The aim of this work was to evaluate the sensory behavior of five cassava flour samples stored along of hundred and eighty days. The flours consisted of five types being one of cassava flour it evaporates wrapped in low density polyethylene bags, capacity 1.000g. four of seasoned cassava flour, obtained starting from the first, wrapped in pigmented polypropylene bags, capacity 500g, having been used as secondary packing low density polyethylene bags, capacity, 10kg. Analysis of water activity (aw) was accomplished soon after the processing and during the storage period, with intervals of thirty days. The sensory evaluation the samples resulted in acceptance above 5,5 points, above of the intermediate value of the hedonic scale used. The water activity increased with the temperature and with the time of storage, however, with inferior values to 0,6.
