Respiration rate, ethylene production and shelf life of minimally processed cabbage (Brassica oleracea, var. capitata) under controlled atmosphere

The objective of this work was to evaluate the respiration rate and ethylene production of whole and minimally processed cabbage as well as the shelf life of minimally processed cabbage stored under controlled atmosphere. Then, two sequential experiments were done. In the first one, the respiration rate and ethylene production of whole and minimally processed cabbage were evaluated in a closed system, at 5 ºC and 10 ºC. In the second experiment, the shelf life of minimally processed cabbage under controlled atmosphere was analyzed. The product was submitted to a continuous flow of ternary gaseous mixtures, previously humidifieds, with concentrations ranging from 2% to 10% of O2 and from 3% to 10% of CO2, at the temperature of 5 ºC for 10 days. Atmospheric air was used was control. The respiration rates of whole and minimally processed cabbage, stored at 5 ºC, were significantly lower than that at 10 ºC, and for both temperatures, the minimally processed cabbage presented higher respiration rates than the whole cabbage. Ethylene production was not detected by the method of analysis which was used. Controlled atmosphere did not prolong the shelf life of minimally processed cabbage kept in the concentrations rangin from 2% to 10% of oxygen and 3% to 10% of carbon dioxide.
