Conversion of malonyl-beta-glycoside isoflavones into glycoside isoflavones in brazilian soybeans

As a major soybean producer, Brazil finds it important to characterize the isoflavone composition of those cultivars of greater agricultural relevance and to investigate the effect of the temperature of extraction on the isoflavone content. At 25ºC, the IAC Foscarin 31-1 cultivar exhibited a mean total concentration of isoflavones of 1,405mug/g, while IAC 15-1 showed about 3,008mug/g. Heating at 121ºC for 40 minutes, promoted a reduction of up to 17.6 times in the concentration of malonylglycoside isoflavones and an increase of approximately 2.6 times in the concentration of glycoside isoflavones.
