Abstract

KLUGE, R.A  and  MINAMI, K. EFEITO DE ÉSTERES DE SACAROSE NO ARMAZENAMENTO DE TOMATES `SANTA CLARA'. Sci. agric. [online]. 1997, vol.54, n.1-2, pp. 39-44. ISSN 0103-9016.  http://dx.doi.org/10.1590/S0103-90161997000100006.

Tomatoes, cultivar Santa Clara, were picked on 10/10/95 and treated with Semperfresh (sucrose esters) at concentrations of 0; 0.5; 1.0; 1.5 and 2,0% (immersion for 1 minute). The fruits were stored for 15 days at 25oC and 70% RH. Fruits treated with Semperfresh presented less colour development and higher firmness than no treated fruits. No effects on weigth loss and soluble solids were observed. The best result was observed with the highest Semperfresh concentration (2%).

Keywords : storage; firmness; sucrose esters; tomatoes.
