SILVEIRA, Vicente Celestino Pires; VIANA, João Garibaldi Almeida and OLIVEIRA, Carolina Balbée de. Empirical model to estimate beef carcass price paid by the consumer. Cienc. Rural [online]. 2008, vol.38, n.1, pp. 270-272. ISSN 0103-8478. http://dx.doi.org/10.1590/S0103-84782008000100047.
The aim of this study was to obtain a model that makes it easier to estimate the price paid per kilogram of carcass at consumer level. Thus, with the collected monthly data of meat cut prices in four supermarkets in the city of Santa Maria, during the year of 2005, an empirical model was made to estimate the price paid per kilogram of carcass. The model generated allows the estimation of prices paid per kilogram of carcass at consumer level for two cuts (Tail of Rump and Topside Cap On). Since the consumer determines the final value of the chain, it is possible to estimate the percentage that each component holds, which facilitates negotiation among these components.
