The objective of this research was to evaluate the degradation/persistence of the pyrethroid insecticide deltamethrin in wheat grains and their processed products: bran, white flour, whole meal flour and bread. The grains were treated to reach the theoretical concentration of 0.35 mg kg-1 of the insecticide. Samples were taken at zero, 15, 30, 60 and 90 days after application. A higher pyrethroid concentration was observed in wheat bran and a lower accumulation in flour; insecticide loss was detected after bread baking.
