-prima nutritiva em produtos alimentícios para consumo humano.

The germ fraction with pericarp (bran) is generated in the industrial processing of corn kernel, and it is used for oil extraction and animal feed. This study evaluated the nutritional and protein quality of this fraction in relation to whole corn. The proximate composition, mineral contents, and amino acid profile of the germ fraction with pericarp and of whole corn were determined. A 4-week experiment was conducted using 36 weanling male Wistar rats, and three 10%-protein diets (reference, germ with 15% lipids and casein with 15% lipids), two 6%-protein diets (whole corn and casein), and a protein-free diet were prepared. The germ showed higher contents of proteins, lipids, dietary fiber (27.8 g.100 g-1), ash, minerals (Fe and Zn- approximately 5 mg.100 g-1), and lysine (57.2 mg.g-1 protein) than those of corn. The germ presented good quality protein (Relative Protein Efficiency Ratio-RPER = 80%; Protein Digestibility-Corrected Amino Acid Score-PDCAAS = 86%), higher than that of corn (RPER = 49%; PDCAAS = 60%). The corn germ fraction with pericarp is rich in dietary fiber, and it is a source of good quality protein as well as of iron and zinc, and its use as nutritive raw material is indicated in food products for human consumption.

Diversos frutos do cerrado com potencial econômico são consumidos in natura ou processados pela população local. Entretanto, existem poucos trabalhos científicos a respeito de suas características químicas e do valor nutritivo. O objetivo do presente trabalho foi avaliar a composição centesimal, o valor energético total e o conteúdo de cálcio, ferro e zinco em alguns frutos nativos do cerrado: macaúba, caju-do-cerrado, araticum, murici, gabiroba, cagaita; mangaba, puçá, araçá, chichá e pitomba. As análises de umidade, proteína, lipídios totais, fibra alimentar total e resíduo mineral fixo foram realizadas utilizando-se metodologias consagradas na literatura especializada. Cálcio, ferro e zinco foram quantificados analiticamente e o valor energético total dos frutos in natura foi estimado conforme os valores de conversão de Atwater. A concentração de proteínas, lipídios e carboidratos dos frutos foi relativamente baixa, com exceção do chichá e da macaúba. O teor de fibra alimentar variou de 1,04 a 11,14g 100g-1, sendo os maiores valores encontrados em araçá, chichá, macaúba e murici. Quanto aos minerais, araticum, chichá, macaúba e mangaba apresentaram valores consideráveis de cálcio, ferro e zinco. Os frutos do cerrado investigados podem ser fontes alternativas de nutrientes. Dessa forma, sugere-se sua utilização em cardápios regionais e cardápios da merenda escolar.

Various fruits of the savanna ecosystem with economic potential are consumed raw or processed by the natives. However, there are a few scientific studies on their chemical composition and nutritional values. The aim of this research was to evaluate proximate composition, caloric values, calcium, iron and zinc content from fruits found in the savanna ecosystem: macaúba; caju-do-cerrado; araticum; murici; gabiroba; cagaita; mangaba; puçá; araçá; chichá and pitomba. Moisture, protein, total fat, dietary fiber and ash were carried out by using methods traditionally used in the specific literature. Calcium, iron and zinc were analytically quantified and the total caloric value of raw fruits was estimated in accordance with Atwater´s conversion values. Protein, fat and carbohydrate concentration of fruits were relatively low, except for chichá and macaúba. The dietary fiber values ranged from 1.04 to 11.14g 100g-1, being the highest values for araçá, chichá, macaúba and murici. Calcium, iron and zinc were found in considerable concentration in araticum, chichá, macaúba and mangaba. The fruits of the savanna ecosystem investigated may be alternative sources of nutrients, thus attention will be turned to the possibility of their utilization in regional menu and snack for school children.
