RIO DE JANEIRO AT THE TABLE: FOOD IN RESTAURANTS AND CONFECTIONERY STORES OF THE 19TH CENTURY (1854-1890)

Abstract

Brazil, throughout its history and in many ways, was a place of convergence of different ethnic relations which had an outstanding contribution in the formation of the country. Rio de Janeiro, its most important city in the 19th century, was also a medley of flavors, smells, cultures and all kinds of people. The capital of the Empire translated, in its food establishments, the complexity and variety of its meaning for the country. The objective of this study is to identify the products commercialized in the restaurants and confectionery stores of the Court in the 19th century - specifically between 1854 and 1890 - trying to point out aspects about influences and cultural references, as well as the adaptations and accommodations used in the food developed by both spaces in Rio de Janeiro.
