APROVEITAMENTO RACIONAL DE PESCADO DE ÁGUA DOCE DA AMAZÔNIA. I. AVALIAÇÃO DO FRESCOR DOS JARAQUIS (SEMAPROCHILODUS TAENIURUS VALLENCIENNES, 1811 E S. INSIGNIS SCHOMBURGK, 1841)

Storage life on ice (0°) was investigated for 339 samples of jaraqui Semaprochilodus taenlurue (Jaraqui escama fina) and 361 S. Inslgnis (jaraqui escama grossa). The sampie examined were divided Into 17 lote from which the following data was taken: morphometry measurements and weight and yield of diferent body sections. Subjetive evaluations were recorded for gill odor and for externai and internai appearance of freshness. The subjective scores were given by a team of at least five trained panelist. Twenty-five points were allocated for freshcaught fish and eight for non consumable fish. A nutritional composition analysis (humidity, protein, fat and ash) was performed on all lots. Quality determinates such as pH, free fatty acid (FFA), rancidity by means of the thiobarbituric acid (TBA) method, total volatile bases (TYB) and trimethylamine (TMA), were also carried out. The average ice storage life was 19.5 days for S. taenlurus and 17.5 days for 5. insignis.
