Analytical characteristics of Merlot wines from the Serra Gaúcha region

The Merlot grapevine is a variety originated from the Bordeaux region, France, which is one of the varieties responsible for the Saint-Émilion and Pomerol high quality wines. In the Serra Gaúcha, Brazil, it is the second cultivated vinifera grapevine. In 2007, its production was of 11,399t representing 31% of the total vinifera grapes processed. For this reason, the objective of this work was to evaluate the physicochemical composition of the Merlot wines produced in the Serra Gaúcha looking for its varietal identity, regional characterization and a database formation. Thirty four wines, from the 2000 to 2003 vintages, produced by 30 wineries were analyzed in the laboratories of Embrapa Grape and Wine, located in Bento Gonçalves, RS. Determination of the classical variables was performed using physicochemical methods; volatile compounds, by gas chromatography; and minerals, by atomic absorption spectrophotometry. Main results showed that Merlot wines presented parameters that are in accordance with Brazilian legislation. Hue values were high and those of DO 520 and DO 620 were low, variables which influence wine visual aspects. High concentrations of ethyl acetate and 1-propanol, both volatile compounds which have influence on the sensory wine characteristics, and K, that interferes on the wine acidity and conservation, were observed too. The methanol concentration was also high.
