Basic Information

Considering the demands recommended by the editorial section of scientific publications in the nineties, the Food Technology Institute - ITAL, of the Secretariat of Agriculture and Supply of the State of São Paulo, Brazil, which possessed its own journal, the “Coletânea do ITAL”, created in 1965, was searching to fit into the new reality. Thus in 1998, the first fascicle of the journal Brazilian Journal of Food Technology was edited, open to collaborators external to the Institute.

The objective of the Brazilian Journal of Food Technology was to publish results of original research and technological information that contributed to the dissemination of new knowledge related to food production and assessment in the areas of food science, technology, engineering and nutrition (not clinical). Inedited authentic articles, scientific notes, review articles, case reports, critical reviews of books, comments on articles and rapid communications could be published in Portuguese, English and Spanish.

The Journal is an electronic publication in continuous flow (as from 2016) with free access, whose content can be accessed for free online at SciELO and: with no registration.

The short title of the periodical is Braz. J. Food Technol., which should be used in bibliographies, footnotes, captions and bibliographic references.
