Bamboo starch was hydrolized under different saccharification conditions using hydrochloric acid at several concentrations (0.5;1.5; 2.5; 5.0 and 10.0%) and reaction time (30; 60 and 90 min). The results showed that bamboo starch was completely hydrolized by hydrochloric acid solution (2.5 %) after 60 min of reaction. The aldehydic sugars obtained, were determined by a volumetric method based on sugar oxidation by a KI/I2 solution and tritation of the I2 excess with a solution of Na2S2O3. The method is rapid, easy, precise, and can be used routinely for determination of aldehydic sugars (glucose) after saccharification.
