INDUSTRIAL PROCESSING OF CASSAVA AND SWEET POTATO STARCH - CASE STUDY

Starch industries have great interest by new starch raw material. This work compared the industrial manufacture yield of cassava and sweet potato starch in a Brazilian company. The results showed that the commercial starch of sweet potato was in quality specification of Brazilian legislation. The solid fibrous residue generated during the processing contained 79,94 % starch and similar composition of the cassava residue. The industrial yield was higher in cassava processing (25%) than sweet potato (18,3%). The starch retention in the solid waste indicated an inefficient extraction process for two raw materials.
