Nutritionists' work situation in catering corporations in Minas Gerais: technical work, supervision or management?

This study intended to analyze the work situation, the insertion in labor market and the class position of nutritionists working in catering corporations situated in Minas Gerais. Starting from a qualitative research, ambiguous and conflicting situations were noted, due to the role played in labor relations and the diverging ethical precepts of values of the organizations. The paper treats of the work organization and the nature of nutritionists' activities, highlighting the technical, administrative and managing contents, their interrelations and preponderance in the existing jobs. The labor conditions, the status attained by the nutritionists and the relations of supervising they are subjected to were dealt with. As a supervisor and manager, the nutritionists take on an unequivocal capitalist role, controlling other workers whilst they are object of the control policies of corporations. Simultaneously wage earner and representing the capital, they make up the new middle class.
