Physico-chemical characterization of garlic bulbs submitted to vernalization periods and planting dates

ABSTRACT:

in order to evaluate the effects of different vernalization periods and planting dates on the physico-chemical characteristics of garlic bulbs of 'roxo pérola de caçador', an experiment was carried out in baraúna, rio grande do norte state, brazil, between may and october 2012. the experimental design was a randomized complete block design with three replications. treatments were arranged in a split-plot design with planting dates in the plots (may 22, june 5 and june 23) and vernalization periods in the split-plots (50, 55, 60, 65 and 70 days at 4±1°c, and 70% of relative humidity). we evaluated bulb diameter (db), soluble solids (ss), total soluble sugars, titratable acidity (at), ph, ss/at ratio, pungency, total solids and industrial index. according to the observed results, it is suggested to plant 'roxo pérola de caçador' garlic in baraúna region during the month of may, using the pre-plant vernalization during 62-64 days. this combination enabled the production of bulbs with better quality, considering the joint evaluation of soluble solids, total sugars and pungency attributes. the highest content of total soluble sugars, as well as db and ss were obtained when planting the bulbs in may; titratable acidity increased with time of vernalization in june plantations, when there was a reduction in ss/at; and in general, all treatments resulted in high total solids content and pungency with good prospects for industrialization.
