Editorial

Dear Readers,

We have just finalized our participation as editors of the Journal of Food Science and Technology with this issue. These have been two years of hard labor, observing the task of disseminating scientific knowledge by publishing original papers that may contribute to the development of several areas of Science and Food Technology.

During this period (2011-2012) 1866 pages were published, which were divided into four issues per year. Furthermore, all the 140 papers submitted in the previous years were evaluated and nearly 100% obtained a scientific advice and were forwarded to the authors. In this period, 351 new manuscripts were submitted, 146 papers were accepted for publication and 204 were rejected. The increased team of editors has accelerated the manuscript evaluation process. In this issue (Volume 32, number 4), the average time between submission and acceptance was 7.6 months and the time between acceptance and publication was 5.9 months, totaling 13.5 months between submitting the manuscript and publishing the article, concerning only papers submitted in 2011 and 2012. This represents a reduction of more than 50% in the average time between submitting and publishing the articles as compared to the years 2009-2011 (23.6 months). It was a major advance that makes the Journal more attractive to the authors. However, many challenges lie ahead, especially as regards the improvement of the Journal quality indicators.

At this moment, we want to thank the associate editors, Dr. Celia Maria Landi Franco, Dr. Fabio Yamashita, Dr. Rafaella de Andrade Mattietto and Dr. Suely Pereira Freitas. Thank you for accepting this challenge and the dedication and seriousness with which you exercised this difficult task. As could be expected, we thank Mr. Marcos L. Alves, our publication manager for his helpful contribution, knowledge and patience. We want to thank the hundreds of reviewers for the invaluable collaboration. Without you, the policy of peer review, anonymous, which is essential for the publication of an article, would not be possible. We also thank the authors for the trust in our work and for choosing the Journal of Food Science and Technology as a vehicle for reporting the results of your research.
